You hug them, cry with them and say, "I'm so sorry". I don't think that anything could be very comforting at this time. I know that they will appreciate your sympathy and tears. I'm so very sorry for them - I can't imagine losing one of my children and at this time of year too... I have tears for them. -

I would try Ener-G Foods Light Tapioca Bread. I've used it in other recipes and I think it would stand up just fine in a strata. -
I'm cooking pancakes over the fire. I love making breakfast while we're camping! I'm glad your lefse turned out. It is a LOT of work. Even if it isn't exactly the same as the gluteny version it's still yummy.

That sounds really cute! But why did you give up your tradition of making a gingerbread house? We do it gluten-free and dairy-free every year and it's great. There's not really much that needs to be done to modify the recipe. I'll try to find a picture of last year's and put it in my avatar. -

I only buy natural peanut butter and they always turn out well. I just made them yesterday for a church Christmas party and put Hershey's kisses on top to make peanut blossoms. (All but 2 on the tray were eaten and there were only 3 of us who needed to eat the gluten-free cookies.)

I've never had luck with plain rice flour in a recipe (well, maybe there are one or two). Have you tried a blend of flours? I have the best results if I sift my flours together with the xanthan gum 3 times before mixing up the recipe. We use Health Valley's Corn and Rice Crunch'ems for "chex" mix. Can't tell the difference. Instead of butter, I use oil - olive, safflower, canola or grapeseed. It works just fine in the recipe. -

I see gluten intolerance everywhere too. Something that is frustrating for me though is that all gluten intolerance isn't necessarily Celiac Disease. So, besides Enterolab, there aren't tests for people who don't have Celiac, but should still avoid gluten.
