Yeah, I've seen ground beef that has wheat added to it. (The stuff wrapped up at the butcher's counter... freaked me out! They do have to label it, but I wouldn't have otherwise thought I'd have to look!) I like Spice Hunter's Fajita Seasoning. Tasty! -
I find it useful to guage how well a person knows the board - and that's mostly the only thing I use it for. (Of course, a long-time lurker may pop up as a newbie if he/she starts posting, but have been around the board for months, so it's not always even useful for that!) You'll shake that automatically generated label in no time. ;-) :-D

I can't remember the site, but there's a very basic elimination diet that eliminates all but about a dozen foods - I think you can have lamb and sweet potatoes?. It's HARD, and I had to modify it a bit, but it's a place to start. At the very least, any elimination diet you try should eliminate ALL of the eight common food allergens. -

Yep - malabsorption can wreak havoc on enamel formation. I'm not quite as sure about the cavities; some of that is just genetic, regardless of your dental hygiene. -

I WAY prefer honey over sugar. (In a lot of recipes, btw, you can pretty much just half the sugar - yeast breads always excluded, and varies by taste, of course.) I also like using agave, but it's more expensive. -

While the chance of a first degree relative of hers (say, her child) having celiac is 1 in 22 (according to Dr. Fasano's study last year), if she keeps her blood sugar in check and maintains a healthy gluten-free diet, she, and any potential child, should be fine. Of course, she may be considered in the "high-risk" category, and need closer physician monitoring... -

Did they do a total IgA test? Many celiacs are IgA deficient, so - even if you're celiac - the IgA gluten antibodies will show low, because you're low in general in that antibody category. -

I've heard just enough about contamination from them - though as you can see, not everyone has that problem - that I don't eat them. I stick with Lundberg Farms. -

6-7 days for me, with day 2-4 being the worst. I get awfully crabby as well. Hopefully, it'll pass soon for you. -

It's a sliding slope. When does someone losing their hair become bald? Can you pinpoint a date? Same thing here. It might not be long enough, it might be. My results were inconclusive after two weeks gluten-free, and that might have been why, it might not have. Problem is, you can never be sure. -

I would not rely on just running hot water over things - they need a good washing, be it in a dishwasher, or with a sponge. You don't have to use a pan/cup/sinkful of water, you can just add a bit of soap to your own sponge for cleaning. Well washed glasses should be just fine. Just make sure they're really clean! :-) I wouldn't use wax paper - get... -

yeah, the throat closing sounds like a true allergy (which celiac disease is not - it's an intolerance). please do see your doctor about getting testing for this allergy - if you're throat is closing, you may want to carry an epi-pen with you in case this allergy gets worse. -
I went off the pill about four years ago, after having been on it for three. For me, it helped a lot of non-specific symptoms, and the vulvar vestibulitis that I have. My cycles have been more consistent, but the cramps are as bad as they were before taking the pill again. (I use FAM these days, along with barrier methods.)

Sometimes, there isn't a really good explanation. We could try saying "oh, a virus finally triggered it" or "the damage may have been going on and it finally caught up" or any of a number of other things, but the fact is, you may never know why you were diagnosed so suddenly. The good news is that it won't stop you from doing the gluten-free diet! :-) -
risen bread falling usually means too much liquid in the mix. perhaps try lowering it a bit at a time and see where it stops falling.

electrodermal testing... nope, not going to do jack for measuring intolerance to grains. there's no evidence to suggest that the genetic mutation that produces the molecules that react to gluten, or the antibodies produced in that reaction, in any way change the electrical properties of your skin. so electrodermal testing won't tell you anything about it... -
I put a smoothie in my suggestion post! I have them a few times a week, but I never use a set recipe, so didn't post one of those. Smoothies are great because they're convenient, filling, and very refreshing. I can take one to work with me and have it while I'm checking email, attending meetings, or gossiping about the latest reorg. :-) Good thing it...

exactly what Kaiti said. the studies on oats have a small, but fairly consistent number of folks who drop out or see damage on the diagnostic tests when eating oats - even ones grown specifically in a lab to be uncontaminated. -

In an instance where I can't check with a restaurant ahead of time, I eat before hand, and just have water. Not the same, but way safer.

Morally, I'm a utiliarian egoist, so I would think it would be immoral for you to NOT go gluten-free if you really felt that you should - regardless of have celiac disease or not - and that it wouldn't hurt anyone around you. :-) We all have to make the best decision for ourselves in our lives - for our bodies, our minds. Yes, when you go gluten-free you really will feel better (though it may not be overnight). Yes, you should stop hurting. Yes, your bloated stomach should settle down. And you can be malnourished at normal weight if you're not absorbing enough of ALL the nutrients your body needs. I know it can seem scary at first - and I can't really imagine how scary... -
Ditto what Kati said - the risk of contamination is just way way too high there. They slide that bread down in front of all the ingredients, constantly touching it, after they've cut it. I can just see all the crumbs on their hands/gloves!
