Did they do a total serum IgA in addition to the celiac blood test? If your IgA levels are low this could cause a false negative. You could ask for a repeat blood test including the total IgA. Are your iron levels low? You mentioned feeling very tired. Suzie -

I have found some fun pasta shapes made by Tinkyada. I'd like to be able to make something that would be similar to Alphaghetti for my kids, but I don't know what to use for the sauce. Thanks for the oyster sauce brands... we'll have to check them out. It would be nice to have this ingredient again. I'm going to try that salmon recipe soon- we just got some maple syrup at the sugar bush this weekend. I love salmon, but my kids usually don't like it much- however, the maple syrup might make it more appealing to them. -

I'm planning to try Carol Fenster's pizza crust recipe. I've seen it in a couple of my gluten-free cookbooks. It uses a bean flour (garbanzo and fava bean)- Bob's Red Mill makes this product and I've noticed that they have her pizza crust recipe printed on the package. I havn't tried it yet myself. Suzie -

I've used teff flour (available from Bob's Red Mill and also from the Teff Company) for apple pies and also pumpkin pie. The consistency of the pie crust is a little bit like a graham craker crumb base. It might work to bake an unfilled pie crust (made from teff flour) and then crumble it. Most testing for celiac disease requires the person to still be consuming gluten, otherwise the results will not be valid. I was going to ask this question too. Do you know which tests were included in the panel you had done? If they did an anti-gliadin antibody test only than that is not the recommended blood screening test for celiac disease. Anti-EMA or tTG would be much better. It sounds like it could be due to celiac disease- one symptom of celiac disease is dental enamel hypoplasia. I wonder of malformed teeth is related to that as well? I feel exactly the same way you do. My mom was so sick last year, and has had typical symptoms for awhile, and still no one considered testing for celiac disease, not ever her GI.
