ARCHIVED Since You've Been gluten-free
emcmaster posted a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
It typically takes me about a week to get over a glutening, dairy-ing or too much fat, but the last 2 times, it's only taken me 4-5 days. Don't get me wrong, I'm happy as a clam that it's not taking as long to get back to normal now, but I'm wondering why. Is it because I'm healing? I've started taking these capsules called BCQ by Vital Nutrients. My... -
ARCHIVED Casein Free Diet--is Whey Protein Ok?
emcmaster replied to kathy2005's topic in Food Intolerance & Leaky Gut
Kathy, let me know how the chocolate egg white protein powder is! Almost all of my supplements are from NOW - I like that they don't add anything to their products and all are allergen free, except when obvious (like the eggs in egg white protein powder). Good luck! -
(((big hugs))) I'm so sorry, Ursula.

ARCHIVED Gluten -- I Cheated And It Was So Good
emcmaster replied to grantschoep's topic in Coping with Celiac Disease
I have a habit of cheating once I get accidentally glutened. I get sick for about a week after any amount of gluten, dairy or high-fat foods, so extending my sickness by one day is sometimes worth it to me to eat what I want. But I feel horribly guilty about it and feel like a failure for not being able to stick to my diet. I'm working on not bingeing... -
ARCHIVED Casein Free Diet--is Whey Protein Ok?
emcmaster replied to kathy2005's topic in Food Intolerance & Leaky Gut
If you're looking for a good protein powder, NOW brand makes an egg white protein powder that has no taste, is allergen free (except for eggs, of course), and blends extremely well. I make protein shakes with it and OJ and berries - delicious! -
I can't eat much, so I miss a lot of things but the only food that I really, really miss are tortilla chips (they have too much fat for me to digest).

ARCHIVED Silent Celiac No More...
emcmaster replied to elye's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I started having tummy troubles almost 3 years ago, but most of my symptoms went away when I cut out dairy and high-fat foods. Because both of those are still big triggers for me, I think that the reason my symptoms went away at that time was because I didn't have enough damage yet to have symptoms for gluten (even though I think celiac brought on the dairy... -
I am still sort of on an elimination diet, even though I've added back some grains in flour forms. (It appears, at least at this moment, that I am tolerating rice, tapioca, corn and potato in flour form but not in grain form. ) I ate only fruits, vegetables and lean proteins. If you know for sure that rice isn't a problem, then eat that. I, however...

Do you have the lab results for your thyroid tests? Doctors notoriously fail to treat patients that have very high, yet still in the normal range, TSH levels. If yours are high, you are probably experiencing the same symptoms that someone actually out of the normal range might be experiencing. Hair loss is a big symptom.

ARCHIVED Sub For Xanthan Gum?
emcmaster replied to emcmaster's topic in Gluten-Free Recipes & Cooking Tips
Thanks, Leah and RiceGuy. I'm still in the process of discovering my intolerances, so I may end up with no flour base to cook with anyway... was just thinking ahead. -
ARCHIVED Feeling Bummed About My Ever-narrowing Diet.
emcmaster replied to frenchiemama's topic in Coping with Celiac Disease
I guess that's just the way I look at it. Regardless of how restrictive my diet is, how time consuming preparing all my food is, and how I sometimes get sick even when it doesn't appear I've consumed anything I'm intolerant to - I'm not dying, I have all my limbs, I have great friends, a great job and a great family. What I was trying to do was to get... -
ARCHIVED Feeling Bummed About My Ever-narrowing Diet.
emcmaster replied to frenchiemama's topic in Coping with Celiac Disease
You can still eat grains, potatoes and legumes. There are a LOT of possibilities for food out there - you'll even find many soup and stew recipes on normal recipe sites that don't need modifying. There are many people on this board that have far worse restrictions. Get creative and do lots of recipe searches. Go to a farmer's market and buy lots of fresh... -
Through process of elimination, it appears that I seem to react to anything that has xanthan gum in it. Is guar gum a good substitute in bread/sweets recipes?

