Gluten free backing food

I currently do search and rescue with the Civil Air Patrol.  I've got one problem; what to eat.  Obviously, I need my food to be gluten free.  I also need low sodium (it takes all of about 500mg a day to give me diaheria.)  Then I need to be able to cook it quickly (an MRE would be ideal, but there are no gluten-free MREs.)  Finally, I need to be able to store it in my pack for several years (if I get a call at 3AM, I am highly likely to leave anything not in my pack behind.  No running to the kitchen to grab food out of the freezer)

Anyone have any ideas on what I can eat?

Thanks.

This is not going to be easy for you. You're going to have to change the foods in the pack out from time to time rather than just packing it & leaving it for years. I'm thinking weight is a factor too. I have a few suggestions.....

I did find a company that does gluten free MRE's:

I just went back & checked the ingredients in those gluten-free MRE's. It says modified food starch & doesn't specify from what so if I were you I would certainly check with the company & have them clarify that to your satisfaction.

We are prepared for earthquakes at home, in our car and at work.  That means keeping tins of sardines, gluten-free cereal bars,  SPAM, nuts, chicken, fish, rice, etc. in our earthquake kits.  I have to go through it every three to four months to rotate out some of the foods (e.g. cereal bars).  I mark it in our planner.  It works for us.  Tasty?  Appetizing?  I bet my kid will be thankful to have food to eat in the event of an emergency.  <_<

Not exactly MREs, nor anything that can be left for years, but when I'm going to be travelling for a while and need to pack light, I use gluten-free GO Picnics (I take them out of the boxes and put them into ziplocs) or make my own versions, mainly using items from minimus.com:  Some jerky, pepperoni, cheese/crackers, hummus and gluten-free pretzels, etc.  If I know I'll be somewhere where I can boil water, I might pack some rice and gluten-free soy sauce packets. These options are not low sodium, but it can give you ideas of what will work for you.

Desperately need a vitamin D supplement. I've reacted to most brands I've tried.

I believe the GFCO does use a common logo for certified gluten free products (those containing not more that 10ppm of gluten) but nothing universal yet from the FDA for standard gluten free products (those containing not more that 20ppm).

I have a One Pot and decided to start using it one day. I was hesitant at first making my own yogurt, but was surprised at how easy it was. I like mine better too.

Because I spend so much time reading every word on all food packaging, I personally would greatly appreciate it if there was one common gluten-free symbol written in large-enough text, and always located in the same place. That alone will make shopping easier and faster. I dread having to buy packaged food. Thank you very much for asking,

I do believe that people are under so much pressure up have a sleeping  pattern ,  with working and how households work these days , but in reality there is no wrong or right at to sleep , I believe your neighbour showed this with such a long life , I do exactly the same  at night many times so I hope I live into my nineties also , I have found one thing in life your body knows what's best so good to listen to wat it needs however unconventional that maybe 🤗

Try adding some Thiamine Hydrochloride (thiamine HCl) and see if there's any difference.  Thiamine HCl uses special thiamine transporters to get inside cells.  I take it myself.   Tryptophan will help heal the intestines.  Tryptophan is that amino acid in turkey that makes you sleepy after Thanksgiving dinner.  I take mine with magnesium before bedtime.
