thanks for all your answers!! it has definately eased my mind! but do i continue taking the acidopholous? the effects of D are definately starting. i barely could finish dinner before i had to go to the bathroom... (yuck!! sorry for TMI!) my dinner was gluten-free, my supplements are all gluten-free. do you suggest i continue taking them? the acidopholous is about a 30 day supply...do i finish the bottle? or only take it for 2 weeks? i decided on my own to take them because i hear how good they are for ppl with celiac disease.
A bit of D is normal for probiotics ... but you shouldn't be taking significant amounts of iron unless you are deficient... its the number one killer suppliment. (literally killer)

Yep, what I do in those instances is write the letter I want and then tear it up, having got it outa my system (the grrr ... not the gluten) then try and write a constructive letter.
However making it constructive is difficult enough, even after venting into the fake letter so I thiunk I'll prepare a ready letter and use that

This more or less says everything so I thought I'd just add my 2c to it....
1) After a Iga and Igg blood test, and a referral to a pediatric GI, what can I anticipate? We can't be seen until the end of March, so answers are nowhere near enough.It really depends. There isn't a really really standard process here. Most likely, they'll want to do a biopsy.
2) Is the intestinal villus test the "gold standard" for diagnosing Celiac, or are the blood tests enough of an answer that I shouldn't have to put her through the intestinal test?
Depends on the doctor. Most likely, they'll want the biopsy, though it's possible to test positive on the blood tests, negative on the biopsy, and still have celiac because the biopsy missed it.
3) Where can I find a definitve list of the foods to avoid, and assistance for label reading?
On the left of the screen is a site index link that will take you to the safe/unsafe list that is very helpful, but there is not *truely definitive* list. Things just are not black and whilte. And this board is a great help in label reading, but the biggest help is your phone in calling the company.
4) I have 3 other children. Do I de-gluten the whole house?
Your choice, but a lot of us find that to be easier. It depends on the kids, your resources, your current habits, and a number of things.
The biopsy or not is a personal choice and dependent on your MD and history... their knowledge of celiac disease etc. etc.
Its a mine field with no perfect answer... it depends if your present MD is up on it and if not if you want to educate him/her yourself or find one pre-educated... and even if your MD is willing to get educated...
5) How difficult is it to re-train your palate to heavier grains?Depends on what you eat now. I didn't make much of any changes, other than removing a few things. Brown rice was already my preference, and quinoa isn't heavy. If you only eat refined flour based products, it might be different.
I find it also depends what you eat with them.... the more adaptive you are to what you combine with the grains ... for instance if you try and recreate a wheat based dish its often dissapointing and doesn't hit the mark but if you start with an essentially gluten-free dish its not trying to compete with your memory...
6) Do you make your own flour mixes for baking use? Store-bought mixes are so expensive.Usually, though I generally go with a premade mix for pancakes so my husband will like it too.
My take is I just minimise the amount of replacement products.... when you are using them sparingly then the price is less important.
Some stuff just owrks better....meatloaf can be just as good IMHO because the gluten-free bread is already half stale...
I have a freind who after trying gluten-free meatloaf now buys gluten-free bread for her normal meatloaf ??? Also stuff that's heavily oil based like carrot cake seem to work better than normal "cakes"
7) How important is it to have breads or grains in her/our diet?Breads? Not at all. Grains? Eh... Only important if you don't know how to balance out the diet for what is provided by them. They are *not* essential, as their nutrients can be found elsewhere, often times more efficiently. But they're familiar. Vegetables and fruits can provide all the carbs and fiber you need.
I agree here, it really depends on how much effort you put into balancing the diet anyway....90% of Americans and Europeans don't ever think about this and have a poor diet anyway.. largely because we can afford to whereas in poor countires people are really struggling to get their nutrition and tend to think about it more.
8) Can the "fluffiness" of American baked products/breads be duplicated in any way?Not easily. But it's only one thing you eat right now... There are a lot of other things that can be had instead.
Yep sorry... in all honesty you will (re)educate your pallet but you will still be fighting memories
In some ways try and reconsider the question like "which type of cigarettes are best for me" its one of those things where once you realise you can enjoy other things instead it gets much easier...
10) Right now dinner consists of chicken and rice or tacos/taco salad. My kids are not very adventuresome and anything that doesn't look "right" to them they won't eat. I can't define "right" it is their whim. Someone always seems to refuse to eat dinner. Suggestions?Keep trying, keeping presenting them with new things, and keep them involved in helping them decide what new thing makes it to the table. Take variations on the theme that you've got and expand it - chicken and rice as a stir fry - then add a vegetable; taco salad, then add beans and other veggies, then go with a different meat. Etc. One-offs sort of thing.

