Grandson 4 years old just diagnosed with celiac of course he lives on chickennuggets anyone have a good recipe.

I made a breading mixture out of gluten-free bread... any kind that you can find.. Either toast or dry in the oven you want it really dry. Put in food processors and grind up till very fine crumbs, enough for 2 cups.

Then add 1/4 cup cornstarch, 4 T salt and 1/2 tsp gluten-free garlic powder. Combine well, I use ziploc baggy to combine and to bread things...

Depending on any other problems, dip cubed chicken breasts in buttermilk, milk or soy milk if lactose intolerant, then dredge in the crumbs. I find it helps to let the breaded chicken chunks dry for at least 10 minutes.. on a cookie cool rack or even just a plate. Then put them on ungreased cookie sheet and cook for 20-30 mins at 350 F

Be careful of dips.. I dont know what he uses for dip but be sure to check labels.

Here is what I do. It's not really a recipe but maybe it will help.

Cut raw chicken breast or thigh meat into chunks. Dip into beaten eggs seasoned with salt and pepper. Coat in cornflake crumbs (dry crust that is extra crunchy) or a combination of cornflake crumbs and ground pinenuts (my secret ingredient, you could use another mild-flavored nut like macadamia?), about a 4:1 ratio (less crunchy, with a nice texture) place on a baking sheet coated with parchment paper (to prevent sticking) You may want to drizzle or spray a little butter on the nuggets before baking or the coating may seems a little dry, but you don't need to do that if you use pinenuts in the crust. Bake at about 350 degrees until done. About 15 minutes depending on the size of the chunks. I use the Nature's Path cornflakes but I imagine there are other gluten-free brands. My daughter loves these with yam fries and honey-mustard for dipping!

There is also a gluten-free brand, Wellshire Farms, that is available at some Whole Foods stores. I like them OK, they are a little "processed" tasting to me, but kids love them.

Does anyone know how to make stuffing for turkey that is gluten free? the health food store only has awful tasting bread here so as far as drying out my own I am lost. Also any ideas on pies, rolls, gravies etc. I would really like to make a feast this year.

Hi Sally-I make rice stuffing. I make it just as with bread. Same ingrediants. We love it. Also make grave using cornstarch as the thickner. Cranberry relish. creamed corn. Corn Bread. And cake & Pie. All gluten-free. It can be done & it is easy. Hope this helps. :rolleyes:

      Of course my son is on a 100% gluten free diet.  I wish his symptoms were not debilitating as there are right now.  He cannot work, even when a miniscule of cross contamination occurs.  It's not just GI distress, but intense fatigue, brain fog, depression, anxiety, insomnia, etc.  It's literally neurological inflammation.  Not to be taken lightly here.  We have sought out many other possible ways to cope during this window of time (8 months!!!!)  without success.   AN-PEP does not help and seems like studies on this are not well researched.  So, we are trying this out because research shows some promising results.  And, all participants showed no cravings afterwards, no signs of addiction.  The patch is different than the oral route such as smoking, vaping, gum, pouch, etc.

      Have you tried AN-PEP enzymes, for example, GlutenX (who is a sponsor here)? A lot of research has shown that it can break down small amounts of gluten in the stomach, before it reaches the intestines. It might be a better approach than risking nicotine addiction, and the questionable research around this. I also hope that he’s trying to be 100% Gluten-Free.

      @fatjacksonthecat I have been doing some digging about the topic of nicotine and celiac.  I came across many studies that showed that the nicotine patch helped many with long covid and chronic fatigue syndrome.  I have a son who was diagnosed with celiac and his symptoms are severe when he is glutened.  He shows a lot of neurological inflammation and suffered with fatigue, brain fog, depression, anxiety and insomnia. There have been studies revealing that nicotine smoke actually masking celiac symptoms.  I also read that microdosing with a nictoine patch prevents one from addiction.  We are currently trying this out and so far it has lifted the brain fog and helped with anxiety and mood.  One of the studies I have read showed that it's not so much the dose, but the length of time a person is on the patch that showed improvements.  Many showed significant improvement as early as week 3 and continued through week 12.  We are taking 3 day breaks in between to make sure we don't down regulate the nicotine receptors.   How have things been for you?  Are you still chewing nicotine gum?  Perhaps, try the patch?  And how long did it take to ease up on your symptoms when glutened?

      @KathyR37, I would suspect that in addition to gluten intolerance, you have other food intolerances/sensitivities. This is very common in the celiac community. The most common offenders are oats, dairy, soy, corn and eggs with dairy and oats being the big two. Have you considered this? Have you tried keeping a food diary to detect patterns?
