Since you don't have answers I would not rule out B1 deficiency yet. Several days of high dose 100 mg or more will answer the question quickly. Either way a B1 supplement will be beneficial. Getting your vitamin D up to normal level around 80 ng/ml (200 nmol/L helps to moderate the autoimmune response. Most Celiacs and other autoimmune diseases are low to difficient in vitamin D. Welcome to the forum, Soy is made from soy beans and gluten is found in wheat, rye and barley. Perhaps you are confused because Soy Sauce is fermented wheat and soy mixture. You can get fermented Soy only. It is called Tamari Sauce. The brand I use is Certified Gluten Free. -

Agreement with trents and RMJ. In fact you should go hog wild on gluten until the endoscopy. The more damage the more likely they'll find it. It does'nt matter positive blood or endoscopy. Fair question. No to both and I don't believe confirmation bias is at issue. It works for me. It might work for others, so I share. Trying it has no irreversible effect and it is cheap. Hello Matt, You don't say how you were diagnosed, but I assume at your age it was verified by damage to your small intestine found by endoscopic visualization or biopsy. That needs to heal. Afterwards, you can experiment with ‘may contain’ and ‘made in a factory' foods. -