Kids don't usually need a good reason for not liking something...in most caes they probably don't even try...
learning to appreciate stuff is something that never stops... I appreciate far more now than I used to even as an adult... and I guess I'll continue to learn to appreciate new things until my final breath...
What I would say from my own personal experience is anything that's fun to make... involve the kids in the prep ... and they have a preformed interest in the food... if you can make stuff like hash browns in faces etc. its all fun... and IMHO kids usually like doing stuff that's fun...
The more involved the better, as a kid I used to love berry picking in the fall... and then this led to working with the berries for crumbles or jams or whatever .. the same with fish, I was never a big fan but catching my own was different (obviously you can't do this everytime but once they get a taste you can buy the same fish, or frozen berries and restart the fun game from a bit further down the line)

Plenty of people here have had healthy kids before and after they learned they have celiac. It is much better to get pregnant after you have gone gluten-free because your body is so much healthier, but if you don't know you have the disease before you get pregnant there isn't much you can do about it. If you are going through testing now it would be wise to hold off getting pregnant until you have a good understanding of the diet. It takes a little while to get the hang of it, but it does get easier.
I went gluten-free in January and got pregnant in July and I have never had a regular cycle in my life. Please don't stress about it! You have a much better shot now that you know about celiac.
This really makes sense... going gluten-free is fraught with learning from your mistakes and this can put a big stress on your body... some people adapt really quickly and others longer ... so although Im not saying you should worry if it happens life would probably be easier and less stressful if you are already on top of the diet and not worrying about an accident hurting two people not one!

a lot of gluten-free breads work better if you heat them up - particularly in a (non-contaminated) toaster.
I used to eat a lot of sandwhiches, but have opted to go to other foods, as I just am not a fan of gluten-free breads (other than quick breads I make myself.)
Yep my view is most gluten-free breads are dissapointing,even the better ones ... so I find I'm dissapointed less by something designed to be gluten-free, whether its a corn tortilla wrap or a chickpea based middle eastern/Indian bread... the main thing I find is to try and eat something that is designed for that and your pre-expecations don't get disspointed...else its never quite what you remembered..

Hi all,
I am looking for a bread recipe that meets the following requirements:
- Gluten-free (obviously)
- No cane sugar, preferably no sweeteners at all but I'd be okay with a little agave nectar or something
- Preferably mostly whole grain
- Can be made without a bread machine
Does anyone have a recipe that meets these requirements? Many people have told me a yeast-based bread can't be made without sugar... But I don't believe this is true, I am pretty sure yeast can be activated by the carbs in the flour itself it just takes longer.
I am really craving some bread but I'm not eating sugar (or honey or maple syrup) right now for blood sugar reasons - Any recipes or suggestions would be much appreciated!
Its really irrelevant if you think about it because the starter sugar is consumed by the yeast... and regardless of the type of carbs it starts off with it has to break it down into sugars anyway... so you can bypass adding sugar but the yeast will break down the starches into sugars to digest them anyway..(it will just take longer).so if your concerned about the actual amount of carb's in total it really doesn't make any difference until your are adding sugar that won't be consumed by the yeast...(i.e making a sweetened bread)
That can be agave nectar if you want but the yeast see's it all the same as a mix of sugars and stuff which is useless for it.

