Xanthan gum makes me have drastic bloating and pain. I'm not intolerant to corn in any way, so I can't understand why Xanthan gum does that to me. I handle Guar gum just fine. Sadly, most gluten-free mixes are made with Xanthan gum, not Guar.

I'm only about an hour from Lawton - in Norman. There's a fantastic OKC Celiac group that meets bimonthly. It'd be about 1-1/2 hours drive each way for you, but I think it would be worth it. -

Bette Hagman's cookbooks come to mind when I think of nutritional info, but I think your best bet is doing it yourself - it's so easy. I recommend searching for recipes online. It's free and most are very good. I like CookingLight.com's recipe archive. Almost all recipes on there can be modified to be gluten-free if they aren't already... and 99% of everything I've tried from them is amazing. I find that recipes that are formulated to be gluten-free usually aren't as good as "normal" recipes...

I eat a lot of apples and until recently, didn't even think about peeling the area the sticker was. I've never gotten sick from it, but I now peel the area where the sticker was, just in case. -

Being a fairly new celiac, this was my first time to meet anyone else with celiac. I could cry tears of joy at how wonderful these folks are... not to mention the AMAZING *safe* food! Just wanted to encourage those of you that haven't gotten involved in your local celiac communities to do so - I'm so excited to get to know these people better!

I have Princella brand in my pantry, but I read on their website that they can't guarantee they are gluten-free. The ingredients are safe, but you never know. I was hoping to make a sweet potato dish for my OKC Celiac meeting tonight but I certainly don't want to make myself and anyone else sick! Thanks!

Yep, it's possible. Like Nantzie said, I felt like someone had "flipped a switch" and felt noticeably better on the second day and even better after that. I had some rough days every once in a while for a few months, but I think that was more due to still being glutened occasionally. Congrats on feeling better! -

Have you tried cooking your meat in olive oil or vegetable oil? Nuts are packed with healthy fats, as are avocados, which would be a nice break for you.
