  6. I missed several days of class last month due to being glutened accidentally. Because it was a one-month summer class, my grade was severely hurt by missing class, even though I told my professor why I was gone. To prevent this in the future, he suggested I "register" my "disability" with disability services at the university so they have it on record...

  8. Just wanted to add that I had a reaction to this (I think) and it could only be the chipotle chile in adobo sauce, so if anyone is going to try this (it's really good), make sure to verify your brand of chipotle chile in adobo sauce is gluten-free. The brand I reacted to was La Costena.
  9. Zatarain's is really good - my husband and I used to eat those before I went gluten-free. Their red beans & rice and dirty rice are my favorites, but they're NOT gluten-free. Thank goodness the jambalaya is though!

  12. I think people assume I have an eating disorder when I tell them the things I can't eat. I've gotten the "just have a salad" excuse, too, but it's harder for me since I'm so sensitive to fats - I can't have any dressing, so what am I supposed to do, pay $8 for lettuce and tomatoes that probably has crouton crumbs on it?   13. Sorry for the delay! I use Pace, but we've used Old El Paso in the past before I went gluten-free. I'm not sure if Old El Paso is gluten-free or not.
  14. This was really good & unique. I used 99% fat-free ground turkey instead of beef and I omitted the cheese, green onions and sour cream garnishes. I thought this was going to be very spicy, but it wasn't at all. In fact, if you like spicy things, you might want to seriously up the chili powder.

  17. I was under the impression that the reason you become allergic to foods you eat often is because you have leaky gut syndrome. If you are tested and treated for it, it's not longer a problem. Am I mistaken?

  25. Yep, I echo that it's easy to gain weight if you're eating all gluten imitation products. I believe Ener-G brand makes english muffins that are 400 calories and 19 grams of fat per muffin!