Yeah, I was in a fast food restaurant once trying to explain to people who barely speak english that I couldn't eat wheat, they didn't know what wheat was, so another worker interpreted and they STILL didn't know what wheat was. *sigh* And they let people who don't even know what food is made out of vote and operate heavy machinery?
Unfortunately this seems to be the trend, along with the fact that its becoming increasingly "cool" to be ignorant?
Sometimes I wish Newton had not made his "standing on the shoulders of giants" quote (you can just google for the whole thing) ...
but I guess we have to accept that most people have no wish to know how most of the things around them and that they use everyday work or how they are manufactured.
I find it equally mind boggling that people use a car without understanding how an internal combustion engine works or watch TV without understanding how it works...
I guess food should be different, afterall we are putting it into our bodies but some people see provision of food as some-one-elses problem.

ditto! a great idea. i have been very frustrated several times w/ dining experiences, and unsure about how to express this to the restaurants.
Yep, I guess its better to have a letter pre-written because after glutening it can be a little hard to put things constructively.

I'd really not want to get into details but I loathe Christmas .... from my times as a child where XMAS meant everyone else laughing because we couldn't afford the same must-have-latest toy to my mum being ill most years through not eating in order to save up to buy the stupid presents that everyone at school would make fun of... of course I didn't realise my mom wasn't eating back then...
Now I just see XMAS as a HUGE waste.... It disgusts me to see people buying presents merely fort the sake of it... and because its expected when most of the presents will be cast away into bins etc. and while over 75% of the world still has no clean drinking water...

Yep I honestly haven't seen so much gluten-free food ANYWHERE before.....
The only problem is seperating the 'wheat from the chaf' so to speak.... in that lots of places say gluten-free but obviously mean low gluten-free or lower risk...
We walked a good few miles yesterday to get to a cafe which advertised gluten-free and then after they guy proudly went what was gluten-free and what isn't he dropped cous-cous all over one of the supposed gluten-free dishes in the display (as far as Im concerned they shouldn't be in the same cabinet but thats another story) anyway, its hard to tell if Im being reglutened or its just the hangover from the plane journey where I had to give in and eat... (52 hours and NO food or liquids allowed on plane) so I gave in in Saigon...
Anyway it seems mainly intestinal so just stomach cramps and the brain fog isn't too bad...but really looking forwards to not stopping with well meaning relatives

I hear ya. I got so many different opinions on where I should go (but mostly, "it's too hot there, or it's too cold there..or you'll get eaten by a croc there." lol just go everywhere you can...It's all GREAT you can't lose (but do prepare for heat and intoxicated backpacker crowds in Queensland lol).

I was even told I'd be lost without a car but the trains seem to work pretty good round Melbourne.... and you can always WALK which seems so obvious ... funny thing I asked a jogger for directions to a Mall only a few miles away and she said why do you want to walk when you can get a train???? (actualkly 2 trains so it was probably still quicker to walk but seemed especially strange coming from a jogger?)
That's the plan ... need a car though! Buying one is easy enough and presuming I don't mind loosing a bit I don't see why it wopuld be hard to sell (and 2 weeks hire is $1000 so if I buy a car for 2000-3000 and sell it 1000 less ???)Make sure you see Great Ocean Road if you haven't already. I did the entire East Coast and that by far was the most beautiful sight on the mainland in my opinion.

BRRRRTasmania was my favorite place by far, but Victoria is beautiful as well.In terms of food in Melbourne, I found the organic section of the Queen Victoria Markets to be quite nice (yet really expensive) and there was a great cafe called Sustenance on Brunswick St. in Fitzroy that I also really enjoyed.There seem lots of places, awareness seems HIGH but actual GFness low ???
For instance they told me some smoothies were gluten-free then I noticed they had used the same blender for non gluten-free stuff...??? so Im a bit cautious....

