Yum! Homemade Bagels. (Also Dairy And Egg Free)

Pamela's bread mix has directions on the side on how to make bagels. I made up one batch that didn't turn out too well then I tried another batch and this time was successful. The key was not to add too much liquid and to let the dough rest for 1 hour.

 

I only used about 1 1/2 cups of total liquid on the 2nd time and the bagels held up much better to boiling and held their shape very well. These are perfect for some of the egg allergic folks, because the recipe didn't require using any eggs, only oil and water.

I am going to have to try Pamela's Mix. My Daughter uses it, she made the pizza crust and it was yummy!

Is the mix you used soy free as well? And how did you shape them? Lol! I am so new to this...

 

If they are soy free, I will definitely have to try them once I can go back to a more standard gluten-free diet :)

Pamela's mix does not have any soy in the ingredient list, but it is processed in a facility that uses soy. 

 

I made the little mounds of dough about the shape of a bagel and then let them rest for an hour and poked holes in the middle. Then I boiled them and baked them.

Sweet!! It does contain one of the gums tho. But I believe it's at the bottom of the list of ingredients. So I didn't worry about it. I went to Kroger tp buy some Pamela's gluten-free all purpose flour mix but they didn't have any! :( Pfft! So I got Glutino's gluten-free All purpose flour mix. Not sure I like it, it also has a gum in it. I read that when going to a recipe of baking gluten-free bread and bread items it will taste better if you leave the gums out. I will look into making my own gluten-free all purpose flour blend.

I used the bread mix with the yeast packet in it and sugar already in it.

 

If you use a flour mix, keep in mind that you will have to provide the yeast and sugar.

I liked the Pamela's Four Mix because it had all kinds of recipes with it. The Glutino's doesn't. Funny thing I used to make a loaf of bread a day before going gluten-free . I got so good at making Pizza crust I didn't need a recipe, I used to add extra GLUTEN to it!! Pfft! Lol little did I know huh?

      Two months. In extreme situations like this where it’s clearly a smoking gun? I’m in LA so went to a very big hospital for pcp and gi and nutritionist

      So far 3 months in - worsening symptoms. I have had the worst constipation in my life and I am primarily eating naturally gluten-free foods like potatoes, eggs, salad with homemade dressing, corn tortillas, etc. I hate gluten-free bread and pasta so I don't eat it. Occasionally I eat gluten-free almond flour crackers. As stated in the post, I don't have any vitamin deficiency. I was already tested.

      Talk to your  Talk to your provider about testing for vitamin and mineral deficiency.  celiac disease causes malabsorption and eventually malnutrition.  Especially vitamin D. Having the gallbladder removed seems to be a common step on the way to a Celiac Disease Diagnosis,  Gallbladder is a sympton of deficient Choline. Eggs and red meat are the primary source..Choline makes up a majority of the bile salts.  The bile gets thick, doesn't get enough into intestine to digest fats well.  Can eventually back up into gallbladder, cause gallstones.  Without bile, bowel movements can become hard. Try to avoid all processed foods while you are healing, The gluten-free foods are not fortified with vitamins and use various ingredients to mimic fat that bothers many Celiacs.  Choose vegatables with low omega 6.  Optimum omega 6 to omega 3 ratio is less than 3:1.  Wheat flour is 22:1.  Grass fed milk is 1:1.   Commercial Dairies milk is 5:1.  They feed wheat, rye and barley Gluten as part of the food mix.

      Your DGP-G is also high. The thing to do now would be to trial the gluten-free diet for a few months to see if there is improvement in symptoms.
