Hi, I'm sure this has been asked already but I don't get on too often. What is the deal with Wheat Starch in foods? Is it safe for us or not? I noticed that alot of previously safe food have now added this but do not claim the wheat in the allergen label.

I emailed the Mayo also because I doctor there in the Celiac Clinic with Dr J Murray. He told me to stay away from as many gluten containing products as possible. I wonder if he was one of the specialists consulted for this answer?

Just to let you know... Until the intestines are healing you probably won't gain weight. I can tell you from personal experience that the weight will come back and then some. As the villi come back more and more nutrients will be absorbed along with carbs and fat. It can take up to 2 years for the intestines to fully heal depending on the amount of damage...

What do you guys use for the stuffing. We tried it with tapioca bread, baked in oven etc etc. I thought it was horrible. Is there a premade bread to use for making stuffing? thanks! -
Try taking acidophilis, bifidus, and lactobillis. Available at Wal-mart or any health food store. I know you tested negative for celiac so you should be using your time to find out what is really going on. Many diseases and symptoms can look like celiac. You really need to look at the whole picture.

I know this is the one of the worst diagnosis ever. Just as you get one thing working right another shuts down. Your symptoms sound like extreme vitamin defenciencies to me. Since you have been gluten free for only 2 months you could not possible be gaining the nutrients you need yet. I hate to say it but it may take up to a year or more for your digestion...

I definately agree with getting an EKG and cardiac labs done. If that turns out okay you may want to get your vitamin levels checked. D, C, and thiamin can cause atypical chest pain also. If these levels are low then your heart is working way to hard giving you syptoms of angina. Hope this helps.

I too struggled with this until my internal med dr checked my vitamin D levels (all of them) and my vitamin C level. Both were dangerously low. I was prescribed 50000 units of D3 for 8 weeks. and 2000 of C. Felt much better. Now I know when I start getting the same feeling in my legs and arms to up my vitamin D and C. Especially now that it is winter...

I just spoke with the Mayo Clinic (I doctor with Murray) and they are doing the trials right now. In fact this is the 2nd phase of trials they are doing. I am not able to do the trial because I only quit smoking a week ago and you have to be quit for 6months or longer. Also your BMI must be between 18.5 and 38, no alcohol for 48 hours before the tests... -

I think I eat enough fat? I am having problems with gallbladder and pancreas and have noticed bms are very different than when I get glutened. Like I said I eat alot of veggies and lean meats so maybe I am not eating enough. Though the fact I haven't lost anymore weight is frustrating. I am going to be going in this week for iron inffusions. I was really hoping they would work and I would feel alittle better. I wonder if there isn't some bleeding going on somewhere in your body that is causing this. What is the rest of your bloodwork like? I am dealing with extremely low levels of iron, D and C (scurvy). -

All of this is happening despite having healed intentines. My last biopsy came back okay according to the GI dr. I am already taking a vita D supplement although now it is prescription and at very high doses. Taking vitamins will affect the results because if you need them you need them. I was taking all the necessary vitamins and am still showing up... -

Hi and welcome, I would have your doctor check the following levels - Vitamin D Vitamin B (all of them) Vitamin C Iron Folate Phosphorous Calcium Due to the fact you were diagnosed later in life severe malabsorption would cause your body to not be able to get these from your diet. Thank you for your replies. It completely breaks my heart to see them suffering so much. I didn't want to take them gluten free in case it could actually trigger the disease.