Everyone I mention it too seems to think Im nuts.... why not fly? Why would you want to go there?
In the end it was settled for me, I left my credit card at home (I only have one actual CREDIT) card the rest are debit cards and the card is sat at home next to my PC from booking the hotels for New Year.... and after bringing my liscense etc. it seems I can't hire a car without a credit card.
Very weird but it seems pretty much universal here.... ?? along with needing to send a fax to confirm internet bookings ?? and my debit cards not working in shops, only ATM's... and banks... all very weird... I went to the bank and asked for $20,000 and they asked me WHY I wanted it? Erm because no where accepts my card ????
So it looks like if we make the trip Ill have to buy a car (which is OK they seem pretty cheap here) so long as they will actually sell them for cash...??? (hence me wanting to get a decent amount of money out to buy a 2nd hand car we can just sell to a dealer at the other end)
On the plus side the gluten free stuff is everywhere.... found a great new gluten-free resto yesterday... Ill post its only open a couple of weeks. Tried the silly yak cafe Ill try and make a longer post since there doesn't seem much here on Melbourne itself...

.. and no its still the same dangeous and misleading advice.
Just to be clear here, whisky is NOT made from beer. It's a separate process entirely, and whiskey should be gluten-free. For many years, it was believed that we could not drink any alcohol made from grains. But standard literature -- including on this site -- says that Scotch and whiskeys are gluten-free in the final product. I wrote a post about this on my website back in December, and I have been drinking Scotch since then. I'm VERY sensitive to gluten, but I haven't had a problem with Scotch at all.Ah and that was real scotch or some immitation? I really can't be bothered finding links but many of the distilleries actually SAY its not gluten-free... Scotch especially doesn't help if its top shelf because the top shelf scotches add back the mash.
grain vodka as someone pointed out... all depends on what you mean by gluten-free and how many times its distilled.
Plenty of non grain based alcohols add coloring based on cereals... several cognacs do this.
Domestic Wine is better than foriegn brands because other countries boost the alcohol content with grain.Is almost laughable.... No Italian or French certified wine could do that without the producer loosing thier lisense and imprisonment...
So nothing has changed .... I might look back in a few months... ?

I am asymptomatic when it comes to ingesting gluten. My doctor told me that I have it to such a mild degree that I could afford to cheat once a week.
Let me reinterpret that....
At the time they did the biopsy ......
as you get older and your regenerative ability drops off then I would predict that this will change....
However that is only considering the damage to the villi which incidentally takes 4-6 weeks to repair.
In other words your body will be constantly stressing itself even though your villi do keep repairing....
The really nasty part though is what happens when you pass this point....
It can be through other illness or accident that your body fails to keep up because its going full out fighting an infection or repairing a burn or.....
The danger then is you plunge into total villi destruction very quickly and you never really 100% recover.
This is unfortunately the situation of many of the members here who for one reason or another were not diagnosed before the situation became critical and too late. The huge danger at this point is it becomes so damaged it sets off other intolerances like soy or milk.... and the whole mess takes months to even get back on track and for some people, especially older ones it never repairs.
Much as that is true I think its a seperate issue.....But he also said that as human nature goes that once a week would turn into twice a week, which would turn into three times a week, and eventually I wouldn't be on the diet at all. He told me that I do not have to be extreme about it, but that I do need to try to be 100% gluten-free, b/c in reality that's impossible........
I am like you though in the fact that I wish I would get symptoms from eating gluten...that way I would definitly not be tempted in the future (like i know i will be) and I would know for sure if I accidentaly ingested gluten.Maybe you just need to find good substitutes for the things you find yourself cheating on and that might help. Getting rid of the temptation in your home might help as well; I know it did for me the first few weeks....I made sure there was no real bread or real sweets that contained gluten. Especially the sweets for me b/c thats my weak spot.

Be careful what you wish for, it might come true!
But seriously you are really spot on in removing those items completely from your life... the same goes for the supermarket ... I just miss out those aisles...
But also you should look into "other symptoms" .... I would really expect you will find you actually have some if you do go 100% gluten-free ... which means no CC and no risky items....
So many of us here who have done this only realise we had the symptoms ehen they go away because they crept up on us so slowly....
Even if you can "cheat" without any consequences its really a case of 3 steps forwards and 2 steps backwards..... and its just waiting for that time when for one reason or another you go to 3 steps forwards and 4 backwards.... and once that happens you stop adsorbing nutrients and so it quickly becomes 3 steps forwards and 10 backwards ....
The only way i know anyone convinces themselves of this is by doing it.... I'd really love to be able to take what I learned through experience and give it to you in a bottle.... but ...

