    Spring Minestrone with Meatballs (Gluten-Free)

    Fresh minestrone soup is one of the great dishes of spring. This version makes a clear, light, delicious minestrone broth that is perfect for showing off your fresh garden vegetables. The gluten-free meatballs help take this soup to eleven.

    Celiac.com 06/04/2018 - Spring means fresh vegetables, and fresh vegetables mean soup. Minestrone soup is one of the great dishes of spring. There are many versions, and many of them are delicious. I tend to favor those with a lighter touch. This version makes a clear, light, delicious minestrone broth that is perfect for showing off your fresh garden vegetables. The gluten-free meatballs help take this soup to eleven. 

    Ingredients:

    • 3 ounces ground beef
    • 3 ounces ground pork
    • 5 cups chicken broth
    • ½ cup fresh gluten-free breadcrumbs
    • 6 tablespoons finely grated Parmesan, divided, plus more for garnish
    • 1 large egg, whisked
    • 4 garlic cloves, 2 minced, 2 sliced thin
    • 2 tablespoons chopped fresh chives
    • 2 tablespoons extra-virgin olive oil
    • 1 teaspoon Italian dried seasoning
    • 1 leek, white and pale-green parts only, cut into ¼-inch rounds
    • 1 cup carrots, peeled and cut to ½-inch rounds
    • 1 cup (packed) baby spinach
    • Kosher salt, freshly ground pepper

    Directions:
    Mix chicken, beef, egg, gluten-free breadcrumbs,, Italian seasoning, 3 tablespoons Parmesan, 2 minced garlic cloves, chives, ¾ teaspoon salt, and ¼ teaspoon pepper in a medium bowl. 

    Form into meatballs ½-inch-diameter.

    Heat oil in a small pot over medium heat. Cook meatballs about 3 minutes, until golden brown. 

    Move meatballs to a paper towel to drain away cooking oil.

    Add leek to pot and cook, stirring often, until beginning to soften, about 3 minutes. 

    Add 2 thinly sliced garlic cloves; cook for 1 minute. 

    Add broth and 2 cups water; bring to a boil. 

    Stir in carrots, add meatballs, and simmer until carrots are tender, and meatballs are cooked through, about 3 minutes. 

    Add spinach and remaining 3 tablespoons Parmesan; stir until spinach wilts and Parmesan melts. 

    Season with salt and pepper.

    Ladle soup into bowls. Garnish with grated Parmesan.

    This recipe comes to us from Cele McCloskey.
    1 pound lean ground beef
    1 - 1 ¼ cup gluten-free crackers
    2 eggs
    1 teaspoon oregano
    ½ teaspoon garlic powder
    ½ teaspoon salt
    ½ cup gluten-free parmesan cheese
    Mix ingredients together and form into balls. Place on cookie sheet and bake in 400F oven for 20 - 30 minutes, turning once after 10-15 minutes. Heat your favorite gluten free spaghetti sauce and let meatballs simmer in the sauce for as long as youd like. Spoon over wheat-free, gluten-free pasta to serve.

    This is the real Italian way, mostly vegetables. The pasta and beans are more of an Americanization in our Minestrone.
    Serves:  2-4
    Ingredients:
    1 cup of your favorite organic Italian red sauce
    2 cups purified Water with 2 Tblsps. Braggs Aminos or organic Chicken Soup stock
    ½ cup fresh or frozen organic String Beans
    ¼ cup organic Onion, chopped
    1 medium organic Carrot, sliced
    2 large leaves of organic Swiss Chard, cut in small pieces
    1 stalk organic Celery, sliced
    ½ medium organic Zucchini, quartered and sliced
    ½ tsp. organic Fennel Seed, crushed
    1 tsp. organic Oregano
    1 tsp. organic Thyme
    1 tsp. organic Basil
    ¼ cup organic extra virgin, cold-pressed Olive Oil

    Celiac.com 07/08/2015 - I love soup, and I especially love a light, fresh tasty summer soup. This recipe for vegetable soup comes together quickly, and makes a perfect anchor to to a light, nutritious summer meal. I like to serve it with cooked brown rice, which I add to the soup.
    Ingredients:
    4 ears of fresh corn, removed from the cob 2 tablespoons olive oil 1 medium onion 1 clove garlic, sliced thin 2 cans chicken broth 2 large fresh zucchini 8 ounces fresh green beans 1 can diced tomatoes in juice Coarse salt ground pepper Directions:
    Filly husk and clean the corn of any corn silk.
