  1. Yum! Thanks for starting this thread! One of my favorite dinners is Curried Chicken with rice. We also like to do a Baked Potato bar, Lentil/Curry soup, Black Bean soup, Chicken and Rice soup, "Camper Stew", Chicken Stew, Chicken Ranchero (chicken simmered in enchilada sauce, served over rice with sour cream). My favorite dessert: Sharon's Coconut...
  2. I can't tolerate soy at all, except for soy lecithin. I avoided even it for several years, but then got information from the Food Allergy and Anaphylaxis Network that many people who are allergic to soy can tolerate the lecithin. I don't even try soybean oil, even though it is supposedly safe too. There's a lot of evidence/research that shows that soy...
  3. I am not a member of a support group, but am interested in starting one informally. We have a large health food store in the area (Federal Way, WA) that has a "Seminar room" and would probably be open to hosting meetings. I would love to get a group going just to get together to talk, share recipes, whine, etc., but don't have the time to do a big website...
  4. I'm glad they worked for you! I haven't tried sugar cookies yet, but I'm planning to sometime before Christmas. (Yikes, that should be like tomorrow!) Don't give up on the other types of cookies. I use the Bette Hagman flour recipe, with a little xanthan gum and make all my cookies that way. I don't like millet or bean flour either, but this really does...
  5. I had all 4 of my kids in this morning to be tested for celiac disease. The consulting nurse had called me several times, asking questions, basically sounding like she thought I was crazy. The nurse who got us started was pretty rude, even my kids commented on it and I started to get worried that I would be labeled a hypochondriac. And then the doctor...
  6. Thank you!!! Liz
  7. Hi all, I'm taking all 4 of my kids to the pediatrician tomorrow with a request that they all be tested for Celiac. I'm already getting the feeling that the clinic thinks I'm a little crazy. I rarely take my kids in for anything, my 14 year old hasn't seen any doctor for 2-1/2 years, my 12 year old not for a year and the younger ones only once or...
  8. Okay, so are they egg-free and soy-free too? I know it's too much to hope for, but... Liz
  9. I'd barely been sick a day in my life until I got Mono. After that I developed Psoriasis, digestive problems, and had my tonsils taken out a couple of years later. Several years later I was almost crippled with arthritis, found out I have an underactive thyroid and was diagnosed with food allergies. I have been relatively healthy (except for some kidney...
  10. I felt "normal" today. (Well, almost.) Breakfast: Apple with almond butter Lunch: Turkey sandwich on rice bread, Salt and Vinegar chips, Carrot sticks, Envirokids chocolate cereal bar, apple (wow, I must have been hungry!) Snack: "Think Organic" Cashew/Pecan bar A few more Salt and Vinegar chips Dinner: Middle Eastern style meat patties...
  11. I use 2 tsp. Ener-G Egg Replacer, sifted in with the flour, and 1 Tbs. ground flaxseed, mixed with 3 Tbs. water, mixed in with the butter and sugar. This seems to work for all my cookies that don't have to look completely white - like, I wouldn't try it for rolled sugar cookies. Liz
  12. I have great luck with the Tollhouse cookie recipe. I even leave eggs out and it works. (I do use a substitue.) I use the same flour mixture as above, but I always use brown rice flour and about 2 tsp. of xanthan gum for the cookies. If you can handle nuts, they're really yummy with about 1/3 C peanut butter or almond butter mixed in. My kids take these...
  13. Our little guy stayed with us for 2 weeks during the summer before we adopted him. It only took 4 months from the time he went home until we travelled to adopt him. Those programs are great - it would be almost impossible to adopt an older child successfully without doing it, at least in my opinion. We are having him tested for Celiac, along with our...
  14. This works great for our Russian Pelmini, which is a lot like ravioli. I make it several times a year and have served it to gluten-eating people and they liked it. You can add an egg and reduce the amount of water. This is posted in a couple of other places, sorry I don't know how to get a link. 1-1/4 C Brown Rice Flour 1/2 C Potato Starch 1/4 C...
  15. Hi "Agee", We all love pelmini. A Ukrainian friend gave me a special pelmini maker that has come in really handy. You might be able to find one at a Russian specialty store or maybe even a specialty kitchen shop. I'll try to explain it. It's about 16" in diameter and has lots of little hexagon shaped holes in it. You roll out the dough, lay it...
  16. As far as I know, Mexican Wedding Cakes are the same as Russian Tea Cakes. Light little balls rolled in powdered sugar? If so, I posted the recipe in two places here - look for threads about Christmas cookies. If you can't find it, I'll email you the recipe. (If it's the right one.) Liz
  17. How cool! I have an adopted son from Russia too! I haven't made Kutya, but we make Pelmini for lots of special occasions. No one even notices it's gluten-free. I figure that if I spend that much time making it, I'm going to eat it too! Sorry I can't help you with the Kutya - I'd try buckwheat or millet if I were you. Good luck! Liz
  18. Thanks Tiffany! This will keep me busy for a while! I'm new to all the research and Celiac lingo, but am wanting to learn more. I don't have the time to look all this up, so I appreciate you posting it. Liz
  19. Are you sure he's not reacting to soy? It is a very common allergan. I am horribly allergic to it and have much bigger reactions to it than to gluten. It can be very hard to digest. It's also very high in phytoestrogens, which may be good for women who need to balance their hormones, but not the best choice for little boys. There is some interesting...
  20. Thanks JerseyAngel! I guess we all have different tastes in food. When I was in college my roomate and I always had toast for breakfast. I got the grainy whole wheat with crunchy peanut butter and she had white bread with creamy PB. I think that Rice and Shine vs. Cream of Rice is about the same.
  21. My cousin and I are both interested in a group in the Tacoma/Federal Way area. Please let us know if it happens.
  22. I like Arrowhead Mills "Rice and Shine" cereal. I don't have immediate symptoms of being "glutened" though and I haven't had it since I started avoiding all those nasty hidden glutens that I was unaware of until a few weeks ago. So I don't know if it's truly safe. Does anyone know? The box says it's made with "non-gluten ingredients" and to contact the...

    ARCHIVED Joints Pains, You Too?

Wow! This topic hits home for me for sure! About 10 years ago I was almost crippled, with arthritis in almost every joint of my body. I even had a handicapped parking permit. The doctors called it Psoriatic arthritis, since I also have Psoriasis. Everything was the same as Rheumatoid Arthritis except for my bloodwork. To make a long story short, I refused...

    ARCHIVED Vitiligo

Oh yikes! My 12 year old daughter has a patch of vitiligo on her forehead and signs that it might be starting by her eyebrow. She has not even been tested yet for celiac disease, but now I'm even more concerned. The doc said it was autoimmune and we would have no way of finding out what caused it, but I think a gluten-free diet might be something to try...
  25. I posted this earlier, but it seems to fit well here. I took these to our church's women's Christmas party last night (along with a tray of gingerbread) and put a little sign saying "Gluten-Free, Egg-Free" for the few of us who have allergies/celiac disease and they ALL disappeared. There weren't that many women there who needed to eat gluten-free, but...
