Be careful when making this! Frequently, store bought chicken stock has MSG in it which may contain gluten. Look for organic brands or use homemade

I have not tried it. It sounds good to me and I will try this one day next week. I will let you guys know how I like it after fixing it for myself. I will save the left over to use it for other days for lunch or supper. Take care!

I have Celiac Disease. This is the first time I was diagnose for this disease 2 weeks ago and last Monday the 25th. I will try to get over this. It's hard and will work on accepting this disease I have. Keep sending more recipes to this newsletters so I can fix gluten-free meals here at my own apartment.

    Scott Adams

Scott Adams was diagnosed with celiac disease in 1994, and, due to the nearly total lack of information available at that time, was forced to become an expert on the disease in order to recover. In 1995 he launched the site that later became Celiac.com to help as many people as possible with celiac disease get diagnosed so they can begin to live happy, healthy gluten-free lives.  He is co-author of the book Cereal Killers, and founder and publisher of the (formerly paper) newsletter Journal of Gluten Sensitivity. In 1998 he founded The Gluten-Free Mall which he sold in 2014. Celiac.com does not sell any products, and is 100% advertiser supported.

Slowly roasted beets are the star in this hearty winter salad. The fresh fruit segments compliment the splash of citrus in the dressing. I always try to find uses for the peel and zest—seems silly to waste all that concentrated flavor! When I can find good ones, sliced strawberries make a great addition. A delightful balance between tangy and sweet, this salad is pleasant as a starter, but also perfect on its own.
    Ingredients:
6 ounces fresh baby spinach, or mixed greens
5 beets, about 2-inches in diameter
    2 oranges, peeled and segmented
    2 teaspoons orange zest
1 pink grapefruit, peeled and segmented
    2 teaspoons grapefruit zest
    ¾ cup crumbled feta cheese
    2 teaspoons Dijon mustard
    2 teaspoons honey
    3 tablespoons balsamic vinegar
    1/3 cup olive oil plus 1 ...

    Roasted Cauliflower Soup (Gluten-Free)
Mark it in your calendars: it is officially soup weather. I love to stock my freezer with fresh soups and enjoy them as the temperatures continue to drop. I recently tried a cauliflower soup made with sweet potatoes, yielding a lovely autumn-orange color, but any potatoes you have on hand will do.
    Ingredients:
1 large head of cauliflower, cut into florets
    2 yellow potatoes, chopped
2 leeks, white parts only, chopped
    4 cups chicken stock
    ¼ cup heavy cream
    ½ stick butter, divided
1 teaspoon each salt and pepper, plus more to taste
    Directions:
    Preheat oven to 350 F.
In a baking sheet, toss cauliflower pieces, potatoes, 2 tablespoons melted butter, salt and pepper. Bake for up to an hour, until cauliflower and potatoes are easily-pierced. If necessary, tent w...

Celiac.com 01/02/2014 - A smooth, rich, flavorful butternut squash soup is worth its weight in gold on a cold winter night; worth at least two quarts of your favorite ice cream, or possibly the cuddling of a warm spouse.
This recipe adds one of my favorite sausages, Niman Ranch apple Gouda, for a welcome, extra hearty spin on this traditional classic soup.
