Yummy Cornbread Recipe--my Fav!

Hello,

Here is my favorite cornbread recipe. I mixed two of Bette Hagman's recipes to fit

what I have on hand in my kitchen.

Orange Cornbread

1 cup yellow cornmeal

1 cup corn flour

1/4 cup sugar (you could use less probably)

2 tsp. baking powder

1 tsp. baking soda

1 tsp. salt (or a little less)

2 eggs, beaten

1 cup milk (I used skim)

1/3 cup vegetable oil (you could use apple sauce, but I haven't tried it)

2 tsp. grated orange peel

Preheat oven to 400 degrees. Grease 12 muffin cups. Sift dry ingredients together in a mixing bowl. Stir in the beaten eggs, milk, oil, and orange peel. Bake for 13-15 minutes (recipe says 25 min, but that was way too long in my oven).

Thank you so much for this recipe. The Celiac. message board announcment popped up in my email just at the perfect time with this recipe on the 13th. Had a breakfast potluck to go to on the Valentine's Day with fellow realtors, and knew at least one other person had Celiac, so decided to take Cornbread ahead of time, but unsure which recipe to use that I had, because they all seemed too dry. This is a very moist (not crumbly) cornbread recipe. The orange zest adds nice flavoring, but now that I have a good basic recipe will try different variations. Thanks again . . . you posted this recipe at the PERFECT time.

Sure, I used Arrowhead Mills Corn Meal and Bob's Red Mill Corn Flour.

      Hi @Atl222 As @trents points out, there could be many reasons for this biopsy result.  I am interested to know, is your gastroenterologist concerned?  Also, are your blood tests showing steady improvement over the years? I remember when I had my last biopsy, several years after diagnosis, mine came back with with raised lymphocytes but no villous damage, too! In my own case, my consultant wasn't remotely concerned - in fact, he said I might still get this result even if all I ever did was eat nothing but rice and water.   My coeliac blood tests were still steadily improving, albeit slowly, which was reassuring.

      Welcome to the celiac.com community, @Atl222! Yes, your increased lymphocytes could be in response to oats or it could possibly be cross contamination from gluten that is getting into your diet from some unexpected source but not enough to damage the villi. And I'm certain that increased lymphocytes can be caused by other things besides celiac disease or gluten/oats exposure. See attachment. But you might try eliminating oats to start with and possibly dairy for a few months and then seek another endoscopy/biopsy to see if there was a reduction in lymphocyte counts.

      This is a solid, well-reasoned approach. You’re right that “koji” by itself doesn’t indicate gluten status, and the risk really does come down to which grain is used to culture it. The fact that you directly contacted Eden Foods and received a clear statement that their koji is made from rice only, with no wheat or barley, is meaningful due diligence—especially since Eden has a long-standing reputation for transparency. While the lack of gluten labeling can understandably give pause, manufacturer confirmation like this is often what people rely on for traditionally fermented products. As always, trusting your body after trying it is reasonable, but based on the information you gathered, your conclusion makes sense.
