    Enchiladas with Roasted Potatoes and Vegetables (Gluten-Free)

    This recipe puts a vegetarian spin on that traditional Mexican favorite, the enchilada.

    Celiac.com 02/17/2018 - Roasted vegetables and smashed potatoes come together with enchilada sauce to deliver a tasty, memorable meal.

    Ingredients:

    • 10 medium roasted potatoes, smashed
    • 1 head cauliflower, cut into florets
    • 12 ounces whole button mushrooms
    • 3 small zucchini, chopped
    • 2 cups chopped carrots
    • ½ cup black olives (canned, sliced)
    • 3 cups water
    • ½ cup milk, more as needed
    • ¼ cup butter 
    • 1 dozen corn tortillas
    • 3 cups gluten-free enchilada sauce, red or green, as desired
    • 8 ounces shredded Cheddar cheese
    • ¼ cup olive oil
    • salt and pepper to taste

    Directions:
    Heat oven to 425 degrees F (220 degrees C).

    In a large mixing bowl, combine cauliflower, mushrooms, zucchini, potatoes and carrots. Drizzle the vegetables with olive oil, and season with salt and pepper.

    Spread vegetables in a single layer in a shallow baking dish. Roast vegetables until tender, about 30 minutes. Stir once about midway through cooking.

    Remove roasted vegetables from the oven, and reduce oven temperature to 350 degrees F (175 degrees C).

    In a large bowl, mash the potatoes with the butter and milk to standard mashed potato consistency.

    Stir in roasted vegetables.

    In a dry skillet over medium heat, quickly heat each tortilla on both sides to make pliable. Dip the tortillas in enchilada sauce.

    Put a large spoonful of potato-veggie mixture into the center of each tortilla.

    Top mixture with 1 tablespoons cheese, and roll tortillas. Place seam-side down in a 9x13 inch baking dish.

    Pour extra sauce over top, and top with remaining cheese.

    Bake at 350 degrees F (175 degrees C) for approximately 25 minutes, until the enchiladas are heated and cheese is bubbly.

    1 package corn tortillas
    1 can refried beans
    ¼ onion diced
    ½ green pepper diced
    ½ red pepper diced
    ½ cup cheddar cheese grated
    Salsa - I dont know how much -- just for the top
    In large bowl, mix beans and veggies and a little bit of the cheese. Grease 9X13 pan. With a tortilla in hand, place a large spoonful of filling in tortilla and roll-up. Stick a little of the bean mix on the edge of the tortilla to glue it in place, and lay seam-side down in pan. Do this until tortillas or filling runs out. Pour a little salsa over all enchiladas, spreading thin, just so the corn tortillas dont dry. Bake for about 20 minutes at 350F. Top with cheese and bake another 5 minutes.

    Makes about 3½ cups.
    3 tbsp. vegetable oil
    1 medium-sized onion, chopped
    3 cloves garlic, minced
    2 tbsp. gluten-free all purpose flour
    1 (4-oz.) can mild green chilies, chopped
    1 (14½-oz.) can diced tomatoes
    1 c. chicken broth
    1 teaspoon chili powder, preferably Ancho chili powder
    1 teaspoon salt, or more to taste
    In a heavy saucepan, warm the oil over medium heat. Add the onion and sauté until well-softened, about 5 minutes. Stir in the garlic and sauté for an additional minute. Add the flour and continue cooking for another 1 to 2 minutes. Mix in the chilies and tomatoes. Pour in the broth and add the chili powder and salt. Bring to boil, reduce heat to low simmer and cook for about 15 m...

    Makes 8-12 enchiladas Recipe for Green (Verde) Sauce:
    Puree in blender/food processor: 2 cups tomatillos (Mexican green tomatoes), 1 small garlic clove, 8 to 10 sprigs or fresh cilantro, and a tiny piece of Serrano raw green chili or jalpeño, ¼ cup diced white onion, and 1 teaspoon salt. Cook sauce for several minutes in a small pot with a teaspoon of oil until it changes color.
    Recipe for Red Enchilada Sauce:
    1 cup chopped onions
    2 cups canned tomatoes
    1 - 8 ounce can tomato sauce
    2 garlic cloves, minced
    Pinch of cayenne pepper
    10 drops hot sauce (Tabasco)
    ½ tablespoon plus 1 tsp. chili powder
    1 tablespoon honey
    ¼ teaspoon cumin
    Sauté the onion until translucent. Add the rest of the ingredients and simmer uncovered 30 minutes.

    I love enchiladas. I love cheese enchiladas, chicken enchiladas, beef enchiladas. I love green enchiladas, I love red enchiladas. I love them rolled, I love them stacked.
    The key to great enchiladas lies in the sauce, and good enchilada sauce can be a labor of love. One shortcut is to use enchilada sauce from a can.
    The problem with many store-bought sauces is that they are made with wheat flour, and thus contain gluten. Many recipes also use flour to thicken the sauce. There are ways around that, of course, but I've experimented over the last months and found a great way to make delicious, authentic, and fairly quick enchilada sauce with no flour.
