  1. Where in the South Sound area? I'm in Federal Way and would definitely like to see a GOOD gluten-free bakery in the area. I bake a lot myself, so would only go occasionally for treats for my kids when I was busy or for a fun trip out. I've thought of doing the same thing, but don't have any business sense whatsoever.
  2. Yay! So when are you going to open your gluten-free bakery? I live in the Seattle area and I'd drive up to support you! Suggestion - if you have a good carrot cake or apple cake recipe, they are also delicious and good "early success" recipes. Just follow your regular recipe with the gluten-free flour.

  4. I would really like some type of whipped topping for a couple of desserts I'm planning to make over the holidays. I can't find anything in the stores that is dairy-free and soy-free. I've tried the cashew thing, but thought it was gross. Does anyone have any ideas? Has anyone tried whipping coconut milk?

  7. If you want to go slowly, start with a chocolate bar that has soy lecithin in it. If no reaction, try something with soybean oil in it - like a salad dressing.   11. I like the basic recipe of 3 C Brown Rice flour, 1 C Potato Starch, 1/2 C Tapioca Starch and 2 tsp. Xanthan Gum. Sift together 3 times to get the xanthan gum evenly distributed.   18. I've made ghee before and think I bought it once. I bake as much as possible with Spectrum Shortening and just cheat occasionally with the butter. Is the ghee cheaper in Asian markets?
  19. I like "Mochiko" brand of sweet rice flour. However, I prefer brown rice flour in baking because it seems to work better and doesn't turn out gummy in most recipes. I use the sweet rice flour to thicken gravies and sauces

  24. Going gluten-free resolved pretty much all my health issues. I was SURE it was Celiac Disease. My GP was sure too and wanted to run the gene test to "confirm", since I wasn't about to eat gluten again to be tested. I came back negative for DQ2 and DQ8 and wasn't told what my genes were. I was really confused, because I'd had such a dramatic recovery....
