Nearly Kfc Chicken (gluten Free Coating Mix)

I have been gluten free since January 2007. I have found so much information, encouragement and compassion on this site, so I thought I would share my family's favourite chicken recipe. I used to make this before I was gluten free, but I think the gluten free flour makes a crispier coating!

If you are missing KFC, this may be close enough that you don't feel so deprived. It's also better for you -- not as much salt and it is baked and not fried.

Enjoy!

KFC Coating Mix

In a ziploc bag, mix

2 cups gluten free flour (I use celamix white bread mix)

2 Tbsp. gluten free baking powder

1 Tbsp salt

1 tsp black pepper

4 Tbsp. paprika

1 tsp garlic powder

1 Tbsp. italian seasoning

1 tsp. ground ginger

1 tsp. sugar

Mix together in the bag. Dampen your chicken pieces (cut up chicken, sliced chicken breast for chicken fingers or chicken nuggets) using your favourite method (milk, eggs, water). Coat with the above mixture.

In a shallow baking dish (a pyrex lasagna pan works well), coat the bottom with oil. Place your chicken in a single layer and bake at 375 degrees for 40-45 minutes or until done.

YUMMY!!!! This looks great, and really easy :)

Quick question, I've never heard of the Celamix bread mix. What is that? Where do you find it?

pcv Newbie

Celamix bread mix is available in Canada. It is a mixture of gluten free flours (rice, potato starch, etc.). It is available at our Old Fashioned Foods (health food/supply) stores, but I can also find it in my local super market ( Real Canadian Superstore).

I'm sure any gluten free flour mix would work just as well.

Thanks! Daughter always drools and whines when the KFC commercials come on.

Yummy!

I tried this for dinner tonight using Bette Hagman's featherlite flour mix for the gluten free flour. I made french fries with it and felt like I went out for fast food. :) My non-celiac fiance liked it so much he asked if I made sure to put it in my binder that I keep my favorite recipes in!

Thank you so much for the recipe!

Mm, this does look good. How much chicken did you use? (I.e., there's only one of me, should I halve the recipe for the coating?) Can't wait to try it!

pcv Newbie

Hi Kochac

This recipe does make enough for a couple of chickens at least. You can half the recipe, or you can make the entire amount, transfer a little bit into a small container to coat your chicken pieces, and save the rest for another time.

I hope this helps.....

Thanks for the great idea. I used Fearns brown rice baking mix and brown rice flour. I added the spices I used to use to make fried chicken. I dipped mine in buttermilk and then coated them. I baked them in olive and oil and butter. It is the best I've had since going gluten free.

BTW, we've done other articles on this topic that I wanted to share here (not to condone smoking!):

Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
