    Thanksgiving Stuffing (Gluten-Free)

    Reviewed and edited by a celiac disease expert.

    5-6 cups cubed and dehydrated Food For Life Rice Almond Bread
    2 Tbs. olive oil
    3 cups chopped celery (or 1-2 Tbs. celery seed)
    2 cups chopped onions
    1 tsp. salt
    1-2 tsp. cilantro
    1-2 tsp. thyme
    1-2 tsp. sage
    black pepper
    1-2 Cups gluten-free Chicken Broth

    Prepare 1 to 2 cups gluten-free chicken broth. Prepare Food For Life Rice Almond Bread as follows: Cut into ½ cubes and put in food dehydrator for 8 hours (or put on cookie sheet and in oven on the lowest temperature for about 2-3 hours). Sauté chopped celery & onions in 2 TBS oil in large frying pan over medium heat until soft. Add spices & pepper as desired to taste. Pour in chicken broth & simmer over low heat for 15-20 min. Stir in bread until fully saturated in sauce & seasonings. Place in 400°F oven for 40-50 min, covering as needed with aluminum foil, until done. If you want to cook the stuffing inside the turkey add only 1 cup of Chicken broth.

    This recipe comes to us from Valerie Wells.
    Load the following into a slow cooker in the following order:
    1 pound beef cut in strips (or beef for stir fry)
    1 tablespoon tapioca pearls (Bascoms small pearl is what I use)
    ½ cup water
    2 to 3 tablespoons Tamari gluten-free soy sauce [i use San J Wheat-Free brand]
    1 large white onion sliced
    1 green bell pepper sliced
    1 red bell pepper sliced
    1 yellow or orange bell pepper sliced
    Cook on low 8 hours or high for 4 hours. Serve over hot rice or brown rice pasta. [My mom used to make something similar to this. She added whole mushrooms. It was wonderful!]

    Honey Glazed Spicy Chicken Thighs (Gluten-Free)
    Oh, Chicken, how can I prepare thee? Let me count the ways. This is a great, quick spin on everyday chicken thighs and can easily spice up an ordinary middle-of-the-week dinner. The combination of spices is potent and aromatic but the real kick comes from the cider vinegar. I’ve played around with different combinations and quantities of spices depending on which flavor I want to highlight—that’s the fun part. Thighs are great over brown rice, on a salad, with veggies, in tacos or even on their own. Thighs also cook great on the grill in the summertime.
    Ingredients:
    8 skinless, boneless chicken thighs
    6 tablespoons honey
    3 teaspoons cider vinegar
    2 teaspoons garlic powder

    When I was growing up, pot roast was one of the most favorite things my mom made. I fondly remember many a Sunday when I came home to the smell of pot roast cooking in the oven, and counted the minutes until dinner hit the table.

    BBQ Pork Tenderloin Kebabs (Gluten-Free)
