Don't worry, once you get the versed on board you will have no concerns whatsoever! Good stuff...I've had 3 or 4 EGDs, and I actually got so I started to look forward to them. I got food poisoning last week - from the only place in town that offers sandwiches on gluten-free bread! This is so frustrating! I had symptoms like that the first several weeks I was gluten free also - I kinda chalked it up to my GI system healing itself. It should go away before too long - mine did.

Why does he want you off of carbonated beverages? I couldn't survive as a celiac without coke - a meal in itself - at least it works out that way sometimes. As far as the recovery goes, I started to feel some improvement after 2-3 weeks on the diet, but I didn't really feel back to 100% until after 3 months or so. It varies quite a bit person-to-person how long the recovery period takes, the only thing I will tell you is to MAKE SURE SHE STAYS ON THE DIET, now matter how she may feel initially. Coffee tears me up also...especially if I am drinking it on an empty stomach. Now I pretty much just drink it on weekends, when I am going to be around the house and don't worry so much about the effects. I think the acid is partly to blame, my GI doc recommended against drinking much coffee, or red wine for that matter, because it can exacerbate GERD symptoms... -

I had a great experience with Qantas over Christmas. We flew from Los Angeles to Sydney to Hobart, round trip, and I got gluten free meals on each leg of the trip. It depends on which commissary you go to. The big ones often have a pretty good selection. The Lackland AFB commissary had a small section with natural/organic foods, with a good selection of pasta, Amy's soups, etc. Pretty much all the commisaries carry the Amy's enchiladas, they are a lunch staple of mine.
