  1. I also enjoy the "natural" peanut butter (the oil rises to the top). I found it at my local grocery store (Kroger) in their health food section. It is expensive, but VERY good. They also make other nut-butters "natural." I haven't tried them, but for people allergic to peanuts, it's an option. I don't eat a lot of pb so, when I buy a jar, it lasts awhile...
  2. Uggghhh. So sorry you had to go through that...we've all been there (or at least I have). Pizza and cake together is such a temptation, but I'm glad you avoided it. Your mood probably stinks today because you felt so left-out yesterday. Sometimes I put a candy stash in my purse so that when everyone else is eating cake, I can also satisfy my sweet-tooth...
  3. Thank you, Gemini, for clearing that up for me. My husband is at the store now...I'll call him! (the beauty of technology) -Julie
  4. Oddly enough...my favorite noodles are white rice noodles by Ener-G. I actually dislike most of what Ener-G sells. I guess I like these noodles simply because you can't taste them when you poor the sauce over them. Sounds like strange logic, but I got tired of purchasing other noodles only to find that they changed the taste of my spaghetti. I do...
  5. Thank you so much for the recipe and links! I've purchased 2 types of Kinnikinnick's donuts and wasn't that impressed. I'm not sure I'll do any better, but I've already got the ingredients on-hand so at least it'll be cheaper! Question though: what is caster sugar? Is it easy to find? Thanks again. -Julie
  6. Hi everyone, O.k....I know donuts are not nutritious, and I have a recipe for baked gluten-free donuts. But I want to go all the way, as high fat and calorie as I can get......I want 'um FRIED. I would also like them not to be too "bready." So, anyone out there with a sweet tooth like me and a recipe to satisfy my VERY unhealthy craving? ...
  7. I agree with NewGFMom. Do you have any kind of health food store near you? I live outside any metro. area and managed to find a little hole-in-the-wall vitamin supplment/health food store (it's in a small shopping plaza...that tells you how tiny it is). Anyway, the lady in there is really nice and happy for the business. She only has one wall with...
  8. What a great idea! I do batter and deep fry a couple of times a month (I received the easiest deep fryer for Christmas, and I really enjoy using it). My hubby and I buy frozen unbattered okra and squash and deep fry it using my own simple gluten-free batter. UMMMM, tasty! I'm going to try the onion rings and batter ingredients suggested. Thank you...
  9. Hi everyone! O.k....here's my problem: I usually don't buy any pre-mixed flours, convenience food, etc. (Mainly because of financial reasons). I cook by recipes, etc. Well, I purchased Arrowhead Mills Pancake and baking mix this week. (I've been craving good pancakes and can't seem to make them). Anyway, these pancakes did not turn out yummy...
  10. I take the less-scientific side...as science is always being updated...and the "oops, there's more to this" is constantly occuring. That is the beauty of science; learning more and tweeking what is or was a strong theory or "fact." Currently, "by the books" I would be considered "gluten intolerant" using the established criteria of needing a positive...
  11. I had an idea. There are so many different threads to answer basic questions for someone baking who is new to the celiac/gluten free diet. The answers are all over the place. Let's start a thread where we can provide information we know. This isn't really a question/answer thread (ask if you need to though) and feel free to correct any incorrect information...
  12. Thanks so much for your replies! The ingredient list only mentioned two things: dates and dextrose. Dextrose is sugar, right? Maybe it could be a sugar coating? I'm not sure...I usually don't buy dates, just raisins...so it was a shock to open the dates and see them look so strange. I went ahead and finished my granola without the dates! ...
  13. I was reading through previous posts, and several people said that they use xan. gum "when necessary." My question is...what would I bake that doesn't need it? It's a binder, correct? I'm trying to improve my baking skills. I'm slowly improving with each attempt, but I need to fully understand everything because cooking is a science (and I majored...
  14. What a great idea Paula! Yummy! I'm not a big fan of peanut butter except when it is combined with chocolate. I absolutely LOVE peanut butter cups. I'll have to try this when I make brownies next time. My brownie recipe is super-easy and so much cheaper than the premade mixes. However, I did enjoy the Bob's Red Mill when I used to use it. Blessings...
  15. No, I can't blame the pork chop on gluten. I blame it on ten years of college and no time (or desire) to cook. A word of advice: thin sliced chops don't need to be in the oven for an hour and a half on 375. I think the cornbread took on a yellow-orange "glow" because I used a lot of soy flour and the course milled cornmeal. All I know is that...
  16. It was VERY hard not to laugh at him... what made it so funny was that he wasn't trying to be funny... he was just stating the facts. One time last year he asked me bluntly if I was trying to kill him. He asked that I "please put the poison all in one meal for a quick death!" He wasn't being mean to me...I had just brought him a plate with a...
  17. This week I have baked several gluten-free "specialty" items from scratch. I made banana nut bread on Monday and a coconut cake yesterday. Both tasted awesome! My hubby gave me a "compliment" in the kitchen last night. While eating his cake, he looked over at me and said, "This is really good. Do you remember how everything you used to make tasted...
  18. Congratulations! I'm still trying to make the perfect pancake (I'm not really a waffle person). I've tried several recipes, but I haven't hit on one that tastes like my pre-gluten-free pancakes did. I know it feels good to find that you've not got to sacrifice your favorite waffles being gluten-free! Happy baking! -Jules
  19. Thank you for the recipe! I'm on a roll with my baking this week...two for two....two successes out of two tries. Which= no wasted ingredients! -Jules
  20. Thanks everyone!
  21. Hey everyone, I am having a MAJOR craving. You know those soft pretzels with the sea salt that you can buy at the grocery store or at concession stands??? I want one (gluten-free of course). Today, I made a delicious loaf of banana bread, so I satisfied that craving...but I have no clue how to make soft pretzels. Any thoughts??? ...
  22. Hey ya'll, I just wanted some input. Any idea if certain foods can contribute to UTI's? I know water can help, but I'm hoping to find out some other things I can change to get off these stupid antibiotics (which are messing up my seizure meds.). Thanks everyone for any suggestions! -Julie
  23. Yep, epilepsy and celiac...unfortunately, mine are unrelated. However, there is evidence that the two can be related; it just doesn't happen to be so in my case. Keep hope and keep researching. -Julie
  24. Hi there! Like you, I started getting acne past the "typical" puberty age of onset. Two things were causing mine: Medication and hormones Well, they fixed the hormone problem with birth control pills (obviously not an option for you) But earlier that year, I had also started taking a new Rx medication....we found that to be the root...
  25. Such a small world! I graduated from Emory with my B.A. in psych. I received my M.A. from another university. Nice to meet you all! I currently live southeast of Atlanta. -Julie
