Cream of celery soup

I used to use Pacific gluten-free cream of celery in recipes, but that has been discontinued. I still love their mushroom and chicken for recipes, but what can I use for cream of celery?

What I do is, chop celery and sometimes a bit of onion, saute in Nutiva butter flavored coconut oil in a small sauce pot, then pour in 16oz of milk of choice (I use coconut canned milk or sometimes another nut milk) bring to a quick boil, turn to low and simmer for 5-10mins then put it in a blender and make my own. If you want it without celery pulp you can strain it. Stronger flavor can be achieved by using the sprigs from the top of the celery plant to stir when boiling it but this can easily make it overpowering.

I works as a chef part time so it sorta just goes on whim of taste and need. Sometimes I add garlic, salt, and/or pepper.

      Wheat flour is fortified with vitamins in the U.S. as a part of USDA policy. Gluten free facsimile products are not fortified. There is no government mandate for such. When you remove wheat flour by going gluten free, you may be removing a significant source of vitamins.
