  3. I substitute guar gum with 1.5 times the amount the recipe calls for of xanthan gum. So if the recipe called for 2 tsp. xanthan gum, I'd use 3 tsp. guar gum. I've had great results, so hope this helps!

  5. I'm not eating low-fat as a dieting technique - it's because my body seems unable to handle much fat. I can safely incorporate fat into my diet as long as it is less than 25% of my calories, but I tend to think of fat-free foods as "safe" foods for my stomach. For some reason, foods with high fat contents like nuts, nut butters, and oils make my stomach cramp...
  6. I was one of those celiacs that gained a lot of weight prior to going gluten-free. Thankfully it all came off within a few months. I know I don't eat as many calories as I should based on my activity level, but with having everything low-fat, it's hard to get enough calories in. It makes sense that I've severely slowed my metabolism down over 6 months...
  7. It's really easy! I buy raw cashew pieces from my health food store - they sell them a pound for $4. I use 1/2-1 cup per every 4 cups of water - depends on whether I want it creamier or thinner.   10. I have to say that while I love gluten-free cookbooks for baking, I've not been impressed with gluten-free cookbooks for meals. I've had the best luck by looking for regular recipes and substituting gluten-free ingredients. Open Original Shared Link has a fantastic recipe collection.

I added back all the foods I suspected and most weeks, have 1 or 2 bad days a week unless I've for sure been glutened or consumed one of my other off-limits foods.
