My Daughter Made Cookies...

My oldest daughter made peanut butter cookies. She could see me lusting over them...

She felt guilty and made a paper plate "lid" over the cookies, and drew a picture on the lid,

of a toilet...to remind me what would happen if I ate them.

Then bless her heart, she made me my own patch of "flourless" peanut butter cookies...just

with peanut butter, sugar and eggs (I know, low calorie right!) These were great! I was

strutting around the house eating cookies like I was the man!

Kids are great aren't they! The toilet thing is so cute!

My son told me today that I was the Best baker. This after I've been baking only gluten-free this whole year and he's not gluten-free. I used to bake non-gluten-free alot-bread etc. It really meant something to hear that.

I love the people who really care for those of us with celiac disease! My stepsister is my roommate and she said that we should take turns every night making meals from a gluten-free cookbook. What a sweetie.

Does anyone have a specific recipe for those peanut butter cookies? They sound DEE-LISH. I might add chocolate chips :P

The Lindt (Lindor) dairy-free oat milk truffles are definitely gluten-free, and (last time I checked) so are the white chocolate truffles and the mint chocolate truffles.

I've used magnesium taurinate and magnesium taurate vitamins.  Didn't notice much of a difference when I used them.

More great tips, and a good excuse to shop at M&S and also buy more iced buns!   I wish we had an ASDA near us, as the few times we've been to one their gluten-free pasta range seemed very reasonably priced compared to other shops.  Thanks so much, @Russ H.
