  1. I've been following a gluten-free diet for about 10 years now. Gluten accidents are very rare. However, when they occur, they are very consistent in terms of severity and duration of symptoms. None of this has improved over time. My body has probably healed as much of the previous celiac-related damage as is ever going to be healed.

  7. I eat the Ener-G Tapioca bread and use it for anything from toast in the morning to french toast. I have found that it is best when toasted. Otherwise, it will fall apart.   15. I'm from the era of banana babies but the best I can remember I escaped that craziness (although I do eat one a day). My DX was at Johns-Hopkins and they did consider me cured by age 4. The articles are interesting. Thanks for making them available.
  16. I think I just experienced the truth of this first-hand. I started adding things back in to my diet and just had a major relapse (soy, not gluten). The ingredient lists on products apparently are of no use. Either that or it's the veggie oils you mentioned. I'll eliminate those and see how I fare. Thanks!
  17. I tried going vegetarian and went the soy route for protein. Tofu, soy milk, soy burgers. The whole nine yards. Unfortunately, the result has been an acute soy allergy.   23. This is a good time for birds in Delaware. I spent most of the day in Bombay Hook NWR. It was a bit windy but there were still lots of birds. There are lots of good birding locations up and down the Delaware coast.

  25. I use them to make small pizzas. The result is similar to the thin crust variety. My favorite ingredients are: chopped onions, chopped red pepper, olive pieces, canned mushrooms, chopped Healthy Choice Ham, hand grated Sorrento Mozzarella cheese, oregano. No tomato sauce or oil.
