ARCHIVED Df Sub For Consended Or Evaporated Milk?
lonewolf replied to cruelshoes's topic in Gluten-Free Recipes & Cooking Tips
The only thing I can think of is full fat coconut milk. Thai Kitchen brand is good. You could add some sugar for sweetened condensed milk. It would depend on what type of recipe you need it for. It actually loses most of its coconut taste when cooked, but I don't know if it would stay thick enough. I've been contemplating trying it out in fudge. -
ARCHIVED Negative Blood Work?
lonewolf replied to holichka's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
All 4 of my kids were tested and they all had negative blood work. Two of them had symptoms and went gluten-free anyway. They both have done well and are permanently off gluten. Luckily, their pediatrician is supportive of "the plate test" as he calls it (dietary response) and agrees that gluten-free is the best thing for them. -

Welcome Ratroot! Hope you stick around. Hi everyone. I've been out of my mind busy and haven't even kept track of what I've eaten. I haven't been really bad, but not great either. I AM going to get back on track! At least I haven't been gaining a bunch of weight. -
I've had similar sounding acne looking bumps. I was told that I had excema in addition to psoriasis, but the dermatologist last week told me that it was a different form of psoriasis - not excema. It's all so frustrating with skin conditions! I hope you figure something out. You might want to try a dermatologist.

ARCHIVED Answers For Celiac Baking Newbies
lonewolf replied to imsohungry's topic in Gluten-Free Recipes & Cooking Tips
Yes, it's true. If you over mix something it ruins the texture and makes baked goods kind of rubbery. -
Are you (and your allergist) SURE it's excema and not psoriasis? Psoriasis is tough to clear up. I'm actually on antibiotics right now because I couldn't eliminate anything else from my diet and my psoriasis was getting worse, so I broke down and went to the dermatologist. Found out I have a low level strep infection and after a few days on the antibiotics...

ARCHIVED Enterolab Results
lonewolf replied to jitters's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
If you've been gluten free on and off for 5 years it's going to skew the results. I wouldn't be mad. Enterolab says that the test is accurate if you've been off gluten for up to a year. You probably just don't have enough antibodies, although you are at the high end of "normal". -

I have found that "Glutinous Rice Flour" and "Sweet Rice Flour" are different. The sweet rice flour is great for thickening gravies and sauces, but the glutinous flour becomes thick and yucky. It's usually used for making special Asian dishes that kind of resemble noodles. -

I didn't do so well yesterday . It's been a hard few days. A teacher at my school just found out she has cancer and it's so far advanced that they probably won't even try to treat it. We are all in shock and very sad. Another teacher's mom has cancer and is in the hospital not doing well. And my mom finally got home from her cruise and I called her... -

ARCHIVED Psoriatic Arthritis Anyone?
lonewolf replied to rock on's topic in Parents, Friends and Loved Ones of Celiacs
I technically don't have Celiac either. According to my gene test I don't have the right genes. But gluten-free has changed my life for the better. I hope your husband has success! -
ARCHIVED Psoriatic Arthritis Anyone?
lonewolf replied to rock on's topic in Parents, Friends and Loved Ones of Celiacs
I had horrible psoriatic arthritis for a while. I have some permanent damage done to my joints, especially in my toes, but I am completely recovered other than that. I went gluten-free, dairy free, egg free and soy free and ate mostly rice, fish, vegetables (no nightshades) and nuts for the first year that I discovered that diet was related. I don't... -

Okay, once again trying to get back on track. I got in a good workout yesterday, but blew it by baking cookies and eating a few too many. Now that the stress of school starting, my aunt dying and taking a trip to NC and all is over, I should be able to settle down into a routine with eating and working out. I'll edit this later to add what I've eaten... -

lonewolf replied to lonewolf's topic in Related Issues & Disorders
I just had to laugh at this. I say "go south" to mean anything from something going rotten in the refrigerator to someone dying. My cousin in N. Carolina had never heard the expression before and when I said it (referring to something in her fridge) she burst out laughing and wasn't sure if she should be offended or not. She is very aware of being from... -
ARCHIVED To Start School Or Not To Start School
lonewolf replied to JennyC's topic in Parents, Friends and Loved Ones of Celiacs
If in doubt, hold him out. I have a son with a June birthday and he is the oldest in his class, but definitely where he should be. I have a daughter with a September birthday and she seemed SO ready to start kindergarten the year she turned 5. She could read and knew everything she needed. But her birthday was past the cut-off and they wouldn't let her... -
I was out of state attending my aunt's funeral earlier this week and got horribly sick the day after the funeral. I usually don't eat pork, but the ham, sliced tomatoes and carrot sticks were the only things I thought were safe at the dinner after the funeral. I was actually fine that day - I had a small piece that was an "inside" piece. The next day we...

Hi everyone. Thanks to all of you who posted kind notes about my aunt's passing. I actually had a good time in N. Carolina and the funeral was very nice. I got to see all the relatives and relatives of relatives. My cousin and I stayed up late talking and laughing and I was glad that I could be there for her. My uncle was also really happy that I came... -

Hi all. My aunt died this morning, so I'm heading to N. Carolina tomorrow. I'm madly trying to get ready for the party, so this will be short. It seems like something always happens during the first two weeks of school for me. Luckily, I job-share and I only have to miss one full day of work. My teaching partner will cover for me and I'll "pay her back... -

I did horrible today. I'm hormonal, sad (my aunt is dying of cancer - not expected to make it through the weekend) and stressed with it being the first week of school and trying to get everything ready for my daughter's big 16th birthday party tomorrow night. I had the day off and spent it baking and preparing. B - 2 chicken sausages S - several taste... -
ARCHIVED Need To Recreate Pamela's Pancake And Baking Mix
lonewolf replied to cruelshoes's topic in Gluten-Free Recipes & Cooking Tips
Yep, I'm from Federal Way. I couldn't remember if you were the other one or not. I'll have to look at the stores in Renton. Don't get up that way too often, but I would make a special trip to stock up. Marlenes will order a 25 lb sack of flour, but it's still about $1.17/lb. I have asked them repeatedly to please reorganize their bulk section and they... -
ARCHIVED Need To Recreate Pamela's Pancake And Baking Mix
lonewolf replied to cruelshoes's topic in Gluten-Free Recipes & Cooking Tips
Where do you shop? I can't get any of these flours that cheap (except tapioca) without doing a huge order from a buying club. I'm from WA state too. I just paid $1.39/lb for potato starch and about $1.65/lb for br. rice flour this morning. I can't buy from our HFS anymore because they put the bulk rice flour ($1.29) and other gluten-free flours right... -

ARCHIVED Other Double Dq3 People Out There?
lonewolf replied to JenKuz's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
It is nice to know that my son isn't the only one. I started to notice that on days my husband took the kids to the bakery before school for a special breakfast (big, gluteny scone) he was worse. That was really our first clue that it could be related. I guess I had just assumed that I was the only one in the family with food intolerance problems. Has...
