ARCHIVED What Would You Have Done?
GFBetsy replied to cmzirkelbach's topic in Parents, Friends and Loved Ones of Celiacs
I don't know. I once spoke to a lady in the fabric store. She was standing in line behind me, and was accompanied by her 2 sons. I could tell that one was older than the other, but only because he was marginally taller. He looked like a walking skeleton. You could see all the bones in his elbow, his cheekbones stuck out and you could see his jaw-bone... -

Totally agree! Loved the way you explained it. -

Just thought it was funny that the thread became more religious AFTER the comment by "the athiest"! -
ARCHIVED Any Really Good Cake Recipes?
GFBetsy replied to momandgirls's topic in Gluten-Free Recipes & Cooking Tips
Kendra - I'm so glad you like it! I love sharing recipes that taste good! Dionnek - I use white rice flour, but I don't think there's much problem with using brown instead. (Except that the brown tends to spoil faster because of the higher fat content (according to Bette Hagman).) So if you want to use brown rice flour, just make a smaller... -

ARCHIVED Shocking Story #2
GFBetsy replied to concerned-mom061's topic in Parents, Friends and Loved Ones of Celiacs
Wonderful! -
That would certainly draw people in. After all, when all you are trying to do is help your children be healthy, it is heartbreaking to be accused of child abuse instead. And it could happen to anyone who is trying to find answers that the medical community can't seem to supply.

ARCHIVED Doctor Says I'm Nuts!
GFBetsy replied to hannahsue01's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
By the way, another sign of anemia is a desire to chew ice, suck on rocks, eat dirt, or just stand around smelling laundry detergent all day long. It's called pica. My mom had it, and she says that the weirdest effect of going gluten free is that she no longer wants to chew ice. She always thought that she "Just liked to" eat ice, but since she went gluten... -
ARCHIVED Urgent - Need Advice Regarding Pregnancy Symptoms
GFBetsy replied to High-Tech Mom's topic in Related Issues & Disorders
Hey, High-Tech, I hope that you can get some answers . . . I'm glad that you were able to get your family doc to look into things. And hey, at least you know which ob/gyn you don't want to go to next time! Betsy -
ARCHIVED Contractions Or Just Really Bad D?
GFBetsy replied to Melzo's topic in Related Issues & Disorders
Actually, with my first, I thought I had a really bad case of food poisoning. I kept asking my husband: Don't you feel awful? I feel awful. You're going to be getting this any time now! Of course, he never did I think the reason I was so confused was that it all came on so fast - After only an hour and a quarter, I was at an 8. But my contractions... -
It sounds like celiac to me. It also sounds like you may have a thyroid problem, too, though. Which wouldn't be surprising as celiac can cause thyroid problems. If you don't have insurance, though, I'd bag the MRI idea, especially if they won't tell you what it's for. Explain to them that you are on a VERY limited budget and that you simply can't afford...

ARCHIVED Just Got Bad News
GFBetsy replied to Nikki2003's topic in Parents, Friends and Loved Ones of Celiacs
Out of curiosity, was she doing poorly prior to the last month or two? And has she been more gluten free during the past month as a result of nicole's diagnosis? If the answer to the second question is "yes", that might explain some of the recent improvements. -
ARCHIVED Shocking Story #2
GFBetsy replied to concerned-mom061's topic in Parents, Friends and Loved Ones of Celiacs
I agree. Do what the courts ask as far as evaluations/etc. to show your fitness, but make sure your expert witnesses and lawyers know everything they need to know in order to show that the "expert witnesses" on the other side are simply people, too, and people who have made a mistake this time. -
ARCHIVED Shocking Story #2
GFBetsy replied to concerned-mom061's topic in Parents, Friends and Loved Ones of Celiacs
Just wanted to note that the child HAS been tested for celiac, and darned if the dang test didn't come back positive! That means that, even though there is a clinical diagnosis that accounts for most (if not all) of this child's symptoms, the mother is still being accused of deliberately making her child ill. One of the most definitive determinants of Munchausen... -
This has not much to do with Oprah, but from all I've read, eating disorders such as anorexia and bulemia are associated with obsessive compulsive disorder, which is an anxiety disorder. Now, haven't I heard something about anxiety being caused by celiac? I'm sure I've read that somewhere . . . (Or should I say "everywhere".) So eating disorders may...

Do you know what helps me clean up? If I keep a full sink of dish water available while I'm cooking. (Not the sink with the disposal, though, because I use that while I cook.) Then it's so much easier to drop a dish in the water and clean it up. Things come clean so much faster when they've just barely become dirty!

I understand that pre-Thanksgiving bash is a lot of fun. I've never gone, because I'm down in Orem, but I've heard people rave about it.

Nancym - That Seattle PI article was enlightening (for lack of a better word . . . great/wonderful doesn't seem appropriate on such a serious subject). Thanks for the link. -
ARCHIVED Keeping Bread Fresh
GFBetsy replied to TinkerbellSwt's topic in Gluten-Free Recipes & Cooking Tips
I've found that the breads are best if you slice and then refrigerate or freeze them (in a ziplock or similar bag) within an hour or so after they come out of the oven. Then reheat the number of slices you want in the microwave for 10 to 30 seconds. That softens it up again. -
ARCHIVED Urgent - Need Advice Regarding Pregnancy Symptoms
GFBetsy replied to High-Tech Mom's topic in Related Issues & Disorders
This is just a "for what it's worth" kind of post. I don't have any medical background or even personal experience with the kind of pain you are talking about. I do have a friend, however, who suffered from excessive vomiting during her first 4 pregnancies. She also had a lot of stomach pains which she associated with milk consumption while she wasn't... -
ARCHIVED Any Really Good Cake Recipes?
GFBetsy replied to momandgirls's topic in Gluten-Free Recipes & Cooking Tips
This is a great chocolate cake. No one can ever tell it's gluten-free. The gluten-free mix called for is Bette Hagman's mix (6c. rice, 2 c. potato starch, 1 c. tapioca starch) Gluten Free Chocolate Cake with Cream Cheese Frosting 1 3/4 c. gluten-free flour 1/2 tsp. xanthan gum 2 c. sugar 3/4 c. cocoa 1 1/2 tsp. baking soda 1 1/2 tsp. baking... -
I'm pretty sure we're doing an alfredo sauce. I'll have to check with my teaching partner. As for those yellow squash, if you pick them young enough, you can slice them thin and add them to regular spaghetti sauce. Or you can boil the slices with frozen broccoli and baby carrots. Yum! I wish my garden hadn't died while I was on vacation!

ARCHIVED Your Favorite Gluten Free Dinner Idea...
GFBetsy replied to a topic in Gluten-Free Recipes & Cooking Tips
Here's that taco soup recipe . . . my kids love it! And it's SO fast. Taco Soup 1 lb. hamburger 1 small onion, chopped 16 oz. bag of frozen corn (or two cans of corn, undrained) 2 8 oz. cans tomato sauce 1 14 oz. can diced tomatoes 2 cans pinto beans, drained & rinsed 2 c. beef broth 4 oz. can diced green chilies 1 can refried beans... -
Sweetfudge - If you bring your own rolls, stuffing, and pie, you ought to be okay (as long as the bird was cooked w/out stuffing inside). It sounds like a lot of work, but you can make bread/rolls the day (or week) before, freeze your rolls, and make dry bread cubes for the stuffing. Then the only things you have to do the day of the get together is...
