Going Out Of Town For A Week--and He Doesn't Cook

This should be interesting!!

I'm leaving on Thursday for a week. My DH (who is the gluten intolerant one), if left to his own devices, would eat cereal for 7 days. What he would have done in the past is eat frozen pizzas, Kraft mac and cheese, or pick up Quiznos. No more, of course.

So, this leaves me the unenviable task of spending much of the weekend cooking. I decided to get a jump start on things this evening. I have a dozen or so meatballs (no breadcrumbs) in the freezer, almost ready to be vacuum packed (I LOVE my Food Saver!!). I have a lasagna in the oven (using DeBoles rice noodles), and just pulled out a pan of scalloped potatoes. Later this weekend I plan to make a HUGE batch of Enchiladas Suizas (corn tortillas, of course!!)...yummy! But I'll make enough and freeze so that when I get back, I can have some. :D

Each of these should be at least 2 or 3 meals for him, and he can fill in any other meals with cereal or popcorn.

This is the first time since being gluten-free that I haven't been home to cook for him for more than a day. It'll be interesting....and I will be gone for another week in September, so will have to do it all again soon!

Food Saver is a home vacuum packer. Comes in very, very handy! I buy our meats in bulk at Sams, then break it all into smaller packages, freeze, and vacuum pack them. Also works good for frozen french fries, hash browns, coffee beans, ground coffee.

It is funny that you are posting about this--I have the same cookong situation coming up this week too. My DH survived on egg rolls and frozen burritos when I visited my family for a week before his diagnosis. He doesn't cook either so I made up a batch of red beans and rice for 5 meals, cooked a pork roast yesterday, froze a serving of cabbage casserole, and made up a bunch of gluten-free spaghetti. This diagnosis keeps affecting our lives in new ways as things progress. I am glad he is doing better but this diet sure isn't one for surviving on instant food from a regular grocery store! It is ironic that we have to cook so much so they have something to eat when we are gone. oh well. (glad to know someone else is doing it too! :P ) Kendra

What kind of gluten-free corn tortillas do you use?? My boyfriend and I have been searching for a good brand. (He doesn't like the frozen ones.)

I never thought of doing a beef roast...oh well. I've also decided to make a batch of Mexican rice to go w/ the enchiladas.

He's going to be on his own w/ the gluten-free spaghetti. We have some, plus the Classico sauce and meatballs I made...he knows how to operate the microwave.

I'll do the rice tomorrow...and then I'm done cooking.

We use yellow corn tortillas. Either Mission (which say they are gluten-free), or Tia Rosa (which doesn't state gluten-free, but from what I can tell by the ingredients, they are). IMHO, the Tia Rosa seem to be the better of the two....the Mission brand seems to fall apart very easily.

Both are located in the bread section of our store, unfrozen. I do freeze them sometimes though, especially if I buy a large package.

When I buy the corn tortillas I put 4 in each ziploc baggie to freeze so I can easily get how many I need at a time. (Our grocery store only carries them in packs of 48 or 50. DH likes the white corn better than the yellow corn tortillas and they seem a little less brittle. :) Kendra

Lordy does this sound familiar, my husband survives on eggs/toast or eggs and frozen waffles or sandwiches. Subway and take out. (he's not celiac)

I used to go to the trouble you talk about - made lasgana, homemade soup, chili, and made sure there was eggs as back up. The chili was in the frig 3 days before he found it .. :huh: ...sigh..... it was behind something (I guess DH just looks up front!), he forgot about the lasgana in the freezer and never thought to take it out to thaw in the morning so he could have it at supper (also didnt realize there is a defrost button on the microwave).. so he did the take out, subway and eggs route.

Since then I smile and say , I'm off, its survival of the fittest honey :lol: and I figure if he starves then someone screwed up when they gave him his university degree.

      He is not just a psychiatrist.  He is also a neuroscientist.  And yes, I have already read those studies.   I agree with benfotiamine.  This is short term while glutened/inflammation occurs.  As I had already mentioned, these symptoms no longer exist when this phase passes.  And yes, I know that celiac is a disease of malnutrition.  We are working with a naturopath.

      Thanks for your response.  Everything you mentioned he is and has been doing.  Tobacco is not the same as nicotine.  Nicotine, in the form of a patch, does not cause gastrointestinal irritation.  Smoking does. He is not smoking.  Please do your research before stating false information. Dr. Paul Newhouse has been doing research on nicotine the last 40 years at Vanderbilt University Medical Center.

      Im so frustrated and still getting the run around trying to reprove my celiac disease which my past primary ignored for 25 years.I understand that theres a ray of medical that doctors are limited too but not listening and telling the patient ( me) that im not as sensitive as I think and NOT celiac!Correction Mr white coat its not what I think but for cause and affect and past test that are not sticking in my medical records.I get sick violently with foods consumed, not eating the foods will show Im fabulous. After many blood draws and going through doctors I have the HLA- DQ2 positive which I read in a study that Iran conducted that the severity in celiac is in that gene.Im glutenfree and dealing with related issues which core issue of celiac isn't addressed. My skin, right eye, left leg diagestive issues affected. I have high blood pressure because im in pain.Im waisting my time on trying to reprove that Im celiac which is not a disease I want, but unfortunately have.It  has taken over my life personally and professionally. How do I stop getting medically gaslight and get the help needed to bounce back if I ever do bounce back to normal? I thought I was in good care with " celiac specialist " but in her eyes Im good.Im NOT.Sibo positive, IBS, Chronic Fatigue just to name a few and its all related to what I like to call a ghost disease ( celiac) since doctors don't seem to take it seriously.

      @Martha Mitchell, your reaction to the lens implant with gluten sounds like it could be an allergic reaction rather than a celiac reaction. It is possible for a celiac to be also allergic to gluten as it is a protein component in wheat, barley and rye.
