  1. I suffered from really bad arthritis for a while and discovered that potatoes (and all nightshade vegetables) and peanuts were not good for me. I survived for quite a while on fish (just salt), rice, some vegies and fruits and sunflower seed butter. It helped a lot. I have been able to add potatoes back in, but still avoid peanuts (as well as gluten, dairy...
  2. Are there perhaps cultural reasons that your family feels the need to control you? I saw on another thread that you are Ukrainian. I'm not totally familiar with the whole Ukrainian culture, but I know that they aren't always, ummm, kind to the thought of women being independent. Liz
  3. I only have 4 kids at home, but I know how hard it is to eat just meat and vegies and fruit with kids. I make gluten-free food at every meal. The only wheat/gluten my kids have is sandwiches for school lunches and occasionally at home. Toast once in a while and maybe crackers occasionally. It's THEIR JOB to clean up their crumbs. They make sure they...
  4. Interesting. I've had the sharp pain in my right side too, along with gas, a lot in my life. I went for years when I had it every day. When I went wheat free it cleared up for the most part. It completely disappeared when I went totally, fanatically gluten-free, and hit me again a couple of weeks ago when I accidentally got "glutened". That was how I...
  5. What brand did you use? Ener-G lasagne noodles work well for me. Try undercooking yours a little bit next time. They'll finish cooking in the oven, and should stay together better when putting the whole thing together. Good luck! Liz
  6. I use Carlson too - only fish oil, no gluten or dairy. I can't imagine any of them having any gluten - the only ingredients are the oil and mint or lemon flavoring. Liz
  7. Hmmm, I make them all the time with great results, but I leave out the egg, (replace it with ground flaxseed and Ener-G egg replacer) and add about 1/3-1/2 C Almond butter with the butter. Maybe this is what helps them turn out. With 4 kids, mine never get a chance to get hard. They're usually gone in day. They freeze well for me too. Liz
  8. Try Glucosamine Sulfate and Chondroitin Sulfate. You can find them all over. You can get them mixed or just Glucosamine by itself. It helps my mom. I have also found, when I had horrible joint pain/arthritis, that Cod Liver Oil and Flax oil are helpful. Get lemon or mint flavored cod liver oil and it's not bad at all. Liz
  9. I also avoid eggs, soy, all dairy, (except a little butter now and then and a small amount of goat cheese or sheep cheese occasionally), peanuts, caffeine and alcohol. I also try to limit my sugar intake. I did an ELISA test about 10 years ago that scored high on wheat/gluten, eggs, soy, peanuts and dairy. I avoid soy almost as strictly as gluten - it...
  10. I just got a phone call from my doctor saying that the gene test from Kimball Genetics came back showing negative for both celiac genes. I guess this is good in terms of not having to worry about passing anything on to my kids. But I'm stumped. I really thought that celiac was the answer. Especially after reading so many stories about people having lots...
  11. I use ground turkey instead of beef for everything. Some of my kids' favorites are spaghetti and meatballs, baked potatoes with taco meat and salsa, stir fried chicken and vegetables, curried chicken with coconut milk and rice, mexican lasagne (still tastes good without cheese), roast chicken and potatoes, a "stew" made from gr. turkey, onions, potatoes...
  12. Thanks for the responses. I just realized that my vitamins have barley grass juice in them - had run out for about 6 weeks and just got more. I guess I'll pass them on instead of taking a chance.
  13. I'm waiting for the results of my gene test too, like waiting for the phone to ring any minute. I was told almost 10 years ago that my allergy or intolerance to wheat/gluten would go away if I avoided it for long enough. (No one thought to test me for Celiac - surprise!) I think they were wrong. I have asked the same question here and I think that no...
  14. Hurray! How sweet of her! And happy birthday to your little one!
  15. I am really wondering about the juice from the grass only of barley and wheat. I was told by a doctor that they DO NOT contain gluten - that only the grain part of the plant contains gluten. If this is true, then it would open up a lot of vitamins and healthy "green drinks". If the doctor was wrong, then he's wrong, but I don't want to avoid something...
  16. I had horrible joint pain before I changed my diet. (I think I responded to an earlier post of yours.) My sed rate was over 60 and my rheumatoid factor was negative. It took me about 5 days after eliminating wheat/gluten, eggs, milk, soy, potatoes, tomatoes, peppers to get some significant relief. After a month I was A LOT better, after 8 months we went...
  17. I am thankful that I found a way to live my life without horrid medications. I'm supposed to be in a wheelchair, crippled with arthritis, so I'm REALLY happy that instead I can teach PE, coach basketball and run triathlons. I was in constant pain and couldn't even take care of my kids by myself almost 10 years ago when I discovered I had food allergies...
  18. If you're in the Northwest, Fred Meyer carries the Rice Crunch'ems and Corn Crunch'ems. I found both last week and made the mix for New Year's Eve. You can't tell the difference. Liz
  19. I use Bette Hagman's gluten free flour mix. It's 2 Cups rice flour (I like brown rice flour), 2/3 Cup potato starch and 1/3 Cup tapioca starch. I usually put in 1-1/2 tsp. xanthan gum too and then sift it together at least 3 times. I substitute it cup for cup for all-purpose flour in cookies, quick breads and almost everything. It's a little heavy for...
  20. A lot of it has soy sauce in it. I would assume that they wouldn't use gluten-free soy sauce. The kind I get only has salmon, salt, brown sugar and natural wood smoke. It's called Portlock. Liz
  21. The gingerbread house was 100% gluten-free - made it from scratch. The only candy that I wasn't sure about was the little candy lego bricks, and of course I ate one without thinking first. I agree that not every GI issue is gluten related, but I know for sure I haven't had any eggs, soy or milk (the other things I don't eat). It might have been a delayed...
  22. Mostly English, Scottish and Irish. Maybe a little Dutch, according to my Grandpa.
  23. Okay, this might seem silly to all of you who understand being "glutened", but I have been reading your posts for about 6 weeks now and keep thinking that you are all very sensitive, because I don't react that strongly to ingesting gluten. I had enough symptoms to make me realize that I needed to go gluten free, but I just couldn't relate to being glutened...
  24. Good question! Maybe that's why our Christmas trees and flower designs came out great and when we changed to another design it stopped working. I'll be more careful next time, along with adding less xanthan gum. Liz
  25. I make a smoked salmon ball. Sorry, I don't measure exactly, but here's what I do. Mix an 8 oz package of Chevre (goat cream cheese) in a bowl with a little finely chopped onion and a splash of lemon juice. Then take about 4 oz of smoked salmon and put it in the food processor until it is very finely chopped up. Mix in with the cheese mixture. You might...
