Welcome to the forum m and m14! Yes, it feels overwhelming at first. We've all been there and done that! There is a significant learning curve in arriving at a truly gluten-free lifestyle. Learning how the food industry hides gluten through terminology is part of it. Learning where gluten is included in places you would never expect like Campbell's tomato soup and soy sauce and even some chocolate syrups is another part. And then there is the whole area of cross contamination (CC) where "naturally gluten free" foods come into contact with gluten containing things in growing, harvesting, storage and processing is another. Did you know, for instance that when you purchase a package of dried lintels that it probably contains a significant amount of wheat kernels because of CC?

After a year or two you will develop a sixth sense about where gluten might be found in food stuffs you buy.

Avoid eating out if at all possible since studies show that is the main source of cross contamination. You have no control over how things are handled back in the kitchen, even when you order something "naturally gluten free". Was it cooked in the same pot, pan, or on the same grill as wheat stuff? Did someone stir it or slice it with the same utensil they used for wheat containing items?

Even meds and supplements can use wheat starch as a filler.

Perhaps this will help:

Interesting, when I suffered for a few months with ectopics I noticed that carbohydrates would cause indigestion and bloating in my stomach, then that would lead to my heart skipping beats, and I could feel it in my throat, it was very unsettling.  My last serious bout of this was after eating a Muller Rice Pudding for breakfast.   I happened to be wearing a 48 hour halter at the time and cardiology picked it up, but they weren't worried about what they saw. There was some British doctor who'd made some videos on the Vagus nerve that I remember watching at the time which made sense of what I was experiencing, there did seem to be some sort of connection.

I asked my cardiologist about stopping vitamins.  He said his tests account for all detectable vitamins from sources other than food.  I only need to stop them for a couple of days.  He has me keep records of meds and vitamins I've ingested over the past 10 days and prior and he does his calculations.

Reply to treats I try and eat to bring up the glucose. Sometime I get up 3 times a night and eat something. I don't think food is the issue. A lot of the food they say should help doesn't.  Many mornings my level is 59 and I feel sick, sometimes for hours. It has been recommended I go to an Endocrinologist.
