ARCHIVED Symptoms Even When Sticking To Gluten-free Diet
emcmaster replied to jebus's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Welcome! The responses you've gotten so far are right on the money. I'd also like to point out that the longer you go between glutenings, the better you'll start to feel in general. I felt like a different person within 2 days of stopping gluten and felt so much better over the next few months. As careful as I was, though, I was still getting glutened... -
ARCHIVED Blabbing To Everyone I Know
emcmaster replied to Robina's topic in Coping with Celiac Disease
Hi Robina, It is so tempting to talk about celiac to everyone you know and meet, isn't it? One thing I think we have to remember is that while we find it interesting, most other people don't. My husband has had to pull me aside (discreetly, of course) and let me know that I'm talking about it too much when he sees our friends' eyes glaze over. It... -
ARCHIVED Need To Make B-day Cake Or Cupcakes For 3yr Old
emcmaster replied to kimber's topic in Gluten-Free Recipes & Cooking Tips
I substitute guar gum with 1.5 times the amount the recipe calls for of xanthan gum. So if the recipe called for 2 tsp. xanthan gum, I'd use 3 tsp. guar gum. I've had great results, so hope this helps! -
That looks amazing! Thanks!

ARCHIVED Suddenly Starving All The Time
emcmaster replied to emcmaster's topic in Coping with Celiac Disease
I'm not eating low-fat as a dieting technique - it's because my body seems unable to handle much fat. I can safely incorporate fat into my diet as long as it is less than 25% of my calories, but I tend to think of fat-free foods as "safe" foods for my stomach. For some reason, foods with high fat contents like nuts, nut butters, and oils make my stomach cramp... -
I was one of those celiacs that gained a lot of weight prior to going gluten-free. Thankfully it all came off within a few months. I know I don't eat as many calories as I should based on my activity level, but with having everything low-fat, it's hard to get enough calories in. It makes sense that I've severely slowed my metabolism down over 6 months...

ARCHIVED Eating Gluten Free On A Small Budget
emcmaster replied to SarahTorg's topic in Coping with Celiac Disease
It's really easy! I buy raw cashew pieces from my health food store - they sell them a pound for $4. I use 1/2-1 cup per every 4 cups of water - depends on whether I want it creamier or thinner. (If I'm just using it for baking, I often make it thinner to save money). I soak the cashew pieces in the water overnight and then put 1/2 cup of that water in the... -
ARCHIVED Eating Gluten Free On A Small Budget
emcmaster replied to SarahTorg's topic in Coping with Celiac Disease
We spend approx. $500-$600 a month on groceries and small household items like dishwasher detergent. (The bigger household items like paper towels, toilet paper, etc., we buy at Sam's). That breaks down to about $150 2x per month at Walmart or Super Target - those are our "stock up" trips. The rest goes towards fresh produce and the kinnikinnick english... -
ARCHIVED You're Know You're A Celiac If...
emcmaster replied to chgomom's topic in Coping with Celiac Disease
... you stare at your husband's delicious gluten-filled calzones and pretend to eat them. (pretend!) ... you long to look at the contents of other people's fridges and pantrys just to see what normal people eat. (Actually, I've always liked doing that, even before I went gluten-free. I was a health nut from a young age!) ... you declare your cat "gluten... -
ARCHIVED Any Suggestions On Cookbooks?
emcmaster replied to micaldrew's topic in Gluten-Free Recipes & Cooking Tips
I have to say that while I love gluten-free cookbooks for baking, I've not been impressed with gluten-free cookbooks for meals. I've had the best luck by looking for regular recipes and substituting gluten-free ingredients. Open Original Shared Link has a fantastic recipe collection. -
ARCHIVED Pumpkin Pie "cupcakes"
emcmaster replied to Guhlia's topic in Gluten-Free Recipes & Cooking Tips
Wow, that's a lot of sugar! So I should make Vance's double strength and then simmer it with the sugar, stirring until it's dissolved? Sounds like a plan. -

ARCHIVED Could You Answer A Few Questions?
emcmaster replied to Gamecreature's topic in Coping with Celiac Disease
Hi there & welcome! I'm a rather newbie myself - only 6 months gluten-free - but this forum has been a LIFESAVER for me. Do yourself a favor and spend as much time as you can reading as many posts as you can. The people on here are wonderful and are so knowledgeable. It's going to take some time to recognize what makes you feel good and what bothers... -
ARCHIVED Help! I Need Brunch Ideas!
emcmaster replied to emcmaster's topic in Gluten-Free Recipes & Cooking Tips
6 kids? I admire you! When I was a full-time nanny, my 3 kids were hard! We don't have a Wild Oats here, but what is the brand you use? I'm trying to find a turkey sausage one that is lower in fat. Thanks, Laura! That's a great idea, too! -

CHOCOLATE SILK PUDDING 6 T. sugar 1/2 c. unsweetened cocoa 6 T. cornstarch pinch salt 3 c. cashew milk (almond, rice, soy or cow milk would work as well) 6 T. corn syrup (Karo light) 3 egg whites 1 T. vanilla extract 1. My parents are coming to stay with us for the first time this weekend. We already have dinner planned out, but I'm stumped on what to do for brunch. I'd like something that is pleasing to gluten eaters and that I might be able to eat as well. So, no dairy, soy, and I need to be able to modify it to be semi low-fat. I was thinking of doing french toast...

ARCHIVED Any Gluten Free/lactose Free Green Bean Casserole Recipes?
emcmaster replied to IrishKelly's topic in Gluten-Free Recipes & Cooking Tips
I have a recipe by Bette Hagman that uses powdered infant formula instead of nonfat dry milk for those who can't handle dairy at all. It has options for those who can't have soy either, like me. I've never tried it, but I'd be happy to pass along the recipe... -
ARCHIVED Lexapro - Anyone Had Problems With It?
emcmaster replied to emcmaster's topic in Gluten-Free Foods, Products, Shopping & Medications
Thanks for all the replies! I just wanted to let you all know that I didn't take it last night, so the last time I took it was approx. 48 hours ago... and I feel fine. No more horrible bloating or pain. I'm not sure WHY it did that to me, but I'm really glad I figured it out and stopped taking it. I was questioning whether it was just a bunch of random... -
ARCHIVED Lexapro - Anyone Had Problems With It?
emcmaster posted a topic in Gluten-Free Foods, Products, Shopping & Medications
I know it's gluten-free, but I've just put the pieces together tonight that since I started taking it last Wednesday night, I've been horribly bloated and had lots of stomach pain in the evenings, approx. 20 hours after I take the pill each night. I just read that common side effects are abdominal bloating (I look like I ate a basketball!) and pain. I... -
ARCHIVED A Question For The Veterans
emcmaster replied to emcmaster's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
A big thanks to all you who replied! I'm undiagnosed and am keeping my fingers crossed that this is it and that I won't go back to feeling badly all the time! -
ARCHIVED Vitamins
emcmaster replied to Anteau25's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I don't know about the damage issue - I'm self-diagnosed and had a colonoscopy in July 2005 that didn't return any results (he said everything looked normal)... however, I am pretty certain that the problems I've had since January 2004 can be attributed to celiac. As for the vitamin, I take Open Original Shared Link. It is free of all allergens and isn... -
ARCHIVED A Question For The Veterans
emcmaster replied to emcmaster's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Thank you for the replies! I suspected other intolerances, went on an elimination diet and still had the random bad days. I added back all the foods I suspected and most weeks, have 1 or 2 bad days a week unless I've for sure been glutened or consumed one of my other off-limits foods. It makes me feel a lot better to know that you were experiencing bad...
