  2. Patti's right - there's nothing you can really do to make yourself get over it faster, but things you can do to make yourself more comforable. Depending on your symptoms, there are several things you can do. If you have bloating and pain, BCQ capsules by Vital Nutrients (search online for them) work well for me.   3. Patti, I'm glad that you don't have to worry about it a lot - corn on top of all your other intolerances would be a nightmare. How is your plan going of eating rice or rice pasta once a week? Are you still doing that?
  4. Why does my body hate it so much? I know it's made from corn, but I don't have any problems with other sources of corn, whatsoever. There was xanthan gum, practically last on the ingredients list, in my salad dressing monday night. I got SO sick last night. At least it's not like gluten - I feel fine the next day. It's heavier at night, because I can't eat those foods at work (crumbs everywhere here - I limit myself to what I can eat with a fork or spoon - no touching anything that goes in my mouth at work).   6. I'm glad to hear that when it is referred to as "celiac'S", it bothers others, too. I was worried that I would come across as a member of the grammer police (which I'm guilty of in some instances), but it's one of those things that just gets under my skin!

I don't shy away from fat because it's fat, but because I like to eat large quantities of things and more fat means more calories... which means I can't eat as large a quantity for the calories.   8. I was one of those lucky celiacs that gained a lot of weight prior to diagnosis. I lost it all pretty quickly, but recently gained about 5 lbs due to a lot (a LOT) of overeating over the holidays. I've gotten back to my regular exercise and healthy eating (I count calories), but I just can't kick the hunger pains. I'm getting a normal, safe amount of calories...

  10. It's CeliaC disease, not Celiac'S, right? In my experience, the "'s" is only used if the disease is named after someone. From the research I've done, it's not named after someone, although I could have missed something.

  13. I echo Lorka. Supplements are NOT good for your body and are no permanent fix. Eating right, getting lots of sleep and EXERCISING are the "secrets" to weight loss. If you don't change your habits, you'll never keep the weight off, no matter how you lose it. Have you considered weight watchers or something to that effect? Make exercise a priority...
  14. He was completely gluten-free for 4 months, right? That may have been enough time to heal him a little so that he doesn't currently have symptoms. When I had been gluten-free for 6 months, I (stupidly) went on a gluten binge while we were in Vegas. I ate anything and everything gluten for 3 days and didn't have symptoms.   15. I make my husband Pamela's - I think it tastes the best. Unfortunately, I can't eat it anymore because of the xanthan gum, but it doesn't make me sick to make it for him. I used Guhlia's waffle recipe yesterday and we LOVED those. So if you're looking for waffles....
  16. Hi Tiffany, It pretty much happens with any flours I'm using - tapioca, rice & potato starches, and white/brown rice. I think that I let them sit too long... should I wait to add the guar until right before I pour? I do use oil. Thanks!

Hey everyone - I've noticed, pretty much since the beginning of baking gluten-free, that after mixing my batters (pancakes and waffles specifically), if I don't pour immediately, they get really thick. I suspect that it is the guar gum, but I don't ever add more than the recipe calls for. I usually end up adding about 4 times the amount of milk the recipe...

  21. Hi everyone - still feeling pretty awful. I don't think it's a stomach bug unless stomach bugs cause enormous bloating. Thanks for the advice... I don't think I should take immodium since I have lots of problems with C. Patti & Stef, I hope you're feeling better soon. Patti, my mom had a hysterectomy not too long ago. Not fun!
  22. Thank you, Patti. I really appreciate the support and kind words. For the most part, I'm totally OK with having celiac... I guess I just think of it as my "burden to bear", but it just seems sometimes like my body is out to destroy me! Are you pretty well recovered after your surgery? I think I missed what "kind" of surgery it was?
  23. My best friend is having a theme-type party for her, her roommate and her roommate's boyfriend's birthdays tomorrow night. There are going to be 60-75 people, including all of our friends, there. I'm mysteriously sick and have had the worst stomach pains and nausea of my life in the past 3 days. And this morning I woke up to find that I'm so ridiculously...

  25. I work as a mortgage originator, which means I can work from home if I want to. Starting in November, I have been babysitting for my friend's baby during the day and older daughter before/after school. I'm there from about 8am to 5pm. Their house is a nightmare when it comes to gluten. I have made a policy of not eating things that require me to touch it...