ARCHIVED In Need Of A gluten-free Laxative
emcmaster replied to sparkles's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I'm chronically constipated, which gets even worse when I'm glutened, and I take magnesium supplements every day. You may have to play around with how much you need to take, but they do help a lot. Also, I take a prescription called Zelnorm, which helps to speed up the contractions of your colon to help you to go. I only take it probably 4 or 5 nights... -
ARCHIVED Coping With Relatives That Don't Understand
emcmaster replied to LonelyWolf307's topic in Coping with Celiac Disease
LonelyWolf, I'm very sorry you have to deal with this. I have trouble getting my parents to understand how difficult it is for me to eat (and yet, my mother still mentions to my husband that she thinks I have an ED). My best advice is to stop trying to convince him. It doesn't sound like he's a bad guy, just a little convinced of his own brilliance... -
A lot of things have made sense: - looking back over the past 5 years, I realized that the only times I felt good (before I was diagnosed) was when I was on a low-carb diet that allowed only sweet potatoes and brown rice for carbs... I was still getting gluten in small ways, but not eating it made a big difference - lower back pain - it flares up badly...

As someone who is chronically constipated, I drink coffee when I desperately need to make myself go. The caffeine causes colon contractions. So if you're not constipated but don't exactly have a normal stomach either, the strong coffee might be too much for your tummy to handle.

ARCHIVED Intolerant To Xanthan Gum Or Another Baking Ingredient?
emcmaster posted a topic in Food Intolerance & Leaky Gut
I added back rice in the form of rice flour and made brownies (gluten-free, dairy-free and low-fat as well) on Sunday. I had a bad reaction yesterday but feel 90% better today. Because this same thing happens every time I make brownies but not when I use rice flour for other things, like pancakes, I'm wondering if I'm intolerant to something else in the baking... -
ARCHIVED Feeling Worse On The Elimination Diet
emcmaster replied to emcmaster's topic in Food Intolerance & Leaky Gut
Broccoli is a very gas-producing vegetable and I believe cabbage is, too. This sounds funny, but you might try cooking that broccoli salad a bit to make it easier to digest. I think your idea sounds good for the e. diet, however, you will most likely need to eat every 2 or 3 hours if you're only eating fruits and veggies. I can't go much longer than that... -
ARCHIVED Trouble With Oils?
emcmaster replied to Jarrett's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I have trouble with fat in general. It seems that my intestines are damaged enough that anything hard to digest flares them up. Hopefully this will go away as I heal. -
I'm going to Vegas in about 3 weeks and am at a loss for what I can bring with me to eat. I can't eat out at restaurants unless it is something ridiculously simple like a veggie-only salad and fresh fruit. Here's what I *can't* eat that would be easily packable: -nuts -anything that isn't virtually fat-free -dairy -soy -grains (for now at...

ARCHIVED Feeling Worse On The Elimination Diet
emcmaster replied to emcmaster's topic in Food Intolerance & Leaky Gut
I'm going to leave the big answer up to the experts (if no one answers, PM jerseyangel or Ursula), but here's my $0.02: If you have trouble with roughage, you might try cooking it really well and pureeing it. That breaks down the fiber into a more managable form for your intestines to digest. As a vegetarian, you might try eating only well cooked and... -
ARCHIVED Since Going Gluten Free What Is Better In Your Life?
emcmaster replied to a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
No more bloating that literally made me look like I was 6 months pregnant. I can wear cute jeans and midriff baring tops out to bars now! I've lost the 25 pounds that I gained despite counting calories and working out (before my diagnosis). The pain is severely reduced. I feel like a normal person!!! -
ARCHIVED Anyone Have Problems With Milk Too?
emcmaster replied to justme's topic in Food Intolerance & Leaky Gut
I'm dairy intolerant - not just casein or lactose. Until I went soy-free, I drank a lot of fortified soymilk, which has great levels of calcium. If you're concerned about your calcium consumption, take a calcium supplement AND try to eat lots of leafy dark greens.
