These were very good! My mom made them for us.

1/2 cup raisins

1/2 cup dried apricots

1/2 cup chopped dates ( dont buy pre-chopped as they may add flour to keep them from sticking)

3/4 cup dried cranberries

3/4 pecans

1 cup blanched almonds

1/4 orange juice, no pulp

1/2 cup confectioners' or powdered sugar

Combine dried fruit and nuts and chop it in the food processor on pulse till you get a coarse mixture. (about 1 minute). Add OJ and pulse again until mixture sticks together (about 15 seconds) Shape the mixture into 1 inch balls then roll them in sugar. Refrigerate, makes about 2 1/2 dozen

My mom put them in mini muffin paper liners for a cute look to them.

I didnt try these (casein intolerance and my mom used butter) but my family loved them. Im sure you could use margarine or shortening for them.

Tropical Snowballs

1 cup butter, softened

1/2 cup powdered sugar

2 1/4 cup flour blend ( my mom used pamela's with xantham included)

1/4 tsp salt

1 Tablespoon lemon zest

1 cup walnuts, finely chopped

powdered sugar to coat

heat oven to 400 degrees. Cream butter and 1/2 cup powdered sugar. Add flour, salt, zest, and nuts stirring until a dough forms.

Shape dough into 1 inch balls, placing them an inch apart on an ungreased cookie sheet, and bake them on the center rack for 10 minutes.

Allow cookies to cool slightly and roll each one in powdered sugar before transferring to a wire cooling rack. Roll them in sugar again after they have cooled completely. Makes around 3 1/2 dozen

      The Lindt (Lindor) dairy-free oat milk truffles are definitely gluten-free, and (last time I checked) so are the white chocolate truffles and the mint chocolate truffles.

      Yarrow Pom works really well with the skin issues I found out.I had to stop so my doterra because dealing with medical celiac circus. I had shingles in Feb 2023. Prayers for healing