Well as I've stated before I have to eat ALOT of gluten to get ill and in the last few years was I have been basically being eating as much possible without getting D.
I have been so good for about the last 3 weeks, I have not had any bread etc. I still may have head little bits in youghurts and stuff and I don't strees about what is in my sauce etc. I'm really trying to stay away from the bread and major stuff because I do seem feel better (but Im not sure if this is a mental thing)
Anyway basically what I want to know is how often do those of you who can cheat, cheat?
I would really like to know if I'm the only one who cheats.
I sometimes wish that I would get sick if I ate a piece of just one piece of bread, I find it hard to not have it because "it doesn't hurt me" ( And yes I am aware that it can "hurt" me later in life even though it doesn't now)
Also, not that I think this would happen but I'm going to say it anyway: Please don't go attacking people for going overboard etc (If their is actaully any of you out there).
Even if you don't cheat now but went through periods in the past I would like to know, Itd be nice to not to feel like I'm not only who has a bit bad
Your problem with cheating is like trying to cut out tobacco by reducing the number of cigs per day....
gluten is addictive and every time you ingest it you start the whole cycle again....
Different people find different things addictive....
The founder of AA died from smoking .... think about that for a second.... many recovered hard drug addicts still can't quit smoking etc. even though they had the will power to quit heroine or cocaine???
I personally could never be an alcoholic ... I have been a very heavy drinker at times and for no health reason at all just quit. That is I have been working in dry countires or on oil rigs and I don't even think twice about alcohol.... yet at times I have been drinking a bottle or more of hard liquor a day.... and my withdrawal effects have been unnoticable....just from one day to the next.
Quiting smoking was 100x or 1000x harder for ME.... I never tried hard drugs so I can't comment....but obviously it all depends in the person. Like another poster I think you just happen to be one of the people who finds gluten harder to give up....
The absolute worse thing you can do for this is keep ingesting it because that is how addiction actually works...
Addiction is not about the drug.. its about the withdrawal.... and the fact that the drug is what you "need" to prevent the discomfort caused by withdrawal... its a cycle.
Everytime you give in you reset your withdrawal.... and you have to do it all again, like a ex-smoker trying to have 3 cigs a day... it doesn't work.
I would really like to know if I'm the only one who cheats.Not at all though this board has you in a minority.... however there are hundreds of thousands of diagnosed celiacs who simply convince themselves they are better....I had someone tell me the other day her sister used to be celiac...
Obviously she still is, she just denies it because as my signature says .....

Symptoms wise.... well you are a perfect example of how different people react.
I tested negative for celiac, but apparently there is something called "gluten intolerance" which is not as severe as celiac and the symptoms are more benign/subtleThis is a well debated issue, my OPINION is there are celiacs and latent celiacs ... you are either celiac or not and people react vastly differently BUT IMVHO if someone is reacting to gluten they are celiac, we just don't understand the mechanisms well enough and rely instead on a diagnostic on a single symptom which is the biopsy. This is changing though in favor of blood tests and now the enterolab stool tests and the main idea of both of these is catching the disease before it does any further damage.
Sure the intestines are important but it is proven that celaics also get many other non-GI symptoms...

