    Garden Fresh Summer Corn Salad (Gluten-Free)

    This salad of fresh corn and garden vegetables is the perfect gluten-free ticket for a summer cookout or picnic.

    Celiac.com 09/09/2020 - With the last of the summer corn on its way, what better way enjoy it, than a hearty salad of fresh seasonal vegetables? This recipe is quick, easy, nutritious and delicious. It's just the thing to brighten up a dull summer meal, or change up the usual routine.

    Ingredients:

    • 4 ears of fresh, sweet corn
    • 3 medium ripe tomatoes, 
    • 3 Persian cucumbers, sliced
    • 3 radishes, sliced
    • 2 hearts of palm sliced into rounds
    • ¼ cup roasted pumpkin seeds or pine nuts
    • 1 teaspoon cilantro, as desired
    • 1 tablespoon olive oil
    • 1 tablespoon balsamic vinegar
    • Salt and fresh black pepper, to taste

    Directions:
    Cut the raw corn from the cob into a medium bowl.

    Add vegetables. 

    Toss with oil and balsamic vinegar.

    Season with salt and pepper, as desired.

    Serve in bowls.

    Ingredients:
    6 cups gluten-free cornmeal
    3 cups Open Original Shared Link
    2 ½ teaspoon baking soda
    1 ½ teaspoon salt
    1 – 1 ½ cups sugar
    3 cups buttermilk
    2 ½ cups water
    2 eggs (beaten)
    Directions:
    In a large mixing bowl add all dry ingredients and mix well. Add buttermilk and water and add in beaten eggs and mix well. If batter becomes stiff add small amounts of water, but not too much (I use a 40 ounce drinking glass and fill with mix to dip in prepared dogs). Dry off the hot dogs then roll them in gluten-free corn starch and tap well to move excess.     Ingredients:
    6 cups baby arugula 4 small oranges, de-seeded 4 blood oranges, de-seeded 1 green apple, thinly sliced 1 red apple, thinly sliced ½ cup pomegranate seeds 3 tablespoons freshly squeezed orange juice 2 tablespoons extra-virgin olive oil 1 tablespoon fresh lemon juice ¼ teaspoon coarse salt â…› teaspoon freshly ground black pepper, divided ½ cup crumbled feta or blue cheese Directions:
    Peel and section all oranges. Reserve juice, and squeeze more for the dressing if needed. Discard any seeds.

    Asian-style Tuna Salad (Gluten-Free)
    I've been eating more protein and less carbs lately, so this was a perfect addition to my lunch routine. It also happens to be deliciously gluten-free.
    Ingredients:
    10-12 ounces of canned albacore tuna in water, drained 8-10 small radishes, cut into wedges 1 large carrot, shredded 2 cloves garlic, minced ½ teaspoon minced ginger ½ serrano chile, seeded and minced 2 tablespoons avocado oil ½ teaspoon dark sesame oil 3 tablespoons rice vinegar 1 teaspoon of sugar Salt and black pepper to taste 2 tablespoons chopped cilantro 1 whole green onion, chopped wedges of sweet lime, as garnish Directions:

    Carrot Apple & Beet Salad (Gluten-Free)
    Celiac.com 10/27/2016 - Fall is upon us, but if you're reluctant to give up on salad just yet, here's a tasty salad that makes a perfect transition into fall.
    Ingredients:
    2 tablespoons honey 2 tablespoons walnut oil or olive oil 2 tablespoons balsamic vinegar 1 green apple, cored and thinly sliced 2 carrots, roasted, steamed, and cut into chunks 2 beets, cleaned and roasted ½ cup walnut pieces, toasted ½ feta cheese, crumbled salt and fresh pepper, to taste Directions:
