Yummy Quinoa And Rice

I am enjoying leftover quinoa and rice for lunch. I cooked up a turkey breast last night and I was looking for a side dish. I remembered that i have an open box f quinoa in the pantry. I decided to mix it up a bit, so I mixed the quinoa in with about twice as much Lundburg's wild rice mix (1 c. rice to about 1/2 c. quinoa 2 1/2 c. H20) and cooked it up in Chicken broth made from powder (about a Tbsp of HerbOx). While that was boiling I chopped (more like diced) up a carrot, half and onion and some small broccoli florets. I sauteed them for a couple minutes until they were just soft and tossed them in the quinoa/rice once it was finished. YUMMY! :D

I have to give myself a pat on the back while I'm at it. I made gravy for the turkey, and it didn't turn to paste! :)

This is precisely why I like being coeliac, well not really, but being coeliac has opened up new doors in the pantry so to speak. It has forced me to try new and different foods, that I would never have thought of trying in a million of years. Gone are the days, where we will have this and that, now I think oh I would like to try that, and maybe see what I can do with this. It is bringing out the inventiveness in me. I'm no longer a predictable cook, nobody quite knows what is going to be on the table next. I've had to brush up on my cooking skills, but there's nothing wrong with that either.

Quinoa is one of those things I have discovered,and is so versatile, as in can be used for breakfast lunch and tea. But with rice, I never ever thought of mixing the two, but I will give it a go.

well done you :D i am not totally useless but cant seem to get it together. never tried quinoa, am going to now as you made it sound so nice.

My 2 young daughters even enjoyed it - the older one even asked for seconds!

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
