pizza dough gamechanger

my brother picked up some 'pure knead' frozen pizza dough - i thawed it out and added extra flour and rolled it really thin to make a stromboli.  i brushed it with egg wash and it turned out fantastic!  i see new horizons with this dough, i bet i can make cinnamon rolls, spanakopita, etc

as you can tell, i like to play with my food......  :D

lolz, no, it's not pure knead!!  honestly, i have so many different brands (of mostly breads) of stuff in the freezer that i mixed that one up!!  ha ha also, i threw away the package *but* my brother is going to pick some more up this week so i will get back with the brand.  sorry about that!!

ok, the brand is 'wholly gluten free' - sorry for the mix-up.  

also, i sent him to buy all of them and somebody already beat us to it.  

my life is a perpetual scavenger hunt  🙄

      First off, I’m so sorry you’ve been dealing with this for so long—being sick for half your life is unimaginably tough, and it’s huge that you’ve finally gotten some answers. A celiac diagnosis can feel overwhelming (especially on top of being vegan!), but it’s also a turning point. Your body is about to start healing, and that’s hopeful! This article has some detailed information on how to be 100% gluten-free, so it may be helpful (be sure to also read the comments section.):

      Yes, it is likely your villi healed, but if you are exposed to gluten regularly again the damage will likely come back and cause some potentially serious health issues.

      Hey yall! I am dealing with a new diagnosis. I have been sick in some sort of way for 10 years. I am 22. I can’t remember a time in the last decade I have not had some strange symptom. This last year it got way worse. I lost 40 pounds and had to drop out of school. I ended up getting and endo and blood tests and got positive results for celiac. I am looking for advice of ANY type. I am vegan so this is a big adjustment to add this to my diet. Thansk fro the help.

      I have been on a strict Celiac diet for 20 years and I tried a deep fried breaded cheese stick that I have been craving for years and no symptoms, then I tried a deep fried breaded fish sandwich and also no problems. I am 74 years old and wondering if after all these years the villa has healed, is that possible?

      Your experience with gluten is actually not unheard of! Some people with non-celiac gluten sensitivity (NCGS) or even celiac disease report an initial ‘honeymoon phase’ during a gluten challenge, where symptoms temporarily improve before worsening again. This could be due to your body adjusting or even a temporary immune modulation. Since you’re only 2.5 weeks into the challenge, it’s possible more symptoms could reappear if you continue. Celiac testing (bloodwork and endoscopy) is most accurate after a full 6 weeks of gluten, so sticking with it for now is wise. That said, your joint/tendon issues (especially the Achilles stiffness) are interesting—they can be linked to celiac disease...
