Mexican "lasagna" Recipe

hi! i just thought id share this recipe i came up with the other day.

this is vegan, but you could modify it if you eat dairy.

in a frying pan i cooked squash, zuchini, onions, garlic, portabella mushrooms, jalapenos (all diced)

in a bowl i took 2 cans black beans, one tub tofutti "sour cream" , one package taco seasoning and stirred it all togther.

in a 9x12 i layed corn tortillas. (i used the small mission ones)

then i added a layer of the veggie mix and a layer of the creamy bean mix.

then a layer of the corn tortillas then veggie then bean mix..

and so on and so forth.

then when i was done i shredded the follow your heart vegan gourmet "mozzerella" on top and baked it 400 degrees for about 25 minutes.

served with some fresh cut tomatoes and a dollop of "sour cream"

it was sooooooo yummy! and so easy to make!

and quite filling!! and you could obviously use any veggies you liked.

Sounds great! I made a chicken version last week. I was lazy and used McCormicks enchilada sauce mix and I layered the seasoned chicken over the corn tortillas, then put in cheese and more tortillas and so on. Next time I'd add some black beans but I didn't have any handy. It was so much easier than rolling out the enchiladas which I didn't have time for that day. I would serve this to gluten eating folks any day!

This sounds soooo good...is the "tofutti sour cream" or the "vegan mozzerella" made with any soy, caisen, or lactose??

hi.. they both have soy..but no lactose or casein!

Where do you get the Follow Your Heart Vegan "mozzerella"? Does it melt similar to real cheese?

That sounds so good! I'll have to try it. :) I was a vegetarian (never vegan though) and use all of my old recipes still...I'll just add this to my veggie-lover's menu! B) Thanks a lot. -Julie

it actually does melt!! it so amazing!! i get mine at my local health food store.

they list a few places in cali.

we use it for everything!! pizza, lasagna, casseroles, shredded on tacos, calzones~!!

they make a few flavors too.. but this is by far my favorite!!

      Hello, I was very stick,  with flu like symptoms, but my virus panel came back negative and we couldn’t figure out what’s going on. The doctor then added a celiac panel.  Has anyone ever had such a dramatic change?  What are the odds this is true celiac I am going to have an endoscopy, but it’s expensive and I just feel like why can’t the labs be enough?

      Eating out in general is full of risks, but this article may help:

      This kind of question is always difficult to give a definitive answer to because of so many variables. One such variable is the sensitivity of the individual celiac to small amounts of gluten cross contamination. An amount that causes a reaction in one celiac many not in another, or at least not be discernable which, of course, does not exactly equate to being "safe".

      I see that Cracker Barrel restaurants have a gluten free menu (not all locations, but one confirmed that they do). I was wondering if it is safe for my 5 year old son with celiac disease?
