ARCHIVED The Lyme Disease Thread
TestyTommy replied to CarlaB's topic in Food Intolerance & Leaky Gut
OK, so I got a stack of lab test results from my doctor, and as I read them, it looks like I've tested positive for Lyme. I'm seeing the doctor on Tuesday, so I can talk to her then. But I thought I'd run this past you folks to make sure I'm reading it right. First, there is a test from IGeneX for "IFA, B Burgdorferi" which says "1:80 Titer" and the... -
ARCHIVED What Can I Use For Butter?
TestyTommy replied to Beth in NC's topic in Gluten-Free Foods, Products, Shopping & Medications
For adding fat and flavor, I've been using lots of avocado. I mash it up and mix it with meat and rice. Or I use it in place of mayo in tuna, or spread it on gluten-free bread in place of butter. Or just eat it sliced as a side dish. You can add avocado to almost anything, they're easy to find, convenient and completely natural. But mostly, I just love... -
ARCHIVED I Don't Understand How The Healthy Stuff Is Bad
TestyTommy replied to Dawneekoz's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Humans have been around for about 1,000,000 years, but first started eating grains less than 10,000 years ago. So for more than 99% of the time humans have existed, they did just fine without these so-called "healthy" foods. Humans started eating grains because grains offer the advantage (over meats and vegetables) of being storable over long periods of... -
ARCHIVED Chronic Dehydration - Worse After Glutened.
TestyTommy replied to Woolygimp's topic in Coping with Celiac Disease
Salt gets a bad rap from mainstream medicine because high sodium intake is connected with hypertension, whcih is connected to heart attacks. This is what I've started referring to as 'statistical medicine' -- doctors refusing to treat people as individuals, but instead just treating everyone as if they are 'typical'. So there's no such thing as cholesterol... -
ARCHIVED Chronic Dehydration - Worse After Glutened.
TestyTommy replied to Woolygimp's topic in Coping with Celiac Disease
Nope, just the opposite. If you're not getting enough salt, the water can't get into your cells. That's what sent me to the hospital, where they pumped me full of concentrated saline solution for two days. Of course, no one bothered to look into the underlying cause, which was celiac, but that's another story. What we all really need is enough of... -
ARCHIVED Chronic Dehydration - Worse After Glutened.
TestyTommy replied to Woolygimp's topic in Coping with Celiac Disease
I had HUGE problems with dehydration when I was on gluten, eventually sending me to the hospital. I drank constantly, and had dry skin, eyes, mouth, sinuses, etc. After being gluten-free for 2.5 year, it has gotten much better, but I still drink more than most people and have pretty dry skin. The things that have helped me most is making sure I get plenty... -
Add me to the list of people who are always tired. I haven't slept through the night in over 10 years. It sucks, and I sleep better than I used to, but I still can't sleep normally after 2.5 years gluten-free.

ARCHIVED Another Question From A New Celiac!
TestyTommy replied to jewlesD's topic in Coping with Celiac Disease
I agree with curlyfries. Your gut is damaged and can't handle food in the same way that healthy people can. I have trouble whenever I eat too many carbohydrates at one sitting. It helps me a lot to eat a number of small meals, with a focus on fruits and vegetables. Digestive enzymes help, too. Heck, even something as simple as eating slowly and chewing... -
ARCHIVED Granola Bars
TestyTommy replied to sammers1's topic in Gluten-Free Foods, Products, Shopping & Medications
Which ZonePerfect bars are gluten-free? I used to love them before i went gluten-free, but I assumed they all had gluten in them. -
Kombucha is NOT hard to make. In fact, it's very simple. Basically, you boil a big pot of water and add some tea bags to make tea. Then you mix in a bunch of sugar (the more sugar, the stronger the Kombucha will be), let it cool in a glass jar and add the 'baby'. Then you store it for a week or two in the glass jar, covered with some cloth (to let...

ARCHIVED Cross Contamination & Lay's
TestyTommy replied to Woolygimp's topic in Coping with Celiac Disease
Check the threads in the "Food" section on this site. Lots of people (including me) react to Lays chips. Stax are the only chips made on dedicated lines. I had lots of problems with plain Lays potato and corn chips. I don't recommend eating them. There are two problems with oats: (1) many brands of oats have CC issues and (2) while oats do not contain... -
Also consider the possibility of other food allergies. I'm 2.5 years gluten-free, but still suffering from fatigue. It's much better than before I was diagnosed with celiac, but I'm still more tired than most people. Recently, I went on a very restrictive diet (basically nothing but meat, veggies and rice, and my energy level and sleepiness have improved...

ARCHIVED Re-curring Symptoms Why?
TestyTommy replied to Glutenfreekatie's topic in Coping with Celiac Disease
Hi Katie, What kind of corn chips are you eating? A few months ago, I realized I was reacting to Lays plain potato chips and plain corn chips -- something I never would have expected. There are threads in the food sections about chips -- there seem to be CC issues with many brands of chips, incl. Lays. -
ARCHIVED Just Wondering Who's From Minnesota
TestyTommy replied to linds's topic in Introduce Yourself / Share Stuff
Another Downtowner here. The Lund's just across the river in NE (University & Central) has a gluten-free section -- it's hidden in the baking aisle with all the flour! The Rainbow off 35W in NE also has a gluten-free section. I've found that Target is pretty much the worst store for gluten-free items. The long-promised Whole Foods is supposed... -

Gluten-free Pizza Leonardo's Pizzeria in Mahtomedi has started offering gluten-free pizza. I haven't tried it myself, but a celiac friend of mine said it was excellent. www.leonardospizzeria.net Park Tavern in St. Louis Park (Hwy 5 and Louisiana) has offered gluten-free pizza for a while. I've tried it and it's very good. Has anyone else found... -
ARCHIVED Low Vitamin D
TestyTommy replied to Worriedtodeath's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Yeah. let he play out in the sun. The body needs to get plenty of sun in the summer, so it can make and store enough Vitamin D to get us through the winters. Idiots who tell us not to go into the sun without sunscreens are causing epidemic levels of Vitamin D deficiency. -
ARCHIVED Everyone With Fibromyalgia...
TestyTommy replied to lizard00's topic in Related Issues & Disorders
I don't think confusedks ever said that fibro wasn't real or was made up. I think the point was that there is something going on in your body that is causing the disease, and doctors should be looking for the root cause instead of writing it off and saying there's nothing they can do about it. Doctors sometimes get obsessed with labeling conditions rather... -
I make my own Kombucha and drink it every day. The main benefit of Kombucha for celiacs is the bacteria in the tea. Like yogurt and probiotic capsules, Kombucha will help repopulate your intestines with "good" bacteria.

This is a fun thread, so I thought I'd add my $0.02 worth: 1. I agree there's no point in telling restaurants that you are "gluten-free". I usually tell them I am "extremely allergic to wheat" -- that seems to work. I think they have visions of me going into convulsions on their floor if they put croutons on my salad. 2. Ignorance is different...

ARCHIVED What Is "the Basic Diet"
TestyTommy replied to Missouri Farmer's topic in Coping with Celiac Disease
Do you have any problems with rice or potatoes? I don't think very many celiacs react to rice and potatoes. I think some of us avoid starches to control our weight, but if you need to put some weight on, nothing will do it better than rice and potatoes. -
ARCHIVED I Have A Question About Eating Yogurt, Etc...
TestyTommy replied to nikki2008's topic in Coping with Celiac Disease
Hi Nikki, Welcome to the Boards. You'll find lots of good info here. I'll try to give you my perspective on your questions as best I can: Be patient. How long it takes you to heal will depend on things like how long you were undiagnosed and how old you are. But pretty much all of us experience significant healing in the first few months of being... -
ARCHIVED Vitamin And Mineral Deficiencies
TestyTommy replied to JodiC's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Vitamin D deficiencies are extremely common. The only dietary source is milk (not cheese or other dairy -- just milk ) to which vitamin d is added -- it doesn't occur there naturally. And in N. Europe and the northern US (eg, Chicago, Boston, NY and any where north of them), it is impossible to get enough sunlight during the winter (September - May) to... -
ARCHIVED Basic Question Regarding Evidence Of Benefit Of Gluten-free Diet
TestyTommy replied to benjamin's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Keep in mind that there is very little research on celiac disease. Medical research (esp in the US) is done for diseases for which companies can develop profitable treatments. For celiac, there is a 100% effective treatment which has zero side-effects, so there are never going to be the sort of large-scale studies that you're looking for. If you think... -

ARCHIVED Basic Question Regarding Evidence Of Benefit Of Gluten-free Diet
TestyTommy replied to benjamin's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
If you're looking for someone to tell you that it's okay to eat gluten if you have a positive antibody test but no symptoms, you're in the wrong place. Most of us weren't diagnosed until we had severe symptoms and our live were destroyed. If you're an asymptomatic celiac, quit eating gluten. And consider yourself very lucky.
