    Easy Kid-Friendly Apple Crisp Dessert (Gluten-Free) -

    This recipe is gluten-free, vegan and dairy-free. I've combined fresh apples with KIND Healthy Grains Clusters that is filled with 100% whole grains like gluten-free oats, quinoa, amaranth and buckwheat. My clients who have young children love this recipe because it's easy and 1/2 store bought, 1/2 fresh! Enjoy.

    Serves 6

    Ingredients:

    • 1 cup Kind Healthy Grains Clusters
    • 6 McIntosh apples, cored and finely chopped
    • 1 tsp. ground cinnamon
    • 1 Tbsp. agave nectar
    • 1 tsp. fresh orange zest

    Directions:
    Preheat oven to 350 degrees F. Prepare a baking dish with nonstick baking spray.

    Combine all ingredients in a large bowl; mix well to combine. Transfer to the prepared baking dish and bake for 20 minutes or until crisp is tender.

    Remove from oven; serve warm.

    Enjoy!

    Ingredients:
    2 ½ cups gluten-free rice milk
    1 1/3 cups maple syrup
    1 teaspoon vanilla
    3 envelopes unflavored Knox gelatin or equivalent
    2 teaspoons cinnamon
    ½ teaspoon ginger
    ½ teaspoon nutmeg
    ½ teaspoon salt
    One 29 oz can pumpkin
    1 pre-baked gluten-free pie crust
    Directions:
    Sprinkle gelatin (or whatever you use) over rice milk in saucepan. Let stand 1-2 minutes to soften. Stir over low heat until gelatin dissolves - about 2 minutes. Add maple syrup, spices and vanilla and stir over med. low heat for 3-5 minutes. Blend in pumpkin and continue to stir for 1-2 minutes. Cool until starting to thicken slightly.     Pavlova is a dessert with a meringue base that was created in honor of the ballet dancer Anna Pavlova when she was touring in New Zealand and Australia.
