  1. Good catch! I just checked the package and aspartame is definitely listed. I've read negative things about it so am inclined to avoid it. Thanks for your post. I really appreciate it.
  2. The previous post mentioned fruit. That reminded me of a good example of what I run into even when people "get it". Where I work, surprise birthday parties and cake are the norm. We are a tight group and have worked together forever. After I went gluten-free, one person in particular always felt very bad that I had to be skipped every year. She was...
  3. At the risk of seeming ungrateful, I've been glutened too many times by kind, well-meaning, concerned family and friends. I avoid eating food prepared by others. It's a variation of the "just say no" theme. Whenever possible, I prepare my own food.
  4. When I make a mistake, I use Metamucil as soon as possible. I try to stay away from Immodium and Pepto, etc. unless absolutely necessary. I seem to recover faster by getting things through my system and out as soon as possible. Lots of water helps, too.
  5. Biopsy and positive response to a gluten-free diet when I was a baby. Then at about age 4, the doctors thought I had outgrown it so they put me back on a regular diet. For the next 35 years, no one ever told me I had been DX'd with celiac disease. In my 40's, I finally figured out what celiac disease was and started the diet on my own. Don't know if...
  6. As far as I know, I am the only one with celiac disease. That includes distant relatives as well. Now that I think about it, maybe I was adopted.
  7. Yes, but only at dinner time.
  8. I had similar problems when I first went gluten-free. At the very beginning, things got really bad. Then, they leveled off. I got into a mode where I'd be fine for awhile and then would unexpectedly get sick. It was so unpredictable that I never left the house without some Immodium caplets in my pocket. If I was going to be in a situation where I could...
  9. I was raised Catholic. Although I am non-practicing now and my awareness of current Church teachings are no doubt out-of-date, I nonetheless have still thought that it was fairly obvious why there should be such an "unbending" attitude by Church leaders. I have always hesitated to comment on this because I did not want to offend anyone. However, considering...
  10. Rusia - I would hesitate to recommend SNUBA to someone with asthma. Based on 25+ years of dive experience and certification up to ass't instructor, I would think SNUBA has the same issues for you as SCUBA. I went to the www.snuba.com site and read up on it. According to the site, SNUBA uses a 20 ft. air hose to connect the SNUBA diver to a SCUBA tank...
  11. 1) Herr's Low Salt Potato Chips 2) Thai Kitchen Roasted Garlic Rice Bowls 3) Mt. Olive Bread and Butter Pickles 4) PF Chang's Lettuce Wrap-ups 5) Ener-G Wheat-free Crackers (w/ Land Of Lakes Cheese slice and Acme Store Brand Olives)
  12. For people in the Phila area, there is also a PF Chang's near Routes 1 and 202. I'm down in Wilmington and that is the closest one to me. Going north on 202, turn right on Route 1 and go about 3/4 mile. PF Changs is in the shopping area on the left.
  13. I eat Arrowhead Mills Puffed Millet Cereal. Throw in raisins or some other fruit and it is fairly tasty. It is also inexpensive compared to other cold cereals.
  14. I usually know within 3-5 minutes that I have consumed gluten. Metamucil has proven very effective for me. Taken immediately, it goes a long way to limit the reaction. When I travel, I always take some pre-measured packets, just in case. Other than that, I generally opt for high-fiber, bland, easily digested foods. They seem to clean things out after...
  15. In regard to testing, the following link might be an interesting read, even to those who are not beer drinkers. Open Original Shared Link The interesting part mentions that wheat, rye and barley have their own particular type of gluten: gliadin (wheat), hordein (barley) and secalin (rye). The web page asserts that current gluten testing tests for...
  16. I've given up on products that have the disclaimer. Now, whenever I see it, I translate it to say "May contain gluten and probably will from time to time". My last gluten accident was from bionaturae pasta. Their disclaimer says: This product is manufactured in a facility that produces other products which contain wheat. Therefore we test for the...
  17. Cozumel is actually the destination I had in mind. It is relatively close and I've always heard great descriptions of the diving. You really picked a top spot to get your certification. I got mine in the cold water of a Pa. quarry. Based on what I've seen posted on scubadiving.com, Cozumel is working hard to recover from the recent hurricanes. Chuck
  18. I have had celiac disease for 54 yrs now and can attest that in my case at least celiac disease never goes away. I was DX'd as a baby shortly after going on solid food. At that time, doctors thought it was temporary and you would overgrow it. After a couple years when symptoms became less pronounced, the doctors labelled me cured and put me back on an...
  19. I as DX'd as a baby at Johns Hopkins. At that time, they thought the condition was temporary. The DX was "celiac baby". At about age 3 or 4, I was put back on an unrestricted diet. My parents did not want me to be a picky eater and use celiac disease as an excuse not to eat things I did not like, so they never told me. Symptoms started coming back...
  20. Helen - Mac and Cheese is one thing that I used to cook for myself a lot but it is one thing I have never tried to duplicate gluten-free. When I used to cook it before going gluten-free, I started by making a white sauce with wheat flour and then adding cheese. Is it possible to make a gluten-free white sauce? If so, I would be eternally in debt to...
  21. I would just second the many good suggestions already made. If you have a microwave at work, then leftovers make a good, easy lunch. I often cook dinner with the idea that half of what I cook will be lunch the next day. After dinner, leftovers go into a microwavable container which I take to work the next day. I make my own soups and they make good...
  22. If there are any divers on this forum, I'd be interested in hearing about dive destinations and whether they were or were not celiac-friendly. I'm particularly interested in hotel experiences. I normally use liveaboards but some destinations I want to visit have land-based operations only. Any info would be appreciated. Thanks, Chuck
  23. There are a handful of celiacs down here in Delaware. Due to the low numbers, keeping a group going has always been problematic. Currently, there has been a group meeting on the first Sunday of the month at the Christiana Hospital in Stanton, DE (off I-95 between Wilmington and Newark and close the Christiana Mall). There is a Yahoo group associated with...
  24. Rob - I am 54 YO and 6' 3". Always had an ectomorph body type. Never could bulk up but that has never been a problem. Chuck
