    Healthy Gluten-free Skillet Nachos

    Celiac.com 08/04/2015 - Both health nuts and nacho lovers will cheer these three-cheese nachos! They are the perfect game day snack, or a great addition to any barbecue! They are easy to make, and come together in a single skillet for easy prep, serving and clean-up.

    • Tortilla chips, enough to fill your skillet
    • 1 cup shredded cheddar cheese
    • 1 cup shredded pepper jack cheese
    • 1 cup pinto beans from can, rinsed and drained
    • ½ cup Queso Fresco or Cotija cheese, or a blend

    Optional toppings:

    • Green onion, chopped
    • Sweet onion, chopped
    • Tomatoes, diced
    • Black olives, sliced
    • Avocado, chopped
    • Cilantro, chopped
    • Jalapeño, sliced
    • Sour cream
    • Salsa of choice

    Directions:
    Heat oven to 400 degrees F.

    Spread half of the tortilla chips into a cast iron skillet.

    Layer half of the cheddar and pepper jack cheese over the chips.

    Top with half of the beans.

    Add the remaining chips, cheddar cheese, jack cheese, and beans in that order.
    Finish with a layer of cheese.

    Place skillet in oven and Bake at 400 degrees F for 8-10 minutes, or until cheese is melted.

    Remove from oven and top with crumbled Queso Fresco.

    Serve warm, and top with choice of diced tomatoes, black olives, avocado, cilantro, jalapeño, green onion, sweet onion, and sour cream.

    ala Pico de Gallo
    Ingredients for 1 cup:
    1 ripe red tomato/ 2 Roma tomatoes
    1-3 green Serrano chilies
    3 sprigs fresh cilantro
    1 tablespoon raw white onion
    1 - 2 tablespoons olive oil
    1 - 2 tablespoons white vinegar
    salt

    Chop all ingredients into small pieces. Add oil, vinegar and salt. Stir and serve. Stays nice a day or two in the refrigerator. Can use with meat, eggs or cook with eggs, etc. For guacamole use 1 part salsa to 2 parts avocado chopped/mashed. Add a little more vinegar or lime/lemon juice to slow down darkening.

    Put 2 cups tomatillos "green tomatoes" in a sauce pan to boil (peel off outer leaves if there are any) with 1-5 fresh green Serrano chilis...

    Tasty Pico de Gallo Salsa (Gluten-Free)
    It's hard to love Mexican food without loving salsa. For me, pico de gallo always tops the list of my many salsa favorites. In spring and summer, when tomatoes are in season, I like to whip up a batch of fresh pico de gallo and dive into a bowl of tortilla chips as I prepare my favorite Mexican dishes. This recipe will deliver a tasty pico de gallo that will have your stomach smiling, and your taste-buds yelling arriba!
    Ingredients:
    6 roma tomatoes, diced
    ½ red onion, finely chopped
    ½ cup chopped fresh cilantro
    ½ jalapeño pepper, seeded and minced
    1 clove garlic, minced
    1 pinch garlic powder
    1 pinch ground cumin
    Juice from one lime
    salt and ground black pepper to taste

    Ceviche is one of my very favorite summertime dishes. It's one of those magical dishes where simple ingredients, simple preparation, and a bit of time combine to form a delicious, refreshing and memorable dish.
    Not only do I consider ceviche to be delicious and refreshing, I consider it to be lucky. That's because, back when I was single, I took the woman who would later become my wife out to a local Peruvian restaurant for ceviche on our first date. The place specializes in ceviche, and we ordered several kinds. And while I'd like to think that the charm that eventually won her over was mine alone, I still give some credit to the ceviche she found so delicious.
    I can't guarantee that this ceviche will help you land the partner of your dreams, but it certainly can't hurt your efforts...

    Restaurant Style Chicken Nachos (Gluten-Free)
    Nachos are one of may favorite snacks to make at home. Nachos are versatile, easy to make, and sure to please most eaters. They can be easily adapted to include myriad ingredients.
    This recipe delivers restaurant-style chicken nachos that will have your guests asking for more.
    Ingredients:
    4-6 ounces whole chicken breast, cooked and shredded
    16 ounces tortilla chips
    4 ounces Cheddar cheese, shredded
    4 ounces Monterey Jack cheese, shredded
    4 ounces black olives, pitted, sliced, strained
    2 ounces crumbled Cotija cheese
