  1. I'm in Oklahoma, where there is very little variety in health food stores. Mine does not have bulk bins and I probably wouldn't trust it even if it did. The prepackaged flours are mighty expensive. Any favorite sites?
  2. I'd love to have a fellow celiac to meet up with!
  3. I can't handle fat very well, so I don't eat anything with oil. Peanut butter is really the only form of peanuts I got (since I just cut it out).
  4. If you relied on dairy for your protein source, you might be lacking in protein. Try adding more protein (protein shakes, meat, eggs) and see if that helps - I know that it does for me.
  5. Thanks for the replies!!! I was eating JIF - I'd seen somone say that it was gluten-free? And it was a new container - no CC issues. I don't usually have problems with beans and I try to limit my intake of soy, but it doesn't seem to bother me when I do eat it. I'm sure the mold content and the hydrogenated oils could be a factor. Interesting...
  6. I've noticed that I can't handle peanut butter very well. I've always attributed it to the fat content, because I don't digest fat well at all, but now I'm thinking it might be a food intolerance. I threw out my peanut butter today. I don't eat any other form of peanuts. Is there anything else related to this I should watch for?
  7. Interesting to see that some of you are still having problems after being gluten-free for a long time. I had 2 T. of peanut butter on saturday (split into two servings) and was bloated up like a balloon yesterday. Wish I could eat more fat.
  8. Does anyone else have problems digesting fat? Since Jan. 2005, I've found that, as a general rule-of-thumb, the amount of calories from fat in my diet cannot make up more than 20% of my total daily calories. Lately I've been able to eat more fat and not have problems. Did any of you have problems digesting fat when you first went gluten-free and have...
  9. Is it possible you could be intolerant to something else other than the gluten? I still can't digest fat very well, so if I eat too much, I bloat up like a severely pregnant woman.
  10. Thanks! I forgot to list that I add chopped broccoli to the sauce as well. I try to get in as many different veggies daily as possible and the chicken breast is a great protein! Enjoy!
  11. 3 squash pasta 1 large spaghetti squash 1 zucchini, washed and chopped 1 yellow squash, washed and chopped 5 chicken breasts jar of tomato sauce of choice or homemade marinara sauce can of diced tomatoes 1. Preheat oven to 375. 2. Cut spaghetti squash in half lengthwise. Place each cut side down in baking dish and fill halfway with water. Bake...
  12. What's your favorite? I've tried the Hagman mix and was pleased with it. I like to bake, so I'm hoping to buy in bulk and keep them in airtight containers. I found this Open Original Shared Link. Has anyone tried it or the mix of flours in it? Thanks!
  13. I have it and I look at it less frequently as I become more knowledgeable. It was helpful in the beginning and is still helpful when I need to find, for example, gluten-free black beans. I can look up black beans and scroll down until I find several brands that it says are gluten-free. Then I'll write those down and take it to the grocery store with me so...
  14. Thanks so much for letting me know!!!
  15. Before diagnosing myself and going gluten-free, I'd already found that I was sensitive to dairy and high fat foods. Even after removing dairy and high-fat foods, I was still very, very bloated (I looked like I was 6months pregnant all the the time) with horrible stomach pains and constipation. The bloating started to go away after 3 days on the diet and...
  16. Phew! I was worried I'd have to give up my beloved Stoli & crans! Thanks!
  17. but I just saw a website that says Stolichnaya vodka is distilled from "winter wheat".
  18. Bananas are naturally constipating. They tell those with IBS-D to eat them daily to keep the D at bay. I can't have any or else I'm plugged up for a week! I used to use Milk of Magnesia, but it's much, much cheaper to buy Open Original Shared Link from your health food store or online. Also know that eating too much insoluble fiber (found in vegetables...
  19. I constantly deal with C. I have several bottles of miralax. I don't like it - it makes me dehydrated (it pulls water into your colon from your body) and makes my stools hard to pass even if they are soft. A couple things I do that keep me going: 1. Magnesium supplements - generally around 1500mg EXTRA (on top of food and my mulitvitamin) magnesium...
  20. Another question. I've searched on this but can't seem to find an answer. Are silicone spatulas (the kind you get batter out of a bowl with, not the omelette turner ones) safe for both of us to use as long as they are washed in the dishwasher in between? Thanks for the help!
  21. I've done a bunch of searches, but I wanted to make sure that if my husband uses nylon utensils for his gluten-y stuff and I use them for my gluten-free stuff that they'll be ok. Obviously, we will wash them very well in the dishwasher in between uses. Thanks for the clarification!!

    ARCHIVED Pf Changs

Yes, I am getting married tomorrow (or actually later today, as it is 2am here). I was very good at planning and got everything taken care of well before this past week, so I've done a lot of relaxing in these past few days. I'm wired right now, so I can't sleep. I'll share pictures and experiences from the wedding when we get back from our honeymoon!

I went there last night and had a fantastically informed server. She explained that not only do they use clean, new pans when preparing something for a celiac guest, but they will actually send someone out to a store to buy something if necessary. They stock gluten-free sauces and will bring them out to the table to show the guest. They steam their rice...
  24. I'm jealous that you can cheat and not be miserably sick. If I get even a trace amount of gluten, I'm so painfully and severely bloated that I literally look like I'm 7 or 8 months pregnant. I feel nauseous and sick and (unsurprisingly) none of my clothes, save the maternity clothes I bought before I was diagnosed, fit. I will never cheat because I...
  25. I'm going to an all-inclusive on Monday, so I'll let you know when I get back how it went.
