Quinoa Flour

I just found Quinoa flour, and so far it is working wonderfully for my baking. I use it in place of regular flour with no extras needed....no xanthum gum, no extra flours to mix. I made chocolate chip cookies yesterday and my kids loved them. My father in law has made pie crust that no one even realised was gluten free. I would love to hear if anyone else has tried this!

I often use it, but it does have a unique taste, and generally use it as part of a mix.

I use it as well, but also in a mixture. Since experimenting with gluten-free flours I find myself more and more nutrition conscious and quinoa flour is one of the best out there (with rice being one of the least nutritious.) I actually haven't tried it alone, thanks for the suggestion, I think I will.

Oh, I read somewhere that because it is very high in protein, it bakes even more differently (great grammar B)) than many of the mixed flours from wheat (hope that makes sense!)

Quinoa is considered one of the best sources of protein in the grain family.

I have only tried one recipe so far, but I substituted Quinoa exactly like flour and the cookies tasted great (no after taste), and they held up fine, with no crumbling or loss of consistency.

Yesterday I made sandwich rolls that I usually use a mixture of equal parts chickpea, soy and corn flour to make with just quinoa flour. My husband liked it but my son (who eats these for lunch every day) and I did not. The flavor was just odd. Ah well!

Next, I'm going to try the Bob's RM rice flour, glutinous rice flour and asian rice flour mixture and see what happens. (But rice flour is just not as nutritious as the others! Bah!)

I've eaten quinoa a few times and find it effects me cognitively. It makes me feel sort of "stoned".

Yes, we have been aware that this can be an issue with mushrooms but as long as they are rinsed thoroughly it should not be a problem since the mushrooms don't actually incorporate the gluten into their cellular structure. For the same reason, one needs to be careful when buying aged cheeses and products containing yeast because of the fact that they are sometimes cultured on gluten-containing substrate.

      The one kind of food I had been buying and eating without any worry for hidden gluten were unprocessed veggies. Well, yesterday I discovered yet another pitfall: cultivated mushrooms. I tried some new ones, Shimeji to be precise (used in many asian soup and rice dishes). Later, at home, I was taking a closer look at the product: the mushrooms were growing from a visible layer of shredded cereals that had not been removed. After a quick web research I learned that these mushrooms are commonly cultivated on a cereal-based medium like wheat bran. I hope that info his helpful to someone.

Incidentally, I don't like quinoa either. Reminds me and smells to me like wet grass seed. When its not washed before cooking it makes me ill because of saponins in the seed coat. Yes, it can be difficult to get much dietary calcium without dairy. But in many cases, it's not the amount of calcium in the diet that is the problem but the poor uptake of it. And too much calcium supplementation can interfere with the absorption of vitamins and minerals in general because it raises gut pH.
