Hi Everyone,

I know I haven't been on the board lately. I have been trying to get over some pretty bad pain I was having in my right arm. Getting on the computer was making it worse. But it seems to be getting better now. I came across this recipe from Kathi at the followng website: Open Original Shared Link and made it for my kids. They LOVE them!!

Mini Corn Dogs

1/2 cup garbanzo bean flour

1/2 cup white rice flour

1 cup yellow cornmeal

1 teaspoon xanthan gum

1 tablespoon sugar

1 teaspoon baking powder

1 teaspoon salt

2 eggs, beaten

2 cups milk substitute (use 1 1/2 cups if using Rice Milk)

4 packages hot dogs

Cut hot dogs into bite size pieces (I usually do 4 per dog)

Mix everything except hot dogs until smooth.

Dip hot dogs in batter and deep fry until golden brown.

Tip: If you are having trouble getting the batter to stick, try coating the dogs in arrowroot powder first

Lay out on a cookie sheet and stick in freezer - when frozen pour into a large freezer bag or container

By freezing first on a cookie sheet, they won't stick together and you can just pour out how many you need at a time

Thanks! Sounds delicious. Question for you - I see you got the recipe from a Gluten-free Casein-free site but was wondering if I can just make them with regular milk? Do you think it would make a difference?

Also, can anyone suggest a substitution for the bean flour? I don't stock that but do stock sorghum, arrowroot, white/brown rice, corn, millet (not my favourite), quinoa (haven't tried that one yet) and tapioca flour).

Any reason they're cut into 4? I'd make them full sized like Pogo sticks to put in the kids' lunches.

Hi,

I'm sure that regular milk would work just fine. It is only because it is a CF site also that they probably make the substitution. She cuts them in four to put in her young child's lunch. I did it that way also, but was thinking of trying the whole hot dog also. I think it would work just as well. Sorry, I don't know of a substitution for the bean flour. I haven't been working with gluten-free flours long enough to know.

      Welcome to the forum, @yellowstone! The most common ones seem to be dairy (casein), oats, eggs, soy and corn. "Formed" meat products (because of the "meat glue" used to hold their shape) is a problem for some. But it can be almost anything on an individual basis as your sensitivity to rice proves, since rice is uncommonly a "cross reactor" for celiacs. Some celiacs seem to not do well with any cereal grains.

      What foods can trigger a response in people with gluten sensitivity? I've read that there are foods that, although they don't contain gluten, can cause problems for people with gluten sensitivity because they contain proteins similar to gluten that trigger a response in the body. I've seen that other cereals are included: corn, rice... also chicken, casein. I would like to know what other foods can cause this reaction, and if you have more information on the subject, I would like to know about it. Right now, I react very badly to rice and corn. Thank you.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.
