  1. My kitchen resembles many others' gluten-free kitchens. I do not keep any gluten flours or other gluten baking/cooking items in my house. This way, I know that my kitchen is "gluten-free" as much as possible. My hubby still has his store-bought bread (which he keeps in a separate bread box). He also still has his cookies, chips, etc. containing gluten...
  2. Thank you both for responding! Some days are definitely easier than others...which is true for everyone. I'm fighting multiple battles with my health. Some days I win, and some I lose. But, such is life. Because I am not a candidate for brain surgery, I just have to wait to see what new developments unfold from medical research. I am grateful...
  3. HA! We need to keep that quote in context... My mother always told me, "we're not cheap, we're thrifty." Well, it looks like several of us are "thrifty" Janet, by the way, I love your quote by Mother Teresa! Blessings. -Julie
  4. Colleen, Thank you so much! I had no idea if it was even a reasonable thought. I've never used a cooking thermometer before (besides, of course, the oven temperature setting). I'm grateful I got a response to this question! -Julie
  5. Hi everyone, My mother purchased two different thermometers for me. I don't know if anyone does this, but I want to test the temperature of my bread in the middle to see if it heated through. I am tired of slicing up a beautiful loaf of homemade bread (after it cools of course), only to find out the middle didn't bake! So, I have several questions...
  6. Well mamaw, You are not the only cheapo! I did the same thing with many of my better plastics, some I threw out (the ones with cracks or grooves in them), and the others I simply bleached and scalded clean. Of course, we are on a very limited budget, so I did the best I could...maybe I should have thrown all of them out. -Julie
  7. Hi Lisa, I found the info. for the deep fryer I use; it is a Presto Kitchen Kettle. Found at Wal-Mart type department stores. It costs around $25 dollars. It is one-step-up from the basic fry daddy type (we had one of those a few years ago). This one looks like a medium size pot with a glass lid and a black nonstick surface inside and out, it...
  8. Oh, my goodness...no need to spend a hundred dollars unless you are planning on doing some SERIOUS deep frying for most of your meals. My mother gave me one for Christmas that cost $50 and was to complicated for me to figure out! (Ten years of college and three college degrees later...I can't figure out how to work a freakin' deep fryer). Sooooo...I...
  9. Honestly, I think my "jinxed" period may be over! After countless kitchen "flops" (translated: large messes) last week, I finally made something edible. Dare I say, good? I used the web link and recipe in KBabe's post about yummy cupcakes/icing. I wanted to reduce the calories, so I made a few changes in the link's recipe. And they were so...
  10. Thanks for the suggestion! I rarely buy premade mixes because of the expense, but occasionally our local Kroger will put them on sale (say, if they will expire soon) and I will get them then. So, it's good to know what to do with any extra mix I may have left over! Happy Baking. -Julie
  11. Good info.! I'll place it on my "other appliance/gadgets to buy" list. I'm slowly amassing all kinds of stuff. I REALLY want some good flour tortillas. Hey, but I found out the other day I really like the corn tortillas better if I toast them. I ended up making mini pizzas. It wasn't delicious, but it was lunch (and I could do it before the baby...
  12. Hi ladies, I will have to give those donuts a try! Currently, I'm flat-butt broke, but when/if our house ever sells, I'll be able to "splurge" a little again. Oh, well....a woman can dream. -Julie (currently craving donuts, but afraid to try to make them after this weeks pretzel blowout)
  13. I tried to make "flour" tortillas. I almost never got that pan clean. Anyone surprised? If you find a recipe that is fairly simple and you try it and succeed, please let me know. -Julie
  14. HA! Maybe we'll all end up gluten-free baking geniouses! Although, after my blow-out of dough all over the counter and walls this week, I've decided I'm a slow learner. Julie
  15. Oh....Yummmy, yummmy, yummmy, yummmy! I'm definitely printing this one! Hey, did you read the oyster sauce post on the Food Ingredients Forum? I voiced my love of Spring Rolls, but just in case you didn't read it; it went something like this: I LOVE SPRING ROLLS!!!!!! Anyway, this is awesome. Thanks for the recipe! Julie
  16. Julie, What mix do you use? Hey Cheri...that bread does look good...wanna share??? -Julie
  17. Hi, I strongly recommend the book "Special Diet Solutions" by Carol Fenster. With every recipe, she offers substitutions/alternatives to sugar, gluten, milk, eggs, and nuts. I use this cooksbook so much that one of the pages fell out the other day! It would also give more baking options since your son has diabetes as well! This book is...
  18. No, I have not tried those, I'm writing down what it's called so I can look for them! Thanks!
  19. Glad, if nothing else positive came out of my fiasco, that at least I provided a smile to those who can empathize with me. I will remember your tip Tiffany. Patti and Bellyfat, Ha! thank you for your stories. Oh, dear, sweet Patti, another woman of excellence in all of your baking attempts... Good for you for getting that stinkin...
  20. I followed your link to the cupcakes and printed out your icing recipe...I am going to use the pudding suggestion as well! I want to make them tonight! However, I have had a traumatic day in the kitchen today, and I think it's safer for everyone if I just stay out of it. There are two recipes posted this week on the forum I REALLY want...
  21. O.K. people...I've just had "one of those days" in the kitchen. I bought a bag of Ener-G pretzels for two dollars locally the other day. They were so good I thought, "I'll bake some pretzels of my own. It'll be more affordable in the long-run." I mixed the dough, and placed it in a Ziploc bag with the bottom corner clipped off so that I could...
  22. I'm so glad I read this thread! I just printed off a recipe yesterday for Thai "cashew nut shrimp" on another site...oh my gosh, I could eat Thai food everyday....and I was missing my veggie spring rolls so much. I'm going to gather all the ingredients I need....just gotta find a store that sells them first. Anyway, my mouth is watering for my favorite...
  23. Heeeeheeeheee Thank you so much for the help and the laugh! This thread will be of much use in the future when I understand things a little better. For now, I'm waiting on that bell to ding in my brain. I would say that I'm waiting on that "light to turn on" in my head, but the light bulb went out years ago. Happy cooking! Julie
  24. I meant to tell you the other day that I printed this out; it sounds so good and looks so easy to make. Thank you for posting it! Julie
  25. Melmak, I love your packman demonstration! RSM, I'll take a plate-full of poison ivy please....to go...sprinkled with wheat crumbs! Loco lady, I'm sure you know that, technically, celiac isn't an allergy. However, if the person I'm speaking with "can't get the concept"...I've been known to say "allergy" a time or two myself...especially...
