  1. I had the same thing several years ago. All the symptoms of RA, but no rheumatoid factor. I have psoriasis, so I was diagnosed with Psoriatic Arthritis. I just have to chime in that being gluten-free might not be enough. I need to be dairy-free and soy-free too. If I eat much soy or dairy at all (cheese or butter, never would drink milk) my joints...
  2. My son went through this when he was 11. It is frustrating for them, especially during the first year. I would suggest that on days you can't bring her home you make the absolutely BEST lunch for her. Make some kind of sandwich or leftovers (like cold pizza) that the other kids will look at and say, "I want what she's having", really yummy treats like...
  3. We're a "mostly" gluten-free house too. Two of my kids and I are strictly gluten-free. My husband has his loaf of bread, and that's the only thing regularly in the house. He has his own toaster that can get crumby and I don't care. I allow the non gluten-free kids to have things like granola bars for lunches (to be eaten outside the house), but only if...

    ARCHIVED Stupid Doctor

Just want to echo the sentiments that this guy is a jerk. I have had some health struggles that I worry about my kids facing someday too, but I'm SO glad I had my kids. They are healthy, happy and terrific. Two of them happen to need to be gluten-free, but it in no way has harmed them or made their lives miserable. In fact, I think because we discovered...
  5. 1. Roast chicken and baked potatoes -Simply bake a whole chicken at 350 for 1-1/2 hours. You can season it with salt, garlic powder, rosemary or whatever herbs or spices sound good. Bake potatoes for the last hour along with it. Wrap the chicken up in foil, place in a foil lined box and wrap the potatoes in separate foil for easy transport....
  6. We posted at almost the same time - see my post above yours. If you bake a lot, you NEED to mix up your own flour. An asian or Indian market is the best place to get white rice, tapioca and potato starch. You might be able to find sorghum at an Indian market too. The xanthan gum is expensive, but you only use a little, so it lasts a long time. I order...
  7. You really don't have to buy $3 a pound flour to substitute cup for cup in your old recipes. I use the flour mix I posted above in Betty Crocker cookbook recipes. It only costs about $1/pound. If you look at the ingredients for some of the premade flours, they're made with rice, potato and tapioca flours, but they charge an arm and a leg. It really is...
  8. Whoops, double post.
  9. For cooking, when I need to thicken a sauce or just add a Tbs or 2 to a recipe, I use white rice flour. For baking I use a mixture of flours, mixed with xanthan gum. Here's my basic flour mix that I use for quickbreads and cookies. 3 C Br. Rice flour 1 C Potato starch 1/2 C Tapioca starch 2 to 2-1/2 tsp. Xanthan gum Sift together 3 times. Use...
  10. Your daughter sounds just like my son 2 years ago. He tested negative on all the tests, but we took him off gluten anyway. He's a different kid now. Not all problems with gluten are Celiac Disease, so Fiona could have non-Celiac gluten intolerance, which can be just as serious, but won't show up on traditional tests. You could try Enterolab or just go...
  11. Wow! That was great! And I saw your comment directing people towards scientific studies. Still can't figure out why some people are so against even trying this.
  12. I'm sitting here feeling really frustrated. About 12 years ago I started getting bad joint pain and about 11-1/2 years ago was diagnosed with psoriatic arthritis. I got to the point where I was almost crippled. After doing some testing (ELISA) with a naturopath, I eliminated wheat/gluten, dairy, soy, eggs, red meat, nightshades and a few other things....
  13. I was really hungry for a chicken and rice casserole that calls for a can of cream of chicken soup. I found a really good recipe online (Wikipedia cooks) and tweaked it a bit. The casserole turned out great and the soup was heavenly on its own. Well, at least it was to me. I haven't had anything like it for over 11 years. Cream of Chicken Soup
  14. I'm having the same problem here - both at home and at work, starting on Friday.
  15. Way to go Kat! Yes, this is an interesting thread. I guess this means that most of us aren't being disciplined with our diet. I've been working out really well, 4-5 times a week with lots of cardio, but just can't get it together with the eating. Not that I'm really bad, but just too much food. I'm always gluten-free, but I'm eating too many treats...
  16. I make yummy scones that taste like the ones at the fair. I'm at work and don't have my recipe here, but I use a basic gluten-free flour that only used 3 flours instead of 30. And Bob's Redmill flour is gross. Maybe you could try this flour with your scone recipe. 3 C Br. Rice Flour (Or 1-1/2 C Br. Rice and 1-1/2 C Sorghum) 1 C Potato Starch 1/...
  17. Give yourself a bit of time to grieve, and then get right into gluten-free baking. I used to love to bake yeast breads and was sad for years that I couldn't bake and eat all the different kinds of bread anymore. I still haven't mastered yeast breads without a mix, but I bake cookies, cakes, muffins, pancakes, waffles, quickbreads and other desserts as well...
  18. Wow, this is interesting. It sounds like you've possibly had Nephrotic Syndrome. Did you ever have high cholesterol, high blood pressure, pitting edema or elevated liver enzymes? I discovered on my own that going fanatically gluten-free "cured" me of the kidney problems I had. There is another poster her - Fajitas - who also has Nephrotic Syndrome and...
  19. Long before the current problem with Rice Dream's labeling, they stated that most of their frozen desserts were gluten-free - that the process used to make them was different. I don't react to frozen Rice Dream and never have. I haven't been to their website lately, but they used to have a chart that showed which of their products was gluten-free. The...
  20. The manager at our local Outback told me the same thing. The last time I went in there I had "chips" too - just with salt - and had no problems.
  21. I'm still excited and have to give an update. The other mom just called me to tell me that her son has shown signs of remission now for 6 straight days and the doctor told them on Friday that they could start slowly tapering him off his prednisone. She is totally thrilled. Another "coincidence" happened to her yesterday. She ran into an old friend that...
  22. Several of the frozen Rice Dream flavors are gluten-free. Obviously, stay away from "Cookies and Dream" and then also the "Carob Mint Chip". I think there's one other one that's definitely a "no-no", but the other are fine.
  23. I just prayed for Noah and his family. I hope he recovers quickly.
  24. Ooh, that sounds good. Next time we'll have to try that. The cake is long gone now, the boys finished it for breakfast .
  25. Several years ago I was diagnosed with a kidney disease (Minimal Change Nephrotic Syndrome) and discovered, through a long process, that I could get it into remission by going fanatically gluten-free. No nasty medications or anything. "Coincidentally", a little boy on my 10 year old son's soccer team has the same kidney disease. He's been on prednisone...
