i just wanted to post this because i ordered a gluten free pie crust from gluten free pantry last week and it didnt come yet so i was freaking out, becuz i told my sister i would make the pumpkin pie!!!!! so i tried a suggestion that i think tarnelberry posted awhile back!! she said she used pamala's shortbread cookies for the crust. so i crushed some up, added a little butter, put the pie filling in, and baked it. it turned out wonderful!! even better than real pie crust.

so thankyou for that suggestion!! and if anyone else has a last minute pie emergency, keep this tip in mind. it is also a lot easier than making a real crust!! B)

Lol :-) I'm glad you liked it. Procrastination truely is the mother of invention. ;-)

Ooh...thanks...awhile back the New York Times printed the recipe for the best cheesecake in NY, and my aunt clipped it and used to make a cheesecake for me every now and then. It was amazing and she kept the recipe to herself so that she could always be the one to give me that treat :). Anyway, she's going to give it to my mom, now, so that it can be adapted to be gluten-free. I think that, provided that I pick the right brandnames for ingredients, it will be nearly all gluten-free. I will, of course need to make a crust--I was thinking of breaking up Pamela's chocolate cookies to make a crust--I'll try them both, though.....:D

Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute. If you are interested in summaries of scientific publications on the topic of oats and celiac disease, we have an entire category dedicated to it which is here: https://www.celiac.com/celiac-disease/oats-and-celiac-disease-are-they-gluten-free/
