  1. When you were first gluten-free, did you have random days where you had some glutening symptoms but not all? I ask this because I've been gluten-free for 6 months and occasionally will have a day or two where I have the bloating and pain, but not the other symptoms. And since it only lasts for a day or two, I know I haven't been glutened or had a reaction...

  3. It seems to be the amount of fat that I eat compared to the calories that bothers me. I've found that if I stay away from anything that has more than 20 or 25% calories from fat, I do fine. So what I could do would be to eat one as part of a high-calorie, fat-free meal. That should even the calories from fat out a bit. I'm not sure why I didn't think of that...
  4. I might add that if you're eating the paleolithic way, you need to be careful that you're getting adequate calories. Over time, if you're eating less than your BMR, your metabolism will slow down to compensate, making weight gain inevitable if you ever start eating more. Just a thought. I know that when I eat paleolithic-ally, I barely consume 1000 calories...
  5. I bet they're heavenly. Sadly, I can't digest fat very well and more than a teeny-tiny bit makes my stomach look and feel like I've swallowed a basketball.
  6. From my experience, that's due to too much fiber. I have chronic constipation but through careful management of magnesium supplements and Zelnorm every few days, I usually have great poops. However, if I eat too much fiber, I have the exact same poops you are talking about. They're so unsatisfying! (Did I really just post that? Yes, yes I did)

  12. Yes, I get severe, severe stomach pains after eating gluten. Before I went gluten-free, I had to go to the ER several times because it was so bad. Sometimes I get it randomly, when I'm sure I haven't been glutened. I'm hoping it will go away the longer I stay gluten-free.

  15. It just means that however much espresso you put in your cup, you need add 3 times that amount of milk to it. So, if you use 1.5 oz. of espresso (one shot), you would add 4.5 oz. of milk (most people add 6). I'd just use a measuring cup and tinker with the ratio until you find a combo you like.
  16. Are you just gluten-free or do you abstain from other food groups? If you've been gluten-free for a few months, you may have developed other intolerances which could be causing the bloating. I know how frustrating and painful the bloating is - I'm sorry that you're having to deal with it again.

  19. I used Bette Hagman's Featherlight 4 flour blend. How much yeast should I add? And should it be nutritional yeast or the kind you use in a bread machine? Should I add 1/2 tsp. baking soda on top of the 2 tsp. already in the recipe? Would that be too much? Thanks for all the suggestions! I'm new to gluten-free baking, but I used to bake a lot before...
  20. I can't have xanthan gum, so I tried leaving it out when making muffins. I tried cooking it for a lot longer at a lower temperature, which helps some, but doesn't solve the problem. Can I substitute unflavored gelatin for the xanthan gum? Any other tips? Thanks!

  22. Hi Kathy, Yes, unfortunately we can't drink the egg white pp alone with water... I've never tried it, but I imagine it's pretty gross. I'd never thought about making meringue out of the foam - interesting. I personally like the foam, but I bet you could scrape it off if you didn't like it. Enjoy!

  24. I take a good-quality probiotic and BCQ capsules by Vital Nutrients. Both seem to help.
  25. I'm going to "third" the magnesium recommendation. I've been taking it now for several years and it's the only thing that gives me "normal" poops - laxatives like Miralax and soluble fibers don't help on their own. I also take Zelnorm - 1 tablet, probably 4-5 nights a week. It and the magnesium make for good poops almost every day. I'm a lifelong sufferer...