Again its just my belief here (with a lot of research) that those who do not have intestinal damage are just in a phase of the syndrome where their bodies natural recuperative powers can repait the villi as fast as being destroyed. This doesn't help the immune system which is in effect running in overdrive 24x7 NOR does it stop the enforced cell replication increasing cancer risks .. it just means the villi are being repaired faster than destroyed.
At the same time people can also have positive biopsy but have expressed no GI symptoms... that is their villi are completely destroyed yet they don't report diarrea or cramps... perhaps theere is also a bit of the gradual onset here whereby you start to think its normal to have D every so often.
Unless you are a sexually active homosexual male or a nursing mother or exposed to nursing kids then the normal incidence of D is less than 4 times a year. Even if you are in a high risk group its less than 6....Your obviously not a nursing mother, you don't mention kids and your sex life is noones business than your own so these are just guidlines on normal incidence of diarrea...in other words most celiacs don't realise this.. we get used to having diarrea from time to time and think its normal...
With that knowledge you can perhaps work out if you have D more than the normal incidence....
If you do then the medical community will blame IBS.... in other words, they don't have a clue so they will just class you with other people who they don't have a clue about either.
However and this is important a very significant percentage of IBS sufferers test +ve for celiac disease.
Still others have soy or dairy intolerances. In other words IBS is Interesting BS..(fill in the missing letters) .. it doesn't really exist except for a way of classing a whole set of people with different not understood or diagnosed digestive disorders together.
So where does this leave you.....
Firstly if you have insurance get a blood test immediately ... you need to be actively eating gluten for the antibody tests and you should get a FULL PANEL....
A complete celiac panel includes the following tests:antigliadin IgA and IgG (indicates gluten sensitivity)
anti-tTG and/or anti-endomysial
total serum IgA (rules out IgA deficiency)
anti-reticulin IgA

Whatever the results you can then decide from there BUT if you do remove gluten for a while and you do feel a new person then believe me the last thing you will want to do is go back....
Now onto survival:
As everyone has said, its really not THAT hard.
People tend to find it hard because their normal convenience food is wheat based but lots of convenience snacks exist... you can have sushi for instance (just take a small bottle of gluten-free soy sauce - I use the little cosmetics bottles that body shop sell ofr shampoo samples or you can buy similar from travel boutiques)
I can't say it will be as easy as picking up a sandwich or pizza but it is not so hard as you feel.

Wow thanks everyone for responding so fast. I just checked out the enterolab website and it looks like it can't hurt. Yes, I have tried the gluten free diet - I can only manage about 3 days at a time, it SEEMS like I felt a little more "steady" I guess after about 3 days, but my mood was bad - beyond irritable I would say more like simmering rage. So to counteract this depressed rage-filled mood I would give in and get myself a delicious turkey sandwich a bran muffin and a few bottles of Guinness! the rage was gone and I felt relieved. I would tell myself this gluten thing is in my head. But then a couple of days later sure enough I would start feeling like crap again. I guess I have to give it more than 3 days, huh? I live in NYC in the entertainment biz and having to find gluten free food on the go is a MAJOR PAIN. Gluten free for life would be a major pain - no eating out, no convenience eating, meal planning every day. for example, dates are restricted to starbucks or a bar - no dinner. As far as asking chefs if the meal is gluten free, forget it - you can't trust that. But there are worse things. Maybe diabetes is worse - although I don't know. Diabetics can eat crusty italian bread.

No but its hard to answer it without saying that.....
I can eat a whole pizza and be fine for a few hours.. sometimes till the next day.... OR I can get a crumb in CC and react in 1 hour.....
As I said earlier you need to define what you mean by symptoms..... (probably as much to yourself) ...
What I am trying to say is it may give you symptoms you just fail to recognose.... especially if you have not be gluten-free-gluten-free but more gluten-free-lite (i.e. you are still getting CC)

I really just wanted to point out that the title of the thread (while a nice idea) is probably going to get a lot of people just ignoring it....
I already presumed what the title of the thread meant.... but honestly I doubt I'm the only one...

Okay, going out on a limb here cuz I'm pretty well at my wit's end and fed up.
I think what Lisa was trying to attempt to do was lighten the mood a little bit,
and I was just pouinting out that the threads title wasn't conducive to that though of course she'll never see that if Im on the ignore list.
I saw the TITLE of the thread and just added it to my mental list of threads to ignore stirring up trouble (which obviously wasn't the intent) but Im pretty sick of these constant threads anyway... so I just presumed it would be another of those threads.
Since momma goose never seems to read anything I post I presume I am on her ignore list so I figured there is no point even saying anything .... (which I seem to be doing a lot of lately since so many people think its rude to correct people who post erronius facts, I just don't bother)
Come to think of it why am I bothering with this???
