Recipe For Easy Chicken And Noodles? (and Rolls!)

Hi all,

We love chicken and noodles.....my easy recipe is no longer that!!!! Before i cooked chicken breast, added several cream of soups to broth and added egg noodles. That was then and this is now. My daughter, Mollie, has been gluten free for two weeks and i'm just trying to get past the initial stage and get into cooking. I have checked out several recipe books for gluten-free diets, but not ready to get into making the dough myself.

Here's what i have......chicken, a package of asian rice noodles, and organic gluten-free chicken stock. Ideas???????

Also......any good yeast roll recipes to go with this dish??????

It's rainy and dark this morning in Indiana and this dish sounds good if only i can make it! :unsure:

Well...I have a suggestion for your chicken and noodles...

People made cream of chicken long before campbells, and it's really easy to do :)

If you have a copy of Joy of Cooking kicking around your kitchen, there is a recipe for creamed chicken (which is what you use for chicken and noodles)... Just replace the flour with your favorite gluten-free flour combo (I use a blend of rice, potato, and corn starches), you can try Bob's Red Mill all purpose gluten-free mix as well.

I don't have the book in front of me, but here's what I got off the top of my head....

You basically make a roux, you melt butter in a pan over medium heat, and when it's melted, add about an equal amount of flour and cook for a minute or two, and then add 2-ish cups of chicken stock, and cook and stir until thickened like gravy...

Also, Tinkyada is the best gluten-free pasta...tastes just like wheat pasta :)

I make Bette Hagman's egg noodles for my chicken noodle soup. My kids actually beg for my soup, they never begged for food before except pancakes.

Boil a chicken, which makes the soup base and broth and debone (or boil boned chicken breasts but you won't get the really good extra flavor). Add veggies then the noodles you made while the chicken was boiling and it is done.

If you are just limited to avoiding gluten, then you can buy some broths, I can't because of soy issues but others should be able to give you some brands.

Where in Indiana? There are several of us on this board - it is cloudy and gloomy in Bloomington.

The cooking gets so much better.

An old fav of mine is real simple, but I have not tried it since gluten free but plan to very soon, is this.

I boil chicken breasts maybe add some rosemary....

make homemade egg noodles...

once the chicken is done I shredd it and throw it back into the pan with the broth that I just made... add the noodles with a little extra of the flour to thicken it

then I make a pot of mashed potoates.. and corn.

I layer this.. potatoes (butter) corn then the thickened soup.... does a heart good (we like our noodles a little thicker than normal for this meal)

      oh that's interesting... it's hard to say for sure but it has *seemed* like oats might be causing me some vague issues in the past few months. It's odd that I never really connect specific symptoms to foods, it's more of an all over feeling of unwellness after  eating them.  If it happens a few times after eating the same foods- I cut back or avoid them. for this reason I avoid dairy and eggs.  So far this has worked well for me.  oh, I have some of Bob's Red Mill Mighty Tasty Hot cereal and I love it! it's hard to find but I will be looking for more.  for the next few weeks I'm going to be concentrating on whole fresh fruits and veggies and beans and nuts and seeds. I'll have to find out if grains are truly necessary in our diet. I buy brown rice pasta but only eat that maybe once a month at most. Never liked quinoa. And all the other exotic sounding grains seem to be time consuming to prepare. Something to look at later. I love beans and to me they provide the heft and calories that make me feel full for a lot longer than a big bowl of broccoli or other veggies. I can't even tolerate the plant milks right now.  I have reached out to the endo for guidance regarding calcium intake - she wants me to consume 1000mgs from food daily and I'm not able to get to more than 600mgs right now.  not supposed to use a supplement until after my next round of testing for hyperparathyroidism.   thanks again- you seem to know quite a bit about celiac.

      Welcome to the celiac.com community, @SilkieFairy! You could also have NCGS (Non Celiac Gluten Sensitivity) as opposed to celiac disease. They share many of the same symptoms, especially the GI ones. There is no test for NCGS. Celiac disease must first be ruled out.

      Under the circumstances, your decision to have the testing done on day 14 sounds very reasonable. But I think by now you know for certain that you either have celiac disease or NCGS and either way you absolutely need to eliminate gluten from your diet. I don't think you have to have an official diagnosis of celiac disease to leverage gluten free service in hospitals or institutional care and I'm guessing your physician would be willing to grant you a diagnosis of gluten sensitivity (NCGS) even if your celiac testing comes up negative. Also, you need to be aware that oats (even gluten free oats) is a common cross reactor in the celiac community. Oat protein (avenin) is similar to gluten. You might want to look at some other gluten free hot  breakfast cereal alternatives.
