New to gluten free also. I am scared of most things. I make my own salad dressings. I also make my own seasoning mixes by using gluten free single spices. I do not ingest anything that I do not know is gluten free. I've only been out to restaurants a couple of times since going gluten free and I question the servers like crazy. From everything I read, you need to have 4-7 samples from your small intestine. I am in a similair situation. My PCP said I had either Celiac or Ulcerative Colitis and sent me to the GI for testing for both of these. The GI did not do any blood tests but opted to do a colonoscopy and EGD. I just received my results back from my endoscopy and colonoscopy. Everything was negative. When I asked how many biopsies the Dr took, the receptionist said 7 (but only 1 in the small intestine).
